TARRAGON CUCUMBER PICKLES
Here is a quick and easy recipe for making pickles at home. They are good for eating on their own, or for giving a good crunch atop burgers.

Steps:
- Slice cucumbers crosswise 1/4 inch thick, and pack into 2 quart-size jars. Divide tarragon, mustard seeds, peppercorns, coriander seeds and bay leaves between 2 double layers of cheesecloth. Tie into bundles with string.
- In a medium saucepan, combine vinegar with sugar and bundles of pickling spices, and bring to a boil, stirring to dissolve sugar. Pour brine over cucumbers, pack bundles of pickling spices on top and let cool. Discard spices, close jars and refrigerate at least 1 hour, preferably 3. Serve cold.

RUSSIAN TARRAGON PICKLES
I adapted this from a cookbook posted by MIR in the 1970's. I am not a big fan of tarragon, so I prefer dill pickles, but if you are a fan of tarragon, give these a try! Like dill pickles, these are very simple to make.

Steps:
- Scrub the cucumbers very well.
- Put the jars in a canner, add water to cover them by 1", and bring them to a boil; boil for 10 minutes.
- Pack the jars with cucumbers, putting a good sprig or two of tarragon in each jar.
- Add 2-3 cloves of garlic and the pepper; half of one if they are on the large side.
- Make a brine of the vinegar, salt and water and pour over the cucumbers.
- Seal with sterilized lids.
- Set aside for 6 weeks in a cool dark spot before trying.

- In a large pot, sterilize jars and lids in boiling water for 15 minutes (see alternative sterilizing options in the notes below). Remove them from water with cooking tongs.
- Put tomatoes, garlic, bay leaves, parsley, dill, scallions and oak leaves (tarragon, summer savoury, cherry, blackcurrant and horseradish leaves if using) in jars. Try to surround the tomatoes with leaves evenly, as you won't be able to move them later. Fill jars with boiling water.
- Pour the water from jars into a medium pot or saucepan. This step allows you to determine the exact amount of water you need to fill in the jars. Add black peppercorns, salt and sugar and let boil for 5 minutes. Add vinegar (if using).
- Pour the brine back in the jars. If tomatoes are not completely covered, add more boiling water but make sure there is a bit of space in the jar before you put the lid onto prevent leaking. Firmly close the lids. Turn the jars upside down for two to three days.

- Dill. Dill weed (often just called dill) simply makes sense in a Russian diet of fish- and milk-based dishes. It's also essential for pickling; dill pickles and pickled herring are found in many Russian recipes.
- Parsley. Bright and slightly citrusy in taste, parsley is a cool-weather herb that can be grown indoors, so it's also perfect for the climate. Since it has a long taproot, parsley doesn't react well to transplanting and should be planted in a container that can be moved inside when winter approaches.
- Chervil. Chervil is a member of the parsley family and it's sometimes called French parsley. Chervil has a mild flavor of licorice that is something like a cross between tarragon and parsley.
- French Tarragon. French tarragon (often sold as true tarragon) has a much better flavor than its cousin, Russian tarragon (Artemisia dracunculoides). When used in any Russian recipes with vinegar and/or mustard, tarragon is delightful.
- Garlic. Naturally, garlic makes the list of herbs well suited for Russian cooking. It offers a taste that is versatile enough for a great variety of dishes and it stores well for use in winter cooking.
