- For SMOKY CHIPOTLE SPICE BLEND: to a small bowl add cumin, chili powder, garlic powder, onion powder, chipotle chili powder, smoked paprika, sea salt, and black pepper. Stir to combine. Pour spice blend into a sealable glass jar or ziplock bag. Use as needed.
- For MEDITERRANEAN SPICE BLEND: to a small bowl add basil, oregano, garlic powder, onion powder, dill, red pepper flakes, sea salt, and black pepper. Stir to combine. Pour spice blend into a sealable glass jar or ziplock bag. Use as needed.

Looking at my spice cabinet and the chicken fryer on the counter, I came up with this rub. My husband threw it on the rotisserie in the barbeque grill and it came out wonderful!

Steps:
- Mix all spices together in small bowl.
- Using a whole chicken fryer, carefully separate the skin from the meat and sprinkle rub in between the skin & meat.
- Gently rub the outer skin of the chicken where the spices were placed.
- Refrigerate the chicken for 1 hour.
- Roast in oven at 350 degrees until internal temp is 160 degrees.
- If available, rotisserie chicken for 1 1/4 hours.
- Serve with corn on the cob and mashed potatoes.

RUB A DUB-DUB
Rubs can be applied just before cooking, but for a more pronounced flavour, apply your rub and refrigerate for several hours. When a rub is applied and is tightly wrapped and refrigerated for 12-24 hours, the flavour will infuse the meat. I have found that kosher salt is the best to use as the sharp pieces of salt, when rubbed, permeate the meat more efficiently.

- Pour all the spices into a sandwich-size sealable plastic bag. Shake well. This can be stored for months and make enough for approximately 5-1/2 pounds chicken. Place a piece of chicken and 1 tablespoons of rub in a gallon-size sealable bag. Shake until all the chicken is in the bag and uniformly covered. Refrigerate up to one hour before grilling (refrigeration gives more intense flavor). Grill the chicken over medium heat on a covered grill about 5 - 7 inches per side or until the meat is no longer pink on the inside. Arrange the pieces on a dinner plate and cover tightly with aluminun foil. Let sit for at least 10 minutes (very important). Serve with barbecue dipping sauce.
