Grzybki Marynowane (Pickled Wild Mushrooms) image

This recipe is for pickling the porcini mushroom also known as the penny bun, cep, or cepe. This is a delicious way to preserve wild mushrooms and serve them any time you wish! Other flavorful edible wild mushrooms would work well for this recipe.

4 pounds fresh porcini mushrooms
5 1-pint canning jars with lids and rings
3 ½ cups water
1 cup white vinegar
1 onion, roughly chopped
1 tablespoon superfine sugar
1 teaspoon salt
6 whole black peppercorns, or to taste
2 whole allspice berries
1 bay leaf

Steps:

  • Trim and wash mushrooms. Place in a large saucepan, cover with water, and bring to the boil. Remove saucepan from heat and drain. Return mushrooms to saucepan, add fresh water to cover, and bring to a boil again. Remove from heat and drain. Cut larger mushrooms into bite-sized pieces.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack mushrooms into hot, sterilized jars.
  • Bring water, vinegar, onion, sugar, salt, peppercorns, allspice, and bay leaf to a boil in a large pot for 5 minutes. Remove from heat and set aside to cool, about 20 minutes. Pour liquid evenly over mushrooms, filling to within 1/4 inch of the top.
  • Run a clean knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 7 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

1/4 cup dry white vinegar
1/4 cup red wine vinegar
3 tablespoons water
2 teaspoons olive oil
2 large garlic cloves, crushed
1 teaspoon sugar
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
12 ounces mushrooms, cut into quarters

Steps:

  • In a small saucepan, combine all ingredients, except for the mushrooms.
  • Bring to a boil over medium heat and cook for 3 minutes.
  • Add mushrooms and when mixture boils again continue to cook and stir, 1 minute more.
  • Chill several hours or overnight to blend flavors.
  • Serve cold.
  • Preparation and cooking time does not include flavor blending time.

Russian Mushroom Salad image

A traditional layered Russian salad of mushrooms, hard-boiled eggs, pickled cucumbers, onion, and mayonnaise. Decorate with chopped parsley or dill. If you are not making the salad in a mold, simply reverse the order of layers and layer directly onto a serving plate. Cover with plastic wrap and refrigerate before serving.

2 potatoes
1 tablespoon butter
4 cups chopped mushrooms
4 hard-boiled eggs, peeled and diced
2 red onions, finely chopped
1 cup mayonnaise, or to taste
1 cup finely chopped pickles
1 cup finely chopped cornichons

Steps:

  • Place potatoes, unpeeled, into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and cool until easily handled; peel and dice.
  • Melt butter in a large skillet over medium heat. Add mushrooms; cook and stir until browned, 8 to 10 minutes. Remove from heat and let cool.
  • Cover the bottom of a mold with 2 diced eggs. Layer 1 onion, 1/4 cup mayonnaise, 1/2 of the mushrooms, and all the potatoes on top. Spread 1/4 cup mayonnaise, all the cornichons, remaining eggs, and another 3 1/2 tablespoons mayonnaise on top. Finish layers with remaining onion, mushrooms, and mayonnaise.
  • Refrigerate until firm, 1 to 2 hours. Invert onto a serving platter and lift off mold.

2 lbs cremini (or button mushrooms, chopped if large)
1/2 cup apple cider vinegar
1/2 cup 100g water
1/4 cup avocado oil (or other neutral oil (don't use virgin olive oil - too strong))
2 teaspoons salt
2 teaspoons sugar
6 bay leaves
6-7 cloves garlic (pressed)
Chopped dill for serving

Steps:

  • Combine all ingredients in a large pan.
  • Bring to boil, and simmer for 10 minutes.
  • When cool, toss with fresh chopped dill, and refrigerate overnight. Or eat them right away.
  • If you plan to store marinated mushrooms longer than a couple of days, add dill right before serving.

  • Mix all the herbs and spices in a small bowl. Lay down a thin layer of pickling or kosher salt at the bottom of a crock or other non-reactive container, then lay down a layer of mushrooms. Sprinkle with some of the herbs and spices. Add a bit more salt. Keep layering like this until you have all the mushrooms in the crock. Finish with another layer of salt.
  • Place a clean plate or other top on the mushrooms and weigh it down. I use a quart Mason jar filled with water. Let this sit in a cool, dark place (no need to refrigerate) for 4 days. After the first day, check to see that the mushrooms are submerged in their own brine. If not, boil 1 pint of water with 2 tablespoons kosher salt and let it cool. Pour over the mushrooms and continue fermenting.
  • After 4 days, move the mushrooms and brine and spices to clean Mason jars and refrigerate. They will keep for several months.
