FRENCH TOAST WITH RUM BANANAS



French Toast With Rum Bananas image

Treat your guests or family to a SPECIAL BREAKFAST! Very easy to prepare. The combination of the ingredients are a plus to this entree. If you are cooking for a large crowd, keep cooked toast in a warm oven and top with bananas just before serving. Use firm, but not overripe bananas.

3 large eggs
3/4 cup milk
1/2 cup half-and-half
2 teaspoons vanilla
1/2 teaspoon cinnamon
salt
12 slices thick bread (day-old)
6 tablespoons butter
powdered sugar
3 large bananas, sliced
5 tablespoons butter
4 tablespoons brown sugar
4 tablespoons dark rum
4 tablespoons maple syrup
3 tablespoons water

Steps:

  • For French Toast:.
  • In a shallow wide bowl, beat eggs, milk, half and half vanilla, cinnamon and salt.
  • Melt 1 tablespoon butter in frying pan or griddle over medium heat. While butter melts, soak 2 to 3 slices of bread in batter. Remove bread and let excess drip off.
  • Arrange slices in pan, not letting slices touch. Fry one side until golden brown for approximately 5 minutes. Flip over and brown second side. When done transfer to a cookie sheet and keep in a warm oven. Repeat for other slices. Before serving sprinkle with powdered sugar.
  • For Rum Bananas:.
  • Melt butter over medium heat. When butter starts to turn brown, add bananas and mix gently. Sprinkle brown sugar on top of bananas. Stir until sugar has melted.
  • Add rum and cook 1 minute. Add maple syrup and water. Cook until just heated. Remove from heat and use as topping or beside toast.

RUM RAISIN FRENCH TOAST

3/4 cup rum raisin ice cream, melted
3 eggs, beaten to blend
1/3 cup ground walnuts
1 tablespoon amber rum
1/4 teaspoon cinnamon
8 slices raisin bread
4 tablespoons butter
Maple syrup
Additional rum raisin ice cream

Steps:

  • Combine melted ice cream with next 4 ingredients in large shallow pan. Dip raisin bread into ice cream-egg mixture and let soak 1 minute per side.
  • Melt 2 tablespoons butter in heavy large skillet over medium heat. Place 4 bread slices in skillet and cook until brown, about 2 minutes per side. Repeat with remaining butter and bread. Serve immediately with maple syrup and additional ice cream.

1 loaf bread, unsliced
6 large eggs
2 1/4 cups milk
1/4 cup sugar
1 teaspoon rum extract
1/4 teaspoon nutmeg
to taste confectioners' sugar

Steps:

  • Mix eggs, milk, sugar, extract and nutmeg together with mixer.
  • Slice bread in thick slices, thoroughly dip into mixture coating well, spray griddle with butter spray and brown on both sides, sprinkle with confectioner's sugar.
  • If you don't have time to prepare this, I have used commercial eggnog and added nutmeg.
  • You can buy it in a can and keep it in your pantry.

From this month's Cook's Illustrated Magazine (January 2009). Drying the bread first in the oven produces a French Toast that is crisp on the outside and soft (but not soggy) on the inside. If you purchase an unsliced loaf, cut the bread into 1/2-inch-thick slices. The French toast can be cooked all at once on an electric griddle, but may take an extra 2 to 3 minutes per side. Set the griddle temperature to 350 degrees and use the entire amount of butter for cooking.

1/2 cup pecans
4 tablespoons light brown sugar
3/4 teaspoon ground cinnamon
8 large slice cinnamon-raisin bread
1 1/2 cups whole milk, warmed (warm the milk in a microwave or small saucepan until warm to the touch, about 80 degrees)
3 large egg yolks
2 tablespoons unsalted butter, melted, plus 2 tablespoons for cooking
1/4 teaspoon table salt
1 tablespoon vanilla extract
2 teaspoons dark rum
maple syrup

Steps:

  • Process 1/2 cup pecans, 1 tablespoon light brown sugar, and 1/4 teaspoon cinnamon in food processor until coarsely ground, 12 to 15 one-second pulses (you should have about 1/2 cup crumbs).
  • Adjust oven rack to middle position and heat oven to 300 degrees. Place bread on wire rack set in rimmed baking sheet. Bake bread until almost dry throughout (center should remain slightly moist), about 16 minutes, flipping slices halfway through cooking. Remove bread from rack and let cool 5 minutes. Return baking sheet with wire rack to oven and reduce temperature to 200 degrees.
  • Whisk milk, yolks, sugar, cinnamon, 2 tablespoons melted butter, salt, vanilla, and rum in large bowl until well blended. Transfer mixture to 13- by 9-inch baking pan.
  • Soak bread in milk mixture until saturated but not falling apart, 20 seconds per side. Using firm slotted spatula, pick up bread slice and allow excess milk mixture to drip off; repeat with remaining slices. Place soaked bread on another baking sheet or platter. Sprinkle each slice of soaked bread with 1 tablespoon nut mixture.
  • Heat ½ tablespoon butter in 12-inch skillet over medium-low heat. When foaming subsides, use slotted spatula to transfer 2 slices soaked bread to skillet-nut mixture side down-and cook until golden brown, 3 to 4 minutes. Flip and continue to cook until second side is golden brown, 3 to 4 minutes longer. (If toast is cooking too quickly, reduce temperature slightly.) Transfer to baking sheet in oven. Wipe out skillet with paper towels. Repeat cooking with remaining bread, 2 pieces at a time, adding ½ tablespoon of butter for each batch. Serve warm, passing maple syrup separately.
