RUM BALLS
I wanted a good rum ball with a lot of kick, so I sat down and came up with this recipe. I didn't realize how good these were until one year I didn't make them for work. I just about got lynched! Needless to say, I've made them every year since (about 20 years). These are best if you use Meyers Original Dark Rum® chilled, and Nabisco® 'Nilla wafer cookies. They are at their peak if you make them 2 days in advance. Remove from fridge 30 minutes before serving.

Steps:
- Place vanilla cookies in a food processor and process into fine crumbs.
- Heat chocolate chips and corn syrup together in a saucepan over low heat. Cook, stirring often, until chocolate is melted and smooth, about 5 minutes. Remove from heat and stir in rum and confectioners' sugar until smooth. Fold in cookie crumbs; dough will be sticky.
- Place saucepan in the refrigerator until dough is firm and easy to roll, about 15 minutes. Cover 2 plates with waxed paper; dust with confectioners' sugar.
- Roll dough into 1-inch balls and place on the prepared plates. Dust rum balls with confectioners' sugar. Refrigerate until firm, about 30 minutes.
- Remove rum balls from refrigerator and transfer to a resealable bag, including the extra confectioners' sugar. Seal the bag and shake to coat the rum balls completely with confectioners' sugar.

Steps:
- Preheat oven to 350F/180C.
- Place the walnuts on a baking tray and roast them for about 8 minutes, or until fragrant and lightly brown.
- Let nuts cool, chop them with a knife, or toss them in a food processor until they are finely chopped.
- Place them in a big bowl.
- Process the graham crackers in a food processor until finely ground. If you do not have a food processor, place them in a bag and crush them with a rolling pin or a bottle.
- Add them to the nuts.
- In a small pot, place butter, heavy cream, sugar, and cocoa and bring to a boil without simmering them. Remove and set aside to cool.
- Add the rum or the rum flavor.
- Pour the mixture over the dry ingredients. Mix everything very well.
- If the mixture is soft, place it in the refrigerator for about 30 minutes.
- Using your hands, form 1 inch balls and toss them in granulated sugar, coconut flakes, chocolate sprinkles, etc.
- Place the rum balls in the refrigerator overnight in an airtight container.
- Optional: stick a pitted cherry from the syrup in the middle of the ball, or an almond, then toss in sugar.
- Serve cold.

- Add nuts to a non-stick ceramic skillet and cook on medium heat for about 4 minutes or until fragrant, stirring occasionally. Transfer to a food processor with remaining Dry Ingredients and process until small crumbs form. Do not overprocess, especially softer nuts like pecans, otherwise nut butter will start forming.
- Add Wet Ingredients and process for a few more seconds just until well combined. Place bowl of a food processor in a freezer for about 30 minutes.
- In a large Ziplock bag or on a large dinner plate, add cacao powder. Form golf size balls and coat/roll in cacao powder.

- Melt chocolate and butter into microwave until smooth (normally 30 seconds.) Let cool. In a food processor, combine cookies, cocoa and sugar until fine (like sugar.)
- Add chocolate to the cookie mix until mixed thoroughly. (Make sure to blend until it's even.)
- Add cola and rum extract until it created a ball of dough. Knead a few minutes until mixed and allow to sit for a few minutes.
- When able to pick up, begin making 1-1 1/2 inch balls from the dough and place on
- parchment or a Silpat mat.
- Melt dipping chocolate in the microwave until ready to dip. Using a fork, quickly coat balls in chocolate and place back on paper/mat to dry.

I received these as part of my annual Christmas Bake exchange. These are a little different from other rum ball recipes because they call for coke in the ingredients. Prep time does not include chill time.

- Blend in cola, syrup and rum.
- Stir in wafer crumbs, icing sugar, and walnuts.
- Mix well-Mixture will be sticky.

TRADITIONAL CHRISTMAS RUM BALLS RECIPE
Steps:
- Crumble cake pieces in food processor or by hands like breadcrumbs; make sure to break all lumps. Transfer the crumbs in a large mixing bowl.
- Melt chocolate in microwave at full power (mine is 900W) for 45 secs and whisk with spatula until entire chocolate is melted nicely. Or you can use double boiler method for the same.
- Pour melted chocolate on cake crumbs and mix with a spatula to coat all dry crumbs with chocolate.
- Combine the rum with chocolate-cake mixture until everything comes together to form a large dough ball.
- Take small portions of the mixture dough and roll between palms to form medium sized balls.
- Now insert one glace cherry in the middle of each ball and seal the edge.
- Line a tray with non-stick paper and place rum balls on it separately until all the mixture is rolled into balls.
- Dust the rum balls with cocoa powder or drizzle chocolate on top. Decorate rum balls further with sugar sprinklers.
