MY FAVORITE ROYAL ICING
Here is my classic easy royal icing made with meringue powder. It's easy to work with, sets quickly, and won't break your teeth when it dries. It has the most delicious taste and texture and makes decorating sugar cookies fun and simple. Use this traditional royal icing recipe for both flooding and outlining your sugar cookies.

- Watch the video of the icing above so you get an idea of what the final consistency should be.
- Pour confectioners' sugar, meringue powder, and 9 Tablespoons of water into a large bowl. Using a hand mixer or a stand mixer fitted with a whisk attachment, beat icing ingredients together on high speed for 1.5 - 2 minutes. When lifting the whisk up off the icing, the icing should drizzle down and smooth out within 5-10 seconds. If it's too thick, beat in more water 1 Tablespoon at a time. I usually need 10 Tablespoons but on particularly dry days, I use up to 12-14 Tablespoons. Keep in mind that the longer you beat the royal icing, the thicker it becomes. If your royal icing is too thin, just keep beating it to introduce more air OR you can add more confectioners' sugar.
- When applied to cookies or confections in a thin layer, icing completely dries in about 2 hours at room temperature. If icing consistency is too thin and runny, it will take longer to dry. If the icing is applied very thick on cookies, it will also take longer to dry. If you're layering royal icing onto cookies for specific designs and need it to set quickly, place cookies in the refrigerator to help speed it up. - Add the cornstarch to the bowl - Substitute with rice or potato flour if desired.
- Add the Water and Honey - Add water to the cornstarch, mix together, then add the honey. Thoroughly combine the mix with a whisk and add more water if needed. The icing will likely seem a bit thin at first, but it will harden.
- Add Food Coloring - Add food coloring to the icing if desired. Add the icing to separate bowls and add different colors, mixing thoroughly. Be sure the food coloring you use is dog-friendly.
- This icing will harden, making it great to decorate your dog's favorite biscuits. Adding some food coloring will allow you to make adorable different decorations for your pooch.
ROYAL ICING FOR MARSHMALLOW TREATS
Use this recipe to decorate our Sugar-Coated Marshmallow Bunnies and Chicks, Chocolate-Coated Marshmallow Chicks, and Flat Marshmallow Shapes. While not in use, the tip of the icing bag should be wrapped in a damp paper towel -- icing hardens quickly when exposed to air.

- In the bowl of an electric mixer fitted with the paddle attachment, combine confectioners' sugar and meringue powder with scant 1/4 cup water on low speed. Mix until fluffy yet dense, 10 to 15 minutes.
- Color the icing as needed starting with a small amount of gel food coloring.Transfer to a small pastry bag fitted with a 1/32-inch pastry tip (#1 Ateco).
- If making marshmallow treats, pipe faces as desired, or pipe eyes on both sides of coated chicks and two eyes and a nose on bunnies. Pipe one eye on flat bunnies and chicks. Store the royal icing in an airtight container up to a week, and stir before using.
