Steps:
- Salt and pepper the fish. Mix eggs and milk. Dip trout in mixture, then roll gently in bread crumbs. Brush grill with oil and heat to medium (if using electric fry pan, heat to 300 degrees F). Use just enough oil to keep fish from sticking. Make a paste of the butter, hard-cooked eggs, parsley and pimentos. Cook trout on grill until golden color, about 5 or 6 minutes on each side. Place on heated platter. Spread butter paste over each piece and top each with 2 or 3 slices of lemon. Serve immediately.
RUSSIAN STYLE TROUT
When I lived in Tampa, this was always the way I ate trout in the various Spanish restaurants. I have no idea why Spanish restaurants would serve Russian Style Trout, but they did. It was usually listed as Russian Trout, or Trout Ruski. It's really good!!!!

- Rub the salt and pepper into the trout.
- Combine the RAW eggs and milk.
- Dip fillets into egg/milk mixture, then cover with breadcrumbs.
- Heat oil to medium heat, using just enough oil to keep the fillets from sticking to the pan.
- Combine the butter, hard cooked eggs, parsley and pimiento, mixing into a soft paste. Keep warm.
- Cook the trout on the grill for about 5 minutes on each side, until a nice golden brown color. Put the trout onto the plates, spread the warm butter/egg paste over the fillets.
- If desired, place lemon slices on top.

- Bring 4 cups water to a boil, then remove from heat. Add the rest of the marinade ingredients (1 cup salt, 1/2 cup sugar, 1 Tbsp coriander, 1 Tbsp pepper corns and 5-7 bay leaves). Stir to dissolve the salt and sugar, then cool to room temp (set it outside if it's cold).
- Slice fish into 1-inch steaks (discard heads and tails) you can cut your steaks in half if you wish. Place fish in a large bowl. Pour marinade over the fish steaks, weigh it down with a plate to make sure fish is submerged in the brine, then cover and refrigerate (or put in the garage if it's very cold out) for 12-14 hours. (We let it marinate in the fridge for 12 hours).
- Remove fish steaks from the marinade and place them in a jar, stacking them tightly with layers of onion in between. Pour in enough oil to fill the spaces and cover the fish. The oil will keep it moist and presentable. Keep refrigerated.

- In a medium pot, heat the olive oil over medium-high heat. Add the onions and cook, stirring occasionally until the onions start to caramelize. Add the carrots and cook until the carrots start to soften, about 4 more minutes.
- Add the stock, water, potatoes, bay leaves, and black peppercorns. Season with salt and bring to a boil. Reduce heat, cover and cook for 10 minutes. Add the millet and cook for 15 more minutes until millet and potatoes are cooked.
- Gently add the fish cubes. Stir and bring the soup to a simmer. The fish will cook through very fast, so make sure to not overcook them. They are done when the flesh is opaque and flakes easily.

- Make the fish broth by placing the fish in a large stockpot or Dutch oven. Add the water, black peppercorns, dry bay leaves and salt to taste. (I also like to add the veggie peels and scraps that you will be using for the soup – onion, carrots and celery. That is optional.) Bring the water to a boil, reduce to a simmer and cook, covered, for about 20 minutes until the fish is cooked through.
- While the fish broth is cooking, prep the rest of the ingredients. Peel and chop the onion and potatoes, peel and slice the carrots, slice the celery and chop the fresh herbs.
- Set the fish aside until it’s cool enough to handle. Strain the fish broth through a fine mesh sieve. Discard the peppercorns, bay leaves and veggie scraps, if using. When the fish is cool enough to handle, remove the fish meat and set aside to be added to the soup at the very end. Discard the fish skin, bones and head.
- Rinse out the pot that you used to cook the fish broth. Return the broth to the pot and add all the vegetables except the herbs. Add more water, if you want the soup to be thinner. This is optional. Season to taste with more salt and pepper, if it needs it.
