Steps:
- Heat oil in skillet and saute garlic and onions until tender. Add pork and saute until browned. Add vegetables and cook until tender, yet crisp, about 5-10 minutes. Remove from heat. Season with soy sauce. When mixture is cool, add bean sprouts. Salt to taste.
- To assemble lumpia: Carefully separate wrappers. To prevent them from drying out, cover unused wrappers with moist paper towel. Lay one wrapper on clean surface. Place about 2-3 tablespoons of the filling near the edge closest to you. Roll edge towards the middle. Fold in both sides and continue rolling. Moisten opposite edge with water to seal. Repeat with other wrappers. Lumpia can be frozen until ready to use.
- Deep fry at 350 degrees until golden brown, about 3-5 minutes on each side. Drain on paper towels. Serve with Sweet and Sour or Vinegar and Garlic Dipping Sauce.
- In a small pan combine vinegar, soy sauce, ketchup, water, sugar and salt, and boil for 2 minutes. Thicken with cornstarch mixture.
- Mix together all ingredients.
PUMPKIN RUM PIE
Steps:
- Preheat the oven to 375 degrees F.
- Partially bake the pie shell, according to the package directions.
- In the large bowl of an electric mixer, whisk the pumpkin puree, eggs, brown sugar, melted butter, 1 1/2 cups of the heavy cream, sour cream, cinnamon, ginger, cloves, nutmeg, salt, dark rum, and vanilla. Pour into the shell. Bake for 10 minutes, and then reduce the oven temperature to 300 degrees F. Continue baking for 35 to 45 minutes. Cool to room temperature and refrigerate until ready to serve.
- With the whisk attachment of an electric mixer, whip the remaining cup of heavy cream on high speed until the cream starts to froth. Gradually add the confectioners' sugar and whip on high until the cream stands in peaks. Either spoon or pipe the whipped cream around the edges of the pie and garnish with Praline Pecans.
- In a small skillet melt the butter and sugar over medium heat. Add the pecans, stirring until bubbly; about 5 minutes. Remove from the heat and pour onto aluminum foil. When the pecans are cool, crumble into small pieces and sprinkle the topping on top of the whipped cream.
RUM PIE
My mom made this around Christmas time, but it's a great light dessert for anytime of the year! This has been a family favourite for as long as I can remember and I requested it often.

Steps:
- Sprinkle gelatin on cold water. Place over hot water and stir until dissolved.
- Blend Eagle Brand and rum in medium sized bowl.
- Gradually add gelatin and stir.
- Chill a short time until mixture starts to thicken.
- Whip cream and gently fold into milk mixture.
- Turn into prepared pie shell and chill in fridge until firm (about 2-3 hours).
- Sprinkle optional chocolate and/or coconut on top and enjoy!
- Cook time includes chilling time.

A great refreshing pie especially for the men in your life. You can use any type of pre-baked pie shell: pastry, graham wafer, or chocolate wafer. Serve after chilling for several hours.

- Pour the cold water into a small bowl and sprinkle with the gelatin. Set aside and allow the gelatin to soften.
- Combine the egg yolks and sugar in a heat-proof mixing bowl. Beat with a hand mixer or a whisk until the mixture is thick and lemon-colored. Set the bowl over a pot of simmering water on the stove and cook, stirring constantly, about 5 minutes. The mixture should feel hot to the touch and have reached 145 degrees F (63 degrees C) on an instant-read thermometer.
- Remove the bowl from the heat and mix in the rehydrated gelatin. Stir until the gelatin dissolves and allow the mixture to cool to room temperature.
- Whip the cream to medium-stiff peaks; stir in the rum. Fold the whipped cream into the egg mixture. Pour the filling into the two pie shells and sprinkle with chocolate shavings. Chill the pies for at least 6 hours or overnight.

- Place berries in a large jar. Gently toss with 1 cup sugar. Let sit for 2 hours, then top with 1/3 of the rum. Do not stir.
- Cover berries with peaches and nectarines. Top with 3/4 cup sugar and another 1/3 of the rum. Do not stir.
- Add plums. Top with remaining sugar and cover with rest of rum, leaving room for 1 inch of liquid on top. Do not stir.
- Loosely wrap reserved peach and nectarine pits in a thick towel. Use a hammer or kitchen mallet to crack the pits and extract the kernels. Crush the kernels gently and add to the vessel.
- Cover and let sit in a dark, cool place (but not the refrigerator) for at least 3 weeks and preferably 12. If the fruit floats to the top, turn the jar upside down so all the fruit falls to the bottom (you may have to do this several times over the weeks).

LUMPIA
This makes crispy lumpias that leave the plate as soon as you make them. This recipe is from the food network courtesy of Carlita Domingo. It also includes recipes for two dipping sauces. If you plan to freeze these do not use wonton wrappers as they will stick together. My wrappers also suggest using an egg white mixed with 1 tablespoon of flour to seal the wrappers.

TRADITIONAL FILIPINO LUMPIA
This is a traditional Filipino dish. It is the Filipino version of the egg rolls. It can be served as a side dish or as an appetizer.

- Place a wok or large skillet over high heat, and pour in 1 tablespoon vegetable oil. Cook pork, stirring frequently, until no pink is showing. Remove pork from pan and set aside. Drain grease from pan, leaving a thin coating. Cook garlic and onion in the same pan for 2 minutes. Stir in the cooked pork, carrots, green onions, and cabbage. Season with pepper, salt, garlic powder, and soy sauce. Remove from heat, and set aside until cool enough to handle.
- Place three heaping tablespoons of the filling diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble. Moisten the other side of the wrapper with water to seal the edge. Cover the rolls with plastic wrap to retain moisture.
- Heat a heavy skillet over medium heat, add oil to 1/2 inch depth, and heat for 5 minutes. Slide 3 or 4 lumpia into the oil. Fry the rolls for 1 to 2 minutes, until all sides are golden brown. Drain on paper towels. Serve immediately.

HOMEMADE LUMPIA RECIPE BY TASTY

- Make the filling: Heat the oil in a medium pan over medium-high heat.
- Add the onion, garlic, ginger, and carrot. Cook for 4 minutes, or until the onion is slightly translucent.
- Add the ground pork and cook for about 6 minutes, or until cooked through.
- Add the water chestnuts, salt, pepper, and soy sauce. Stir for 2 minutes, then mix in the green onion and cilantro. Remove the pan from the heat and let cool.
- Heat about an inch (2 cm) of canola oil in a deep, medium frying pan until it reaches 300°F (150°C).
- Lay out one lumpia wrapper in a diamond shape and spoon 2 tablespoons of filling at the bottom of the wrapper, leaving about an inch and a half (3 cm) of space from the bottom point.
- Fold the bottom point over the filling, then fold in the edges to create an envelope shape. Roll the wrapper toward the top point. Brush the top point with egg wash and finish the roll to seal the end.
- Carefully place four to five lumpia at a time in the hot oil. Frying on each side for 1-2 minutes, or until golden brown. Note: If the lumpia are cooking too fast or burning, reduce the heat.
- Remove the lumpia from the oil and drain on a wire rack or paper towels.
- Sprinkle with a garnish of cilantro and serve with sweet chili dipping sauce. Optional: Cut lumpia in half.

- Whisk 1/4 cup wine, 3 tablespoons olive oil, kosher salt, Italian seasoning, vinegar, 1/2 teaspoon black pepper, and garlic salt together in a bowl and pour into a resealable plastic bag. Add rump roast, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours to overnight.
- Remove roast from the refrigerator. Melt butter in a large skillet over medium-high heat. Sear roast in hot skillet, turning to brown all sides, about 10 minutes.
- Place roast in a slow cooker with vegetable broth, remaining 1/2 cup red wine, onion, parsley, carrots, celery, remaining 4 tablespoons olive oil, garlic, salt, and pepper. Cover and cook on Low heat until roast is fall-apart tender, 9 to 10 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

LUMPIA
I got this recipe from group recipes and made it for the first time today. The picture is mine.I also did some pictures of the different stages of preparing this dish but don't know where to add the other pictures. And as you can see I am not the greatest picture taker!

- 1. Fry the ground pork with the minced garlic.
- 2. When well done remove from frying pan and let cool.
- 3. The recipe called for 1/2 regular onion and 1/2 green onion but I preferred to use all green onion so that was 1 cup of green onion for my recipe.
- 4. mince the carrots and cabbage.
- 5. mix the veggies in with the cooked pork.
- 6. add salt, pepper, garlic powder and shoyu sauce and combine with the pork and veggies
- 7. Put all back in the frying pan with a little oil and cook for a few minutes to slightly cook the veggies.
- 8. take the filling out of the frying pan and into a bowl to cool.
- 9. When cooled off get your egg roll wrappers out and place the filling on the eggroll wrapper. Run the edges of the egg roll wrapper with the beaten egg to seal when the lumpia is rolled. ( I used just plain water instead of beaten egg for the sealer) Works just as well to me as the beaten egg.
- 10. When you get all of the lumpia rolled. Get your wok or frying pan heated up to cook and cook both sides until golden brown.
- 11. Serve with your favorite dipping sauce.
- 12. NOTE: Because this makes alot of lumpia I only cooked enough for our meal and the rest I wrapped each one in saran wrap and put in freezer bags for other meals.
