1 head lettuce, torn
1 cucumber, peeled, sliced
1/2 cup carrot, grated
2 tomatoes, sliced
1 onion, thinly sliced
4 eggs, hard boiled
1 cup bean sprouts
2 tablespoons oil
2 tablespoons peanut butter
2 tablespoons red curry paste
1 teaspoon chili powder
1/2 cup peanuts, ground fine
1 tablespoon sugar
2 tablespoons lemon juice
1 teaspoon salt
2 cups coconut milk
1/2 cup shallot, deep fried, could use french fried onions here

Steps:

  • fry oil curry.
  • chili powder.
  • add finely chopped peanuts.
  • add peanut butter.
  • add sugar add lemon juice salt.
  • coconut milk.
  • shallot.
  • bring to a boil.
  • gently until oil rises.
  • put in serving bowl.
  • salad.
  • lettuce on bottom.
  • cucumber center.
  • tomatoes either side next eggs.
  • bean sprouts either side.
  • carrot either side.
  • onion 4 corners.
