1 cup quark, well drained
5 tablespoons all-purpose flour, plus extra for dusting

Steps:

  • Beat egg and white sugar together in a bowl until smooth. Whisk in quark cheese, flour, vanilla sugar, and salt. Mix well until dough is thick and sticky.
  • Divide dough into 5 to 6 portions. Form into balls and coat with some flour. Flatten slightly to form into discs (syrniki).
  • Heat oil in skillet over medium-low heat. Add the syrniki; fry until browned, 5 minutes per side.

15 oz about 2 cups farmers cheese, homemade or purchase 2 packages.
4 large eggs
3/4 cups all-purpose flour + 1/2 cup for dredging
3 Tbsp sugar
1/2 tsp salt
1 tsp baking soda
1 tsp white vinegar
1 cup raisins
2-3 Tbsp extra light olive oil for each batch
Fresh fruit or jam (sour cream, powdered sugar; whatever you like!)

Steps:

  • In a large bowl, mix together cheese, eggs, 3/4 cup flour, sugar and salt.
  • Place baking soda in a small bowl and add vinegar; give it a stir as it fizzes. Add this mixture to the cheese mix.
  • With a hand-held electric mixer, mix until uniform consistency. Stir in the raisins with a spoon. It will still have some little cheese clumps.
  • Heat a large skillet over medium heat, add 2-3 Tbsp extra light olive oil.
  • Add 1/2 cup flour to a small bowl. Place a heaping tablespoon of flat ice cream scoop of the cheese mixture into the flour. Reach into the bowl and sprinkle flour over the top of the pancake. With Well-floured hands, remove excess flour by gently transferring the pancake from one hand to another.
  • Once the skillet and oil are hot, place patties directly into the skillet as you mold them. Saute until golden brown, about 3-4 minutes each side, flipping once during cooking.
  • Transfer to a plate and serve with your favorite toppings like sour cream, fruit and powdered sugar.

These traditional Russian pancakes are made both with sweet (strawberry or any other jam) and savory (smoked salmon, caviar, sour cream) toppings!

1 1/4 cups (300ml) milk
3/4 cup (100g) all-purpose flour
a pinch of salt
butter (, for frying)
sour cream
caviar
smoked salmon
dill
fruit preserves (I used strawberry jam but you can use any jam you like)

Steps:

  • Beat together the eggs, milk and salt. Add the flour and beat again with a mixer. The batter should be thin.
  • Butter a frying pan over medium-high heat (the size of the pancakes depends on the size of your pan. If you want them smaller, take a smaller pan and so on). Pick the pan up off the heat. Pour in a ladle of batter tilting and rotating the pan to spread it evenly. Return to the heat.
  • Cook until the edges are crisp looking and the center of the pancake looks dry. Carefully flip the pancake over and cook for about 1 minute on the other side.
  • Transfer to a plate. Continue cooking blini, stacking them on top of each other.
  • For the savory version, top with sour cream and caviar, or with the smoked salmon and dill. You can either fold a pancake in half, then in half again (to form a triangle) and put a filling on top, or roll them into a stuffed tube. For the sweet version use any jam you like, or put some honey on top. Enjoy!

2 eggs
½ + ⅓ cup all purpose flour (, divided)
¼ cup sugar
½ teaspoon salt
Optional: ½ cup raisins
6-8 tablespoons vegetable oil, for frying

Steps:

  • Prepare the batter: In a large bowl, crumble the farmers cheese into little pieces with a fork. Add 2 eggs and mix well. Add ½ cup flour (reserve ⅓ cup for step 2), sugar, and salt. Mix well, using the fork to break apart any clumps of flour or farmer's cheese. Add raisins, if using. The 'batter' will be thick like dough, not like traditional pancake batter.
  • Form the syrniki pancakes: Prepare a small bowl with about ⅓ cup flour - you will use it to dredge the pancakes. Scoop out approximately ¼ cup pancake dough at a time. (See recipe notes below) Use your hands to gently flatten the dough into a small patty. Dredge the pancake with flour on both sides. Shake off the extra flour and set aside until you are ready to cook the syrniki pancakes.
  • Cook the syrniki pancakes: In a large skillet, heat 3-4 tablespoons of vegetable oil, and gently place the flour-dredged cheese pancakes into the pan using a spatula. Cook on medium-low heat for about 4-5 minutes per side, or until each side is golden brown. Place on a paper towel to cool. Do not crowd the pancakes - cook them in 2-3 batches if necessary.
  • To serve, sprinkle with powdered sugar, or drizzle with maple syrup, honey, whipped cream. Or try these syrniki the traditional Russian way - with sour cream and your favorite fruit preserves.

350 grams or 2 1/2 cups all-purpose flour (See notes below for substitutions)
1/2 teaspoon salt
3 tablespoon sugar
1/4 teaspoon baking soda
2 eggs ((see notes below for substitutions))
800 ml or 3 1/3 cups milk (warmed (see notes below for substitutions))
100 ml or 1/2 cups cream (for lower calories intake use warm water )
5 tablespoons butter (for lower calories intake use warm water instead)
sunflower oil or canola oil to fry

Steps:

  • In a large bowl, mix flour, salt, sugar and baking soda. Add eggs, milk and cream. Use a paddle attachment of your mixer or food processor to mix the batter until smooth. The consistency of the batter should be a bit thicker than cream with no lumps.
  • Heat two pans over high heat. Melt butter and add it to the batter. Blend until smooth.
  • Pour a tiny bit of sunflower oil in both pans (you can use a silicon brush to spread it). Use a scoop or a ladle to pour the batter in the middle of the pan. Acting quickly, tilt the pan from side to side while pouring, forming a circle with the batter.
  • Flip the pancake over with a thin spatula, after the surface looks porous and sides are golden. Fry for half of the time you fried the first side. Repeat with the rest of the batter.
  • You might want to put them in the warm oven (not warmer then 70 °C/160 °F) to keep them hot before serving. Enjoy!

This recipe was given to me by my Russian teacher/neighbor. It is tried and true, and my family loves it! Cooking time really depends on how many skillets you are using! Many years ago when I first started making the blini, I used 1 skillet and it took forever to use up all the batter. Now I use 4 skillets and the time goes by quickly. I have substituted coconut oil and it tastes delicious, but it tends to harden if the batter is cold. Batter can be refrigerated for later use. Serve hot with sour cream and/or jelly.

  • Gather the ingredients.

5 eggs
⅓ teaspoon salt
2 tablespoons white sugar
½ teaspoon baking soda
⅛ teaspoon citric acid powder
4 cups all-purpose flour
3 tablespoons vegetable oil
1 cup boiling water
⅔ cup butter, divided

Steps:

  • Beat together the milk and the eggs. Stir in the salt and the sugar and mix well. Add the baking soda and citric acid.
  • Blend in the flour. Add the vegetable oil and pour in the boiling water, stirring constantly. The batter should be very thin, almost watery. Set the bowl aside and let it rest for 20 minutes.
  • Melt a tablespoon of butter in a small frying pan over medium-high heat. Pick the pan up off the heat. Pour in a ladleful of batter while you rotate your wrist, tilting the pan so the batter makes a circle and coats the bottom. The blini should be very thin.

  • Transfer the blini to a plate lined with a clean kitchen towel. Continue cooking the blini, adding an additional tablespoon of butter to the pan after each 4 blini. Stack them on top of each other and cover with the kitchen towel to keep warm.
  • Spread your favorite filling in the center of the blini, and fold three times to make a triangle shape. You can also fold up all 4 sides, like a small burrito.

  • Heat a non-stick pan with enough oil and butter to cover the bottom of the pan. Drop batter with a large spoon or a small ice-cream scoop into hot oil and fry on medium heat on one side until golden and the batter is cooked halfway through, then flip carefully. This is when the fish spatula comes in handy. The pancakes will puff up as soon as you flip them over. Maintain medium heat to ensure each pancake is cooked all the way through as they are going to be tall. (Add oil throughout the frying process as needed.)
