The Russians call it kulebyaka, but in Alaska it is pirok, perok or peroche - all amendments of pirog, the more general Russian word for pie. Inside the flaky crust, wild salmon from Alaskan waters is layered with rice and cabbage, crops introduced to the 18th-century natives of Kodiak Island by fur traders from across the strait. Long after the Russians gave up the hunt for sea otter pelts and sold their claim to the territory to the United States, the frontier fish-camp dish remained a staple of the Alaskan table. Kirsten Dixon, the chef and an owner of Winterlake Lodge, along the Iditarod Trail, and Tutka Bay Lodge, near Homer, likes to make salmon pie at Thanksgiving, when the Alaskan back country is already muffled in snow and guests arrive by ski plane, landing on a frozen lake.

3 tablespoons unsalted butter
1 red onion, diced
1/2 pound mushrooms, cleaned and sliced
1/2 head green cabbage, cored and shredded
1 tablespoon red wine vinegar
Salt and black pepper, to taste
1 tablespoon extra-virgin olive oil
1 1-pound skinless salmon fillet (preferably Alaskan)
2 sheets homemade or store-bought puff pastry
2 cups cooked short grain brown rice
2 eggs, one hard-boiled, the other beaten
1/2 cup shredded sharp Cheddar
1/2 cup fine bread crumbs
2 tablespoons minced fresh parsley
1/4 cup heavy cream

Steps:

  • Heat oven to 375 degrees. Melt butter in a large nonstick skillet over medium-low heat. Add onion and cook, stirring occasionally, until tender, about 7 minutes. Stir in mushrooms, cabbage and vinegar; increase heat to medium. Cover pan and cook 4 minutes; uncover, toss and cook 2 more minutes. Remove vegetables from pan, season with salt and pepper to taste, and set aside.
  • Wipe out skillet, add olive oil and set over medium-high heat. Add salmon and season lightly with salt and pepper. Cook salmon 5 minutes per side; remove to a plate and let cool. Flake salmon into large chunks and set aside.
  • Set a sheet of puff pastry on a lightly floured surface. Gently roll out until it is large enough to fit a 9-inch deep-dish pie plate. Transfer pastry to pie plate, allowing extra dough to drape over edge.
  • Spread brown rice over bottom of pastry. Peel and chop the hard-boiled egg, then add to pie, followed by flaked salmon. Sprinkle with cheese, then bread crumbs. Mound vegetable mixture on top. Sprinkle with parsley and drizzle cream over top.
  • Roll out remaining sheet of puff pastry on a lightly floured surface until it is large enough to cover pie. Brush rim of bottom pastry with water and place second sheet of pastry directly on top. Using kitchen scissors or a paring knife, trim off excess dough. Use a fork to crimp the edges of the pie together and help the sheets of pastry adhere.
  • Cut a few small slits in the top of the pie to allow steam to escape. Brush top of pie with beaten egg. Bake until pastry is puffed and golden brown, 35 to 40 minutes.

3 pounds Yukon Gold potatoes
1 tablespoon kosher salt
¼ cup milk
3 tablespoons salted butter, divided
1 cup shredded white Cheddar cheese
¼ cup sour cream
1 large egg yolk
2 teaspoons kosher salt, divided
1 teaspoon ground black pepper, divided
1 tablespoon olive oil
1 cup diced onion
1 cup diced carrot
1 pound ground lamb
1 pound ground beef sirloin
3 tablespoons all-purpose flour
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
1 cup beef stock
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 cup frozen green peas
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Place potatoes in large saucepan and add enough water to cover by 2 inches. Stir in 1 tablespoon salt and place pot over medium-high heat; bring to a boil. Cook until potatoes are fork tender, about 10 minutes. Turn off the heat and drain.
  • Return potatoes to the hot pan and set over the same burner. Add milk and 2 tablespoons butter; allow butter to melt from the residual heat. Mash potatoes with a potato masher until smooth. Stir in Cheddar cheese, sour cream, egg yolk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside while you prepare the filling.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
  • Heat olive oil and remaining 1 tablespoon butter in a large skillet over medium-high heat. Add onion and carrot and cook, stirring constantly, until onion begins to turn translucent, about 5 minutes.
  • Add lamb and beef and cook, crumbling with a spoon and stirring often until browned, about 5 minutes. Sprinkle meat mixture with flour, remaining salt and pepper, rosemary, and thyme. Cook, stirring constantly, for 2 minutes.
  • Add beef stock, tomato paste, and Worcestershire; cook, scraping any flavorful bits from the bottom of the skillet. Bring mixture to a simmer. Cook until thickened and vegetables are tender, about 8 minutes. Stir in peas. Transfer mixture to the prepared casserole dish and top with the prepared mashed potatoes.
  • Bake in the preheated oven until golden and bubbly around the edges, 25 to 30 minutes. Sprinkle with parsley and serve.

2 Tbsp olive oil ((extra virgin))
1 lbs ground lamb
2 tsp each, salt & pepper ((divided into 2 equal portions - 1 tsp each))
1 large white onion ((finely grated))
1 large carrot ((finely grated))
2 cloves garlic ((finely grated))
2 Tbsp Worcestershire sauce
2 Tbsp tomato puree ((or tomato paste, but then only 1 1/2 tablespoons))
1 cup dry red wine ((I use Cabernet Sauvignon or Pinot Noir))
2 sprigs fresh thyme ((chopped))
1 sprig fresh rosemary ((chopped))
1 cup chicken stock
2 lbs russet potatoes ((washed, peeled and quartered))
2 Tbsp butter ((unsalted))
2 large egg yolks
1 cup Parmesan cheese ((reserve some for topping, if desired))

Steps:

  • Bring a large cast iron skillet, skillet, or frying pan to high heat with the olive oil.
  • After the oil is hot, add in the ground lamb. Spread in an even layer and crisp one side, then turn and crisp the bottom side. Break apart the ground lamb after it is browned and crisped. Season the lamb with salt and pepper (use the first portion of salt & pepper, 1 teaspoon of each).
  • Add in the onion, garlic, and carrot and cook for about 2-4 minutes till vegetables are soft.
  • Pour in the Worcestershire sauce then the tomato puree and combine. Add in the red wine, thyme and rosemary and cook until most of the wine has evaporated off.
  • Pour in the chicken stock and cook for 3-4 minutes. Then turn heat off and set aside.
  • In a large stockpot cover peeled potatoes with water then boil the potatoes for about 20 minutes or until potatoes are soft. Drain.
  • Mash potatoes either with a fork or a ricer if you have one.
  • Season with the remaining salt & pepper.
  • Stir in the butter, egg yolks and stir very quickly then add the Parmesan cheese and combine well. (Optional - reserve a few tablespoons of the Parmesan cheese for topping the Shepherds pie)
  • Spoon the lamb meat into a casserole dish and then top with the potato. Using a spatula run the potatoes completely over the mince filling in any holes. It should look like a smooth mound.
  • Sprinkle the remaining Parmesan cheese on the top and then using a fork drag along the top of the potatoes (this will give the potatoes a nice crunchy texture where they get raised by the fork).
  • Place in your preheated oven at 350°F (180°C) for 18-20 minutes.
  • Remove from the oven and allow 5-10 minutes to cool before serving.

6 potatoes, about 2 pounds
1/4 cup milk
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup all-purpose flour
2 eggs
1 lb ground beef (I use extra lean)
2 onions, thinly sliced
1 1/2 cups sliced mushrooms, about 4 ounces
1/2 teaspoon caraway seed
1/2 cup shredded cheddar cheese

Steps:

  • Peel potatoes; cut into chunks, put into saucepan of boiling salted water, cover and cook potatoes until tender, about 12 minutes.
  • Drain and return to pan; remove from heat.
  • Add milk, butter and half of the salt and half of the pepper; mash with potato masher until smooth.
  • Stir in 1/4 cup of the flour and 1 of the eggs.
  • Meanwhile, in large nonstick fry pan, saute beef over medium high heat, breaking up with a wooden spoon, until no longer pink, about 5 minutes.
  • Drain off fat.
  • Add onions, mushrooms, caraway seeds and remaining salt and pepper; cook over medium heat, stirring, until onions are softened, 8 minutes.
  • Sprinkle with remaining flour; cook, stirring for 5 minutes.
  • Spread half of the potato mixture in 8 inch square glass baking dish.
  • Spoon meat mixture over top.
  • Top with remaining potato mixture.
  • Beat remaining egg; brush over potato mixture.
  • Sprinkle with cheese.
  • Bake in 350F degrees oven until topping is golden, 30 to 40 minutes.

1 pound ground beef sirloin
3 to 4 cloves garlic, finely chopped
2 to 3 small stalks celery with leafy tops, finely chopped
1 large fresh bay leaf
1 carrot, chopped
1 onion, chopped
Kosher salt and freshly ground pepper
3 tablespoons butter
2 rounded tablespoons all-purpose flour
1 cup lager beer, room temperature
3 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
One 10-ounce can beef consomme or 1 1/2 cups beef stock
One 1-pound bag sauerkraut, rinsed and drained well
1 1/2 cups shredded good-quality Swiss cheese
1 cup shredded or crumbled sharp white Cheddar
1 small bunch watercress, chopped
1 cup sour cream
1/3 cup ketchup
2 tablespoons sweet pickle relish
Few dashes hot sauce
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees F. For the potato topper: Boil the potatoes in salted water until just tender. Drain and transfer to a large bowl. Heat the butter and EVOO in a small skillet over medium heat and toast the caraway seeds. Pour the caraway mixture over the potatoes and season with salt and pepper. Spread the potatoes on a baking sheet and squish them with the bottom of a water glass to flatten them. Roast until crisp, 25 to 30 minutes. Leave the oven on. Meanwhile, for the casserole filling: Heat the EVOO in a large Dutch oven over medium-high heat. Add the corned beef and cook until browned, and then remove to a plate. Add the ground beef and cook until browned. Add the garlic, celery, bay leaf, carrots and onions and season with salt and pepper. Cook until the vegetables are soft, about 5 minutes. Return the corned beef to the skillet. Heat the butter in a small skillet over medium heat. Whisk in the flour and cook, whisking, until light golden. Whisk in the beer, Worcestershire, mustard and consomme; season with pepper. Pour the gravy over the corned beef mixture and stir to combine. Transfer to a casserole dish and top with the sauerkraut, cheeses and potatoes. Bake until the cheese is melted and the casserole is heated through. Meanwhile, for the Russian dressing topper: Combine the sour cream, ketchup, relish and hot sauce and season with salt and pepper. Drizzle the casserole with the dressing and garnish with watercress just before serving. Cook's Note: The unbaked casserole can be covered and refrigerated for a make-ahead meal.
