Homemade Dry Spice Rub Recipe for Pork image

This dry rub recipe is filled with sweet and spicy flavors, and it's perfect for pork, ribs, chicken, and so much more! Comes together in less than 10 minutes and includes brown sugar, garlic powder, cayenne pepper, and smoked paprika.

½ cup dark brown sugar
3 tablespoons kosher salt
2 tablespoons garlic powder
1 tablespoon chili powder
1 tablespoon smoked paprika
1 tablespoon cayenne powder
½ tablespoon black pepper

Steps:

  • In a small bowl, combine all ingredients. Store in a small mason jar or old spice containers or any airtight container.
  • TO USE: Sprinkle liberally on both sides of the meat before placing on the grill. Or sprinkle on meat and wrap up tightly in plastic wrap for a couple of hours (I like to do this for larger cuts of meat) before placing on the grill.

Steps:

  • Mix all ingredients together and store in an airtight container. Use as much as needed to cover meat as shown; let meat sit covered for 30 minutes to overnight before cooking.

Here is a rub that provides a fast, flavorful coating for barbecue: beef, pork, chicken, lamb, venison. It calls for the process known as indirect grilling, in which you build a fire on one side of your grill and cook on the other, so that the meat is never in direct contact with flame. (If you grill this rub directly, the sugar and spices will burn rather than melt into appetizing darkness.) The recipe is forgiving. You might add granulated onion or garlic powder to it, or omit the coriander if you don't have any. Be careful with the paprika, as there are so many different varieties afoot: if it's smoked, you'll need less, and if it's fiery you may need less cayenne. No cayenne? Use red pepper flakes. Adjust the seasonings to your taste, then apply liberally.

PLAN/PURCHASE
1/2 c coconut sugar, light or dark variety
1 Tbsp dehydrated onions, crushed to a powder
1 Tbsp smoked paprika
1 Tbsp sweet paprika
2 tsp black or white pepper, freshly ground
1 tsp salt, kosher variety, fine grind
1 tsp mustard powder, i prefer colemans'
1 Tbsp garlic powder
1 Tbsp chili powder

Steps:

  • 1. PREP/PREPARE
  • 2. This recipe has some heat and some sweet. Fix it up and serve it on poultry or pork. Yummy stuff.
  • 3. Gather your ingredients (mise en place).
  • 4. Crush up the dehydrated onions. I am using a spice blender.
  • 5. Add all of the ingredients to a bowl.
  • 6. Whisk together to combine.
  • 7. Store in a non-reactive jar; as you would any dry spice.
  • 8. Take your chicken or pork, rub with a bit of oil, and then sprinkle liberally with the spice mixture.
  • 9. I am doing chicken wings, so after several attempts, this is what I came up with: I rubbed them with a bit of grapeseed oil, and a little toasted sesame oil. Then, dusted them with the dry spice. Placed them on a parchment-lined baking sheet, fitted with a wire rack. Put them in a preheated 350f (175c) oven for 60 minutes. They came out SUPER awesome.
  • 10. PLATE/PRESENT
  • 11. Use this rub on any pork or chicken recipe you have. Enjoy.
