1 pack of sweet biscuits E.g. Arnott's Arrowroot, Nice, etc
3 Tablespoons cocoa
1 cup shredded coconut plus extra for rolling
1 395g tin condensed milk
2-3 Tablespoons rum

Steps:

  • Grind up the biscuits using a food processor into crumbs. If you don't have a food processor, you can add a few at a time to a sandwich bag and crush with a rolling pin or mallet.
  • Add dry ingredients and biscuit crumbs to a large bowl and mix well.
  • Stir in condensed milk and rum until your mixture is sticky and firm (on hot days you may need to keep your mixture in the fridge briefly first).
  • Shape mixture into balls and roll in extra coconut to coat.
  • Store in an airtight container in the refrigerator until ready to serve.

3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces
6 ounces semisweet chocolate, finely chopped
3 large eggs
1/2 cup packed light-brown sugar
1 teaspoon pure vanilla extract
1/2 teaspoon coarse salt
3/4 cup all-purpose flour
1/4 cup plus 2 tablespoons dark rum
Coarse sanding sugar, for rolling
Vegetable oil, cooking spray

Steps:

  • Preheat oven to 350 degrees. Coat a 12-by-17-inch rimmed baking sheet with cooking spray; set aside. Melt butter and chocolate in a small heatproof bowl set over a pan of simmering water, stirring occasionally. Set aside.
  • Whisk together eggs, brown sugar, vanilla, and salt in a large bowl. Stir in chocolate mixture, then fold in flour. Pour batter into prepared baking sheet. Spread evenly with a rubber spatula. Bake until top is shiny and a cake tester inserted into center comes out with some crumbs attached, about 10 minutes. Let cool completely on a wire rack.
  • Break up brownie into small pieces; transfer to the bowl of an electric mixer fitted with the paddle attachment. With machine on low speed, pour in rum, and mix until crumbs start to come together to form a ball.
  • Shape into 1-inch balls, and roll in sanding sugar to coat. Transfer to a baking sheet; refrigerate, uncovered, until cold, about 2 hours. Serve chilled or at room temperature.

These gorgeous rum balls, made with walnuts, chocolate, confectioners' sugar, and butter, are a Southern classic. A lovely homemade Christmas gift.

1/4 cup dark rum
6 ounces semisweet chocolate (chopped)
4 tablespoons unsalted butter
1/4 cup walnuts (toasted and finely chopped (or pecans))
1 1/2 cups confectioners' sugar
Generous pinch fine sea salt
Sprinkles, shredded coconut, or more toasted and finely chopped nuts (for decorating (optional))

Steps:

  • Heat the rum in a small saucepan over medium heat until the booze is reduced by half. Watch it carefully, as it evaporates quickly.
  • Set a heatproof bowl over but not touching a pot of gently simmering water. Add the chocolate and butter to the bowl and wait, stirring occasionally, until they're both completely melted.
  • Remove the bowl from the heat (careful, it will be hot!) and stir in the walnuts, rum, confectioners' sugar, and salt. Let cool to room temperature. (You can cover and refrigerate the cooled rum balls mixture for a few hours or even up to a few days, although you'll need to let it warm to room temperature before you proceed.)
  • Portion the rum balls mixture into 1-inch balls. (If it's too sticky to easily roll into balls, cover and refrigerate for about 30 minutes. If it's a little crumbly, try to roll it into balls anyways and if that doesn't work, let the mixture rest at room temperature for about 30 minutes and try again.) Roll the rum balls in sprinkles of some sort, if desired. Place the rum balls in a parchment-lined container with a lid. Cover and refrigerate until ready to serve. The taste of the rum will be subtle at first yet will deepen with time. We found the taste after exerting patience for a few days to be perfect.

1 cup/8 oz/ 225 g unsalted butter
1 3/4 cups/7 oz/ 200 g powdered sugar
1 cup/3.5 oz/ 100 g unsweetened cocoa powder
1/2 cup/3.5 fl.oz/ 100 ml heavy cream
3 Tablespoons/ 50 ml rum or 1 Tablespoon/10 ml rum flavor
2/3 cups/3.5 oz/ 100 g roasted chopped walnuts
granulated sugar to toss the rum balls OR coconut flakes
Optional: cherries in syrup

Steps:

  • Preheat oven to 350F/180C.
  • Place the walnuts on a baking tray and roast them for about 8 minutes, or until fragrant and lightly brown.
  • Let nuts cool, chop them with a knife, or toss them in a food processor until they are finely chopped.
  • Place them in a big bowl.
  • Process the graham crackers in a food processor until finely ground. If you do not have a food processor, place them in a bag and crush them with a rolling pin or a bottle.
  • Add them to the nuts.
  • In a small pot, place butter, heavy cream, sugar, and cocoa and bring to a boil without simmering them. Remove and set aside to cool.
  • Add the rum or the rum flavor.
  • Pour the mixture over the dry ingredients. Mix everything very well.
  • If the mixture is soft, place it in the refrigerator for about 30 minutes.
  • Using your hands, form 1 inch balls and toss them in granulated sugar, coconut flakes, chocolate sprinkles, etc.

1 ½ cups walnuts (finely chopped)
3 tablespoons heavy cream
¼-⅓ cup dark rum
chocolate sprinkles
coconut
cocoa powder

Steps:

  • Pulse Oreos in a food processor until you have 3 cups. Set aside.
  • Pulse walnuts in a food processor until you have 1 ½ cups.
  • Combine crushed Oreos, walnuts, cream in a medium bowl and mix well.
  • Add rum starting with ¼ cup and adding more if needed to create a consistency that holds its shape when rolled. (If you add too much and they are too soft, add in more cookie crumbs to get desired consistency, note that the crumbs do soak up the liquids as they sit).

3+ cups (311 g) vanilla wafers (a whole box of Nilla wafers)
1 cup (120 g) confectioners' sugar (plus more for rolling)
2 tablespoons (10 g) cocoa powder
2 tablespoons (44 g) white corn syrup
1/3 cup rum, plus more as needed

Steps:

  • Place vanilla wafers in a food processor and pulse into fine crumbs. There might be a few large pieces that don't catch the blade at this step, but they'll eventually end up getting pulverized, so don't worry. (Alternatively, place vanilla wafers into a Ziploc bag and bash them with a rolling pin until they are fine pieces).
  • Add confectioners' sugar, cocoa and corn syrup and pulse till combined. Add the 1/3 cup rum and pulse to combine. If necessary, slowly add more rum to the food processor until the mixture comes together and forms a mass around the blade or holds together when you pinch it.
  • Using a teaspoon or a #100 scoop, scoop out balls from the processor, roll them gently with your hands into irregular-shaped balls, and drop them into a plate (or shallow tupperware) filled with a thin layer of powdered sugar. Shake the vessel to coat the balls, then transfer balls to an airtight storage container until you are ready to serve them. Store in the fridge or freeze for up to 3 months.   • Melt chocolate chips in a double boiler.
  • Stir until smooth and remove from heat.

I wanted a good rum ball with a lot of kick, so I sat down and came up with this recipe. I didn't realize how good these were until one year I didn't make them for work. I just about got lynched! Needless to say, I've made them every year since (about 20 years). These are best if you use Meyers Original Dark Rum® chilled, and Nabisco® 'Nilla wafer cookies. They are at their peak if you make them 2 days in advance. Remove from fridge 30 minutes before serving.
