DISHOOM'S RUBY CHICKEN CURRY RECIPE

Steps:
- In a medium bowl, mix the marinade ingredients together, then toss chicken until evenly coated. Wrap and store in the fridge to marinate 6 hours to overnight.
- Making the curry takes about 45 minutes. Start by crushing or finely dicing the ginger and 2 cloves of the garlic. A mortar and pestle is ideal. Set aside.
- Roughly chop the remaining 2 cloves of garlic. Add the 1/2 cup oil to a large pan and set over medium high heat, then add the garlic. Cook garlic until golden brown, about 2-3 minutes, watching carefully to ensure it doesn't burn.
- Remove the garlic with a skimmer or slotted spoon and set aside. Add the bay leaf, cardamon, and cinnamon. Cook for about 1 minute, or until the cinnamon stick opens.
- Reduce the heat to medium and add the reserved ginger-garlic paste from step 2. Cook until paste has browned a little, about 5 minutes, then add the blended tomatoes, being careful of splattering. Cook, stirring occasionally, until the sauce is reduced about 2/3 and darkened, roughly 15 minutes.
- Add the butter, chili powder, garam masala, cumin, the reserved crispy garlic from step 4, and a pinch of salt. Cook for another 10-15 minutes, or until sauce has reduced by about 1/2, then stir in the cream. Cook for another 5 minutes, then remove from the heat and set aside while you make the chicken.
- Preheat your grill on high. Oil the grates well, and then skewer and and cook the chicken until charred and just cooked through, 8-10 minutes. If you don't have a grill handy, fry the chicken in 1-2 tbsp oil until just cooked through.
- Add the chicken to the curry and simmer for another 5 minutes, stirring evenly to coat.
- Plate and garnish with ginger matchsticks and cilantro (optional).

- Combine the cheese spread with the cream in a small saucepan, then cook over medium to low heat. Stir the cheese often until it melts and becomes smooth. Set aside.
- Heat the olive oil in a skillet over medium heat. Add the garlic, green chili pepper, red chili pepper, and yellow onion. Saute until translucent.
- Deglaze with white wine and reduce briefly.
- Add the cheese sauce, granulated sugar, and ground cumin. Bring the sauce to a simmer.
- Continue simmering for 5 to 7 minutes or until the flavors meld and incorporate, stirring occasionally.
- Adjust seasoning with salt and pepper. Set aside.
- Melt the butter in a deep skillet over medium heat. Add the paprika and roast briefly.
- Remove the pan from the heat, add the pasta, and toss to combine. Return to the heat and warm through.
- Transfer roughly ¼ of the pasta to a plate and pour about ⅓ cup of cheese sauce over the pasta.
- Place roughly 5 ounces of cooked and sliced chicken breasts on top.
- Add ⅓ cup of the black beans over the chicken.
- Add roughly ¼ cup of chopped tomatoes to the beans.
- Garnish with green onions and serve. Enjoy!

Steps:
- Sprinkle chicken with salt.
- In a large stewing pan, brown chicken pieces, in butter and oil a few at a time. Don't crowd pan.
- Add onion, orange juice, tabasco, cinnamon and ginger.
- Cover and simmer 30-35 minutes until chicken is tender. Remove chicken to a platter and keep warm.
- Add cranberries, sugar and molasses to skillet. Cook uncovered 5 minutes; stirring occasionaly.
- Blend cornstarch and cold water and add to the skillet stirring rapidly.
- Cook until sauce thickens, about 1 minute.
- Pour sauce over chicken and serve.

- In a blender, pulse all the marinade ingredients together to form a smooth paste: chopped ginger (3 tablespoons), chopped garlic (3 tablespoons), salt (1 teaspoon), chili powder (1 teaspoon), garam masala (1/2 teaspoon), lime juice (2 teaspoons), oil (2 teaspoons), and yogurt (1 cup). In a bowl or plastic container, fully mix chicken with marinade. Cover and leave to marinate in the fridge for at least 6 hours and up to 24 hours.
- To make the Makhani sauce, in a large heavy pot or Dutch oven, heat oil (1/3 cup), chopped garlic (2 tablespoons), bay leaves (2), cardamom pods (6) and cinnamon sticks (2), over medium heat. When the garlic starts to sizzle, stir and continue to toast the garlic and spices for 30-40 more seconds. Turn the heat down to a gentle simmer and add the grated garlic (2 tablespoons) and grated ginger (1 tablespoon). Cook for 5 minutes or so, stirring occasionally, regulating the heat so the ginger-garlic paste doesn’t burn. Add the pureed tomatoes, salt (2 teaspoons) and chili powder (1 1/2 teaspoons). Bring to a boil, lower to a simmer and cook until reduced by about half, about 20-25 minutes, stirring occasionally. Add butter (1 tablespoon), garam masala (1 teaspoon), sugar (1 1/2 tablespoons), honey (1 tablespoon), cumin (1 teaspoon), and fenugreek (1 teaspoon), if using. - In a small bowl, combine the cardamom, bay leaves, cinnamon sticks, kosher salt and garam masala. In a large, deep saucepan, melt ghee (butter or oil is ok too) over medium heat. Add the small bowl of spices and stir in the pan until nice and fragrant, about a minute. Add chopped shallots, minced garlic and ginger and continue to stir as they soften. Mix in the tomato paste and cook another minute or two, until it darkens a little bit.
- Add the 2 cups of strained tomatoes along with 1/2 cup broth and the honey, bring to a mild simmer over medium-low. Add the chopped chicken, if using, and simmer for about 20 minutes until cooked through. I recommend a splatter screen to avoid any tomato messes.
- The last 5 minutes, stir in the cumin and heavy cream, if using, and continue to simmer over medium heat to thicken everything up. Check to make sure the chicken is cooked through and everything is seasoned the way you like it. Serve with pita or naan bread, or over brown rice.
