1/2 cup whole-grain pastry flour or regular whole wheat flour
1/2 cup all-purpose flour
2 teaspoons granulated sugar
1/8 teaspoon salt
4 tablespoons cold, unsalted butter, cut into small pieces
2 tablespoons lowfat buttermilk
3 tablespoons ice water
3 medium pears
1 tablespoon lemon juice
1 tablespoon plus 1 teaspoon cornstarch
3 tablespoons light brown sugar
1/8 teaspoon ground cinnamon
1 teaspoon honey
1/4 teaspoon boiling water

Steps:

  • To prepare the crust, in a medium bowl whisk together the whole-wheat pastry flour, all- purpose flour, granulated sugar and salt. Add the butter and using two knives or a pastry cutter, cut the butter into the flour mixture until you get a pebbly, course texture. In a small bowl combine the buttermilk and ice water. Using a fork, gradually mix the buttermilk mixture into the flour mixture. Pat the dough into a 4-inch round and wrap in plastic wrap. Refrigerate for 30 minutes.
  • In the meantime, preheat the oven to 425 degrees F, and prepare the filling. Peel the pears, core them and cut into 1/4-inch slices. In a large bowl toss the pear slices with the lemon juice. Sprinkle in the cornstarch, brown sugar and cinnamon and toss until the pears are evenly coated. Set aside.
  • On a lightly floured surface, roll the chilled dough into a large circle about nine inches in diameter. Line a baking sheet with parchment paper, and draping the dough over the rolling pin, transfer to the prepared baking sheet. If the dough breaks at all patch it up with your fingers.
  • Arrange the pears in a mound in the center of the dough, leaving a 2-inch boarder. Fold the border over the filling. It will only cover the pears partially and does not need to be even.
  • Bake the tart for 15 minutes, and then reduce the oven temperature to 350 degrees F, keeping the tart in the oven all the while, and bake for another 40 minutes, until the pears are tender and the crust is golden brown.
  • In a small bowl stir together the honey and boiling water to make a glaze. When the tart is done remove it from the oven and brush the honey glaze all over the top of the fruit and crust. Transfer to a plate to cool slightly. Cut into 6 wedges and serve warm or a room temperature.

For the pastry
225g plain flour, plus extra to dust
3 tbsp caster sugar
½ tsp fine salt
140g unsalted butter, chilled and cut into pieces
1 large free-range egg
For the filling
4-5 pears, peeled, cored and sliced
1 tbsp soft light brown sugar
½ tbsp ground cinnamon
1 tbsp plain flour
1 free-range egg, beaten, to glaze
Icing sugar to dust
Double cream, whipped to soft peaks, to serve

Steps:

  • To make the pastry, put the 225g flour, caster sugar, salt and butter into a mixing bowl. Use your fingertips to rub the ingredients together until they resemble coarse breadcrumbs. Add 1 egg, then bring the pastry together with your hands. (If it's too dry, add a little cold water; if it's too wet, add a little more flour.) Wrap the pastry in cling film, then chill in the fridge for 30-40 minutes.
  • Meanwhile, preheat the oven to 180°C/fan160°C/gas 4 and line a large baking sheet with baking paper. Put the pears into the cleaned mixing bowl and toss with the brown sugar, cinnamon and 1 tbsp flour.
  • Remove the pastry from the fridge and discard the cling film, then roll out on a lightly floured surface to form a rough circle (about 5mm thick, 35cm diameter). Carefully lift the pastry onto the prepared baking sheet, then arrange the pears in the middle, leaving an 8-9cm border. Using the sides of the baking paper to help lift the pastry, fold the sides up and over the pears. Brush the pastry with the beaten egg, then bake for 40 minutes or until golden.
  • Serve warm, dusted with icing sugar, with a blob of whipped cream.

3 large, 4 medium, or 5 small pears
2/3 cup sugar, divided
1 tablespoon fresh lemon juice

Steps:

  • Gather the ingredients. Preheat oven to 350 F.
  • Line a 10-inch tart pan or pie with your favorite homemade or store-bought pie or tart crust. As you lay the crust into the pan, hold it up and let it drop and settle into any edges or corners, rather than pushing it in, to minimize shrinking and breaking when you bake the tart. Set aside. Alternatively, you can lay the rolled-out crust on a baking sheet for a free-form tart, often called a galette. Lightly prick the crust all over with a fork. Set aside.
  • Cut the pears in half or quarters. Cut out and discard the core in each piece. Peel the pear pieces and cut them into even slices. Even slicing will lead to the prettiest and most evenly cooked tart.
  • In a large bowl toss the pear slices with 1/3 cup of the sugar and the lemon juice . Arrange the pear slices on the crust-you can just dump them in and spread them out for a very rustic dessert, or arrange them in neat rows or concentric circles for a more elegant presentation. Reserve 4 or 5 slices of pear. Crimp the edges of the crust (see how to crimp a pie crust here if you've never done it before), or roll them up a bit to create an edge if you've decided to go free-form.

  • While the tart bakes, bring the remaining 1/3 cup sugar, reserved pear slices, and 1/3 cup of water to a boil in a small saucepan. Reduce the heat to maintain a steady simmer and cook, undisturbed, until the syrup thickens, about 10 minutes. Set it aside.
  • While tart cools, brush it generously with the syrup. Serve the tart warm or at room temperature.

1/2 teaspoon salt
6 tablespoons unsalted butter, cold, diced,
1/4 teaspoon ground cinnamon, divided
1/4 teaspoon ground ginger, divided
6 tablespoons buttermilk
3 tablespoons sugar
1/8 teaspoon freshly grated nutmeg
4 cups pears, peeled, cored, sliced into 1/2-inch pieces, tossed with 2 tablespoons lemon juice
1 tablespoon melted butter
3 tablespoons turbinado sugar
Ice cream or whipped cream, for serving

Steps:

  • In the bowl of a food processor fitted with the bottom blade, add the whole wheat flour, 3/4 cup all-purpose flour, and the salt and pulse 3 to 4 times to combine. Add in the diced cold butter, 1/8 teaspoon cinnamon, and 1/8 teaspoon ginger, and pulse at 3 to 4 second intervals for 6 to 10 times until the mixture resembles sand. Add in the butter milk and pulse until a dough ball forms. Remove from the food processor onto a lightly floured board. Roll the dough into an oval, approximately 16 by 14 inches. Rough edges are okay, but you can trim decoratively if desired. Transfer to a silicone or parchment lined baking sheet.
  • In a small bowl, combine the remaining 2 tablespoons flour, sugar, and the remaining spices and mix well. Toss this flour mixture with the pears, gently coating. Pile the pear mix in the center of the tart dough, leaving a 3 to 4-inch border, and then fold the edges up and around the pears, leaving an opening in the center. Crimp any breaks in the dough. Place the baking sheet with tart into the refrigerator for 20 minutes.
  • Preheat the oven to 350 degrees F.
  • Brush with the melted butter and sprinkle with the turbinado sugar. Place in the oven and bake for 1 hour.
  • Remove, allow to cool. Serve at room temperature with ice cream or whipped cream.

1¾ cups flour
½ cup butter (cut in small cubes)
2 teaspoons sugar
2 to 3 tablespoons milk
For the filling:
2 to 3 tablespoons apricot or peach jam
½ cup granulated sugar
1¼ cups ground almonds (almond flour)
1 egg plus 1 egg yolk
¼ cup butter (melted and cooled a bit)
1 tablespoon Amaretto liqueur (or 1 teaspoon almond extract)
3 tablespoons cream or half and half
2 medium tins of pear halves in juice or syrup (well drained)
you need about six nice pear halves
about 1 tablespoon Demerara sugar (for sprinkling)
about 2 tablespoons flaked almonds (for sprinkling (optional))

Steps:

  • Preheat the oven to 325℉ or 160℃.
  • You will need a tart pan or pie dish approximately 8 inches or 20 cm round.
  • Cut the flour and butter together in a bowl (or use an electric mixer or food processor) until the mixture resembles coarse crumbs.
  • Stir in the sugar.
  • Gradually add the milk until you have a soft pliable dough that you can make into a large ball. If you want to roll out your pastry, you'll need to pop it into the fridge to chill for about an hour before rolling. However, I just press this easy pastry into the tart dish, working it up the edges. Pop the the fridge while you make the filling.
  • Mix together the sugar, ground almonds, egg and egg yolk, melted butter, cream and the liqueur or almond flavouring until you have a smooth batter.
  • Get the pastry out of the fridge and using a pastry brush, coat the pastry in the apricot jam. Pour the filling on top of this and spread it evenly to the edges. Arrange the pears on top of this mixture, gently pressing them into it so it comes up round the edges of the pears, but leaves the tops uncovered.
  • Sprinkle with Demerara sugar and the flaked almonds (if using).
  • Bake for 20 to 25 minutes or until the tart is lightly browned and the filling set.
  • Remove from the oven and cool on a wire rack.
  • Serve this warm or at room temperature with cream or ice cream.
  • Best eaten within 24 hours. Do not refrigerate or the crust will go very hard.

  • For crust:
  • Mix flour, sugar, grated lemon peel, salt and ground mace in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Mix yolk and water in small bowl. Add to processor and mix in using on/off turns until large moist clumps form. Gather dough into ball; flatten into disk. Wrap in waxed paper and freeze 10 minutes.
  • Butter 9-inch metal pie plate. Roll out dough between sheets of waxed paper to 13-inch round. Peel off top sheet of paper. Invert dough into prepared pan; peel off paper. Fold in edges to form double thickness. Crimp edges decoratively. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • For filling:
  • Preheat oven to 375°F. Finely chop slivered almonds in processor. Spread almonds on bottom of crust. Combine apples and pears in large bowl. Mix sugar, grated lemon peel and ground mace in small bowl. Toss half of sugar mixture with apples and pears. Pile into crust. Sprinkle remaining sugar mixture over fruit. Dot with 1 1/2 tablespoons butter.
  • Bake until crust is brown and filling bubbles, about 1 hour. Cool on rack.
  • For whipped cream:
  • Beat cream, sugar and schnapps in large bowl until medium-stiff peaks form. (Can be prepared 4 hours ahead. Cover and chill.)

A pretty fold up the crust tart with a delicious filling of thick pear wedges, lemon zest, and mace (a nutmeg like spice). Don't let the amount of directions panic you. It's not really difficult and is a pleasant way to pass 45 mins of afternoon time.*EDIT: I have corrected my mistake after Rita's review, I mistakenly said to use foil under the tart for baking, It should have read parchment paper. Rita feels that buttering or greasing the pan would do a good job of releasing the tart also. :D

Form into a ball, flatten to an inch thick disk and refrigerate 2 hours or overnight. This will allow the flour to hydrate.
  • Cut the pears in half lengthwise, scoop out the seeds with a melon baller. Slice into ⅓ inch slices. Toss with sugar, spices, vanilla and lemon, zest, salt and flour. Let stand until the pears release their liquid and the sugar dissolves, about 15 minutes.
