HOT BUTTERED RUM CHICKEN
Steps:
- Prepare a grill for medium-high heat. Preheat the oven to 400 degrees F.
- Add the chicken thighs to a large bowl and pour over 1/4 cup of the rum. Add the basil, rosemary, thyme, seafood seasoning, cayenne and 1 tablespoon salt. Stir to coat. Set aside.
- In a small saucepan, combine the brown sugar, chipotles, butter and the remaining 1 cup rum. Simmer over low heat until the chipotles have dissolved. Remove from the heat; reserve half of the sauce in a separate bowl.
- Lightly oil the grill grates. Grill the chicken until grill marks form, turning once and brushing with the sauce in the pot every few minutes, 10 minutes total. (Discard the sauce in the pot.)
- Transfer the chicken to a baking sheet, cover with foil and transfer to the oven. Bake until cooked through, about 30 minutes. Brush with the reserved sauce and serve immediately.

- Place chicken thighs in non-metallic dish or resealable plastic bag. Set aside.
- To make marinade, place juices, soy sauce, Worcestershire, sugar, zest, garlic and cayenne in sauce pan over medium heat. Stir to combine. Heat and stir 4 to 5 minutes or until sugar has dissolved. Remove from heat and whisk in rum and oil. Set aside to cool. When cool, stir in cilantro and pour mixture over thighs. Cover or seal bag and refrigerate 2 to 3 hours, or overnight. Turn chicken occasionally while marinating.
- Preheat grill and lightly coat grill rack with oil or cooking spray.
- Remove chicken from marinade and place marinade in sauce pan. Heat marinade to boiling, reduce heat and add butter. Simmer 5 minutes. Divide sauce, reserving half for basting chicken when grilling and half for serving.
- Place chicken on prepared grill 4 to 6 inches from heat source. Grill over medium heat 8 to 10 minutes, turning and basting often. Continue grilling an additional 8 to 10 minutes without basting, until glazed and chicken reaches 170° F on meat thermometer. Juices should run clear when chicken is pierced with fork. Discard any remaining basting sauce.
- To serve, place chicken on platter, garnish with lime wedges and cilantro, if desired, and serve with reserved sauce.

- Cook the rice by following the package directions; while the rice cooks, make the chicken and sauce.
- Cut the pineapple into bite-size pieces.
- Heat a medium saucepan over med-high heat.
- Add in 1 tablespoon vegetable oil; add in the onions, garlic, salt, and crushed red pepper flakes; cook, stirring frequently, for 2 minutes.
- Add in the pineapple chunks and the juice from the container (no more than ½ cup); stir to combine.
- Remove the pan from the heat; add in the spiced rum.
- Return the pan to the heat, keeping a little distance in case the pot flames up.
- You can flame it on purpose, if you want to look cool.
- Either way, let the alcohol cook away, 1 minute.
- Add in the chicken stock and bring the mixture to a simmer, then cook until it reduces hy half and has thickened slightly.
- While the sauce is simmering, preheat a large nonstick skillet over med-high heat with the remaining 2 tablespoons oil.
- Season the chicken with salt and pepper, then add to the hot skillet.
- Cook chicken for 6 minutes on each side (for a smoky taste, grill the chicken on a grill pan or on an outdoor grill).
- Slice breasts and return to the large skillet.
- Pour in the pineapple and sauce and combine with a good shake of the pan.
- Add in the parsley and cilantro; turn off the heat.
- Let stand for a minute or two.
- Serve up the jasmine rice and top with a liberal amount of the Island Bird.

- 1. Place all of the marinade ingredients into a gallon-size plastic ziplock bag, and shake well to combine. Add chicken thighs, shake well to coat all thighs with marinade. Place in refrigerator to marinate 6 to 8 hours, turning occasionally if possible.
- 2. Prepare outdoor grill for medium-high heat; brush vegetable oil on grate.
- 3. Remove thighs from bag, and discard the marinade.
- 4. Grill the thighs over medium-high heat with smooth-side down for about 3 to 5 minutes or until grill marks show. Turn, and grill another 3 minutes more. Keep cooking, turning every 2 minutes, until done and juices run clear, about 11 to 14 minutes total (depending on heat level and thickness of thighs).
- 5. For the Honey-Rum Glaze, place honey, lime zest, orange zest, orange juice, allspice, ginger and paprika in a microwave-safe bowl. Cover with plastic wrap, and heat in microwave for 30-45 seconds or until very warm to the touch. Remove bowl from microwave and stir in the rum. Spoon the Honey-Rum Glaze over the chicken thighs, and serve immediately.
