I have a local eatery who makes an amazing flatbread sandwich. This panini is based on their chicken pesto sandwich. I recommend pane turano, or you may use a sturdy sourdough.

10 slices sourdough bread
10 teaspoons butter
1 (22 ounce) package grilled chicken strips
1 (2.5 ounce) package precooked bacon
1 (8 ounce) ball fresh mozzarella cheese, thinly sliced
1 medium avocado, peeled and thinly sliced
1 medium Roma tomato, sliced
5 teaspoons fresh basil pesto

Steps:

  • Heat a panini grill on the highest setting. Brush 2 pieces of bread with butter. Assemble panini with chicken, bacon, and mozzarella. Lower panini press. Cook until bread is golden and cheese is melted, about 5 minutes.
  • Carefully separate bread and add in some sliced avocado, tomato, and pesto. Repeat above steps for additional panini sandwiches.
  • Reassemble sandwiches and cut in half. Serve immediately.

2 slices rye bread ((preferably, marble))
1 tablespoon butter (, softened)
2 tablespoons Russian dressing
2 slices Swiss cheese ((or more, to taste))
3-4 ounces corned beef (, thinly sliced)
1/4 cup sauerkraut (, drained)
pickles and potato chips or French fries ((for serving))

Steps:

  • Butter one side of each of the slices of rye bread. Spread Russian dressing on the unbuttered sides. Layer the sandwich in the following order: 1 slice of Swiss cheese, corned beef, sauerkraut, and the remaining slice of cheese. Top with the second slice of bread, dressing-side down.
  • Heat a nonstick skillet over medium heat. Grill the sandwich until the bread is golden and crispy and the cheese is melted, about 3 minutes per side. Gently press down on the sandwich occasionally with a spatula as it cooks. Serve immediately with pickles and potato chips, French fries, or vinaigrette potato salad.

8 slices rye bread
1/4 cup Thousand Island dressing
1 cup sauerkraut, drained, squeezed dry (from 14.5-oz can)
1/2 lb corned beef, thinly sliced
8 slices Swiss cheese

Steps:

  • Heat closed contact grill 5 minutes.
  • Spread butter on one side of each bread slice. On unbuttered side of 1 bread slice, spread 1 tablespoon of the dressing. Top with 1/4 cup of the sauerkraut, 2 oz corned beef, 2 slices cheese and remaining bread slice, buttered side up. Repeat for remaining sandwiches.
  • When grill is heated, place sandwiches on grill. Close grill; grill 5 to 6 minutes or until cheese is melted and grill marks appear. Serve immediately.

22 oz cooked Chicken Breast ((1.5 lbs of poached, grilled or fried))
2 round focaccia loaves
2 ripe tomatoes (sliced)
1/2 purple onion (sliced)
8 slices Mozzerella cheese
1/2 cup Hellmans Spicy Chipotle Mayo
1/4 cup sour cream

Steps:

  • Whisk together the chipotle mayonnaise and sour cream and set aside. Prep all the ingredients.
  • Cut focaccia bread in half, crosswise. Spread a generous amount of the chipotle spread over each side. Top in the following order; chicken pieces, tomatoes, onion, fresh basil and cheese.
  • Grill whole on a panini press over hi heat until cheese melts. Cut each focaccia into 4 pieces and serve.

1/2 lb corned beef
½ tsp olive oil
6 slices rye bread
2 Tbsp unsalted butter (room temp)
1/2 cup sauerkraut (drained)
6 slices Swiss cheese
1/4 cup mayo
1 1/2 tsp chili garlic sauce
1/2 tsp lemon juice
1 ½ tsp creamy horseradish
1 garlic clove (minced)
½ tsp Worcestershire sauce
1/2 Tbsp onion (finely grated)
⅛ tsp paprika
Salt and pepper, to taste

Steps:

  • In a bowl combine all the ingredients for the Russian Dressing, set aside.
  • In a skillet, over medium heat, add oil. Once hot, add the meat and cook just until heated.
  • Lightly butter one side of each slice of bread. Place the bread (butter side down) on a plate.
  • Add the toppings to each sandwich: Spread the dressing, top with the meat, cheese and sour kraut. Close bread slices to create a sandwich.
  • In a hot skillet, cook sandwiches over medium heat 4-6 minutes, flipping once. Cook until cheese melts and the bread is crispy.

Steps:

  • Cut rolls open.
  • Brush outside of rolls with olive oil.
  • Brush both sides of inside of rolls with russian dressing.
  • Cut cheese in half, add 4 halves to each roll.
  • Add 3 slices roast beef, 3 slices corned beef and 2 slices tomato to each roll.
  • Cut in half.
  • Heat in your panini press or george foreman grill.
  • Enjoy.

8 slices pumpernickel bread
8 ounces sliced smoked turkey breast
8 slices bacon
1/2 cup sliced almonds
1/2 cup mayonnaise
2 tablespoons ketchup
lettuce (optional)
tomatoes (optional)

Steps:

  • Preheat oven to 350.
  • Arrange almonds on a cookie sheet and toast for 5 minutes.
  • Mix mayonnaise and ketchup together.
  • Toast Pumpernickel bread.
  • Spread mayonnaise mixture on the toasted bread.
  • Layer turkey& bacon.
  • Top with toasted almonds.
  • Optional: Lettuce and Tomato can also be added.
