MELITZANOSALATA RECIPE
Steps:
- Keep the eggplant whole and pierce with a fork in a few places.
- Smoke the eggplant. Place the eggplant over a gas flame, grill or under a broiler, and cook, turning around using a pair of tongs, until the skin is fully charred, and the eggplant is quite tender.
- Cool and drain eggplant. Place the eggplant in a bowl and set aside until cool enough to handle (a bowl is helpful because the eggplant will release some juices). Peel the charred skins off and discard. Cut the eggplant into chunks and place in a colander to get rid of any remaining excess juices (about 10 more minutes).
- Transfer the eggplant to a mixing bowl. Add the garlic, onion, parsley, lemon juice, olive oil. Add salt and pepper and spices (if using). Mix to combine and use your fork to break up the eggplant into smaller chunks.
- At this point, if you have the time, it's a good idea to cover and chill the eggplant dip in the fridge for a few brief minutes.
- Transfer the eggplant dip to a serving plate and spread. Drizzle extra virgin olive oil. Arrange Garnish with lemon zest, parsley, red onions, olives, a sprinkle of feta. Serve with crusty bread or pita bread.

- In a bowl add tomato, cucumber, and parsley. Season with salt, pepper, and sumac. Add lemon juice and a generous drizzle of extra virgin olive oil. Toss and set aside.
- Turn 1 gas burner on high. Using a pair of tongs, turn eggplant every 5 minutes or so until the eggplant is completely tender and it's skin is charred and crispy (about 15 to 20 minutes.) Don't worry if the eggplant deflates, it's supposed to. (You can also do this on a gas or charcoal grill over medium-high heat.) Remove from heat and let the eggplant cool.
- Once eggplant is cool enough to touch, peel the charred crispy skin off. Discard the stem. Transfer eggplant flesh to a colander; let drain for 3 minutes.
- Transfer eggplant flesh to the bowl of a food processor. Add tahini paste, yogurt, garlic, lemon juice, salt, pepper, Sumac, Aleppo pepper, crushed red pepper (if using.) Give it just a couple of pulses to combine (do not over blend. See notes)

ROASTED EGGPLANT AND TOMATO DIP | LEMONS + ANCHOVIES

- Preheat your oven to 400ºF. Toss the cubed eggplant and halved cherry tomatoes with two - three tablespoons of the olive oil on a baking sheet. Sprinkle a pinch or two of salt and some ground pepper (and red pepper flakes, if using). Roast for 30-35 minutes or until the eggplant has picked up some golden color.
- Transfer the roasted vegetables and the fresh tomatoes to a food processor or Vitamix and puree, drizzling half of the remaining olive oil. It will most likely need more salt so taste--add according to your taste. Transfer to a bowl and stir in more of the olive oil to suit your taste. I like mine a little looser so I used all the olive oil in the ingredient list. You may want to use less (or more). Stir in the grated Parmigiano, starting with 1/2 cup and adding more to taste. If the dip cools down too much, transfer to a small saucepan and heat over low heat before stirring in the Parmigiano.
