Steak Pizzaiola Recipe image

For an absolutely delicious easy to make weeknight meal, look no further than this steak pizzaiola recipe that is absolutely delicious.

Provided by Chef Billy Parisi

Categories     Main     Main Course

Number Of Ingredients 8

2 8- ounce striploin or sirloin steaks cut in half width-wise.
3 tablespoons olive oil
1 peeled small diced yellow onion
4 finely minced cloves of garlic
¾ cup pinot grigio (optional)
10-12 peeled (seeded and roughly chopped fresh vine ripe tomatoes (or 2-28 ounce cans San Marzano tomatoes))
1 tablespoon fresh oregano
sea salt and pepper to taste

Steps:

  • Place the sliced steak in between 2 pieces of plastic wrap or butchers' paper and pound using a mallet until it is half as thick as the original slice. Season with salt and pepper on both sides.
  • Add olive oil to a large frying pan or rondeau pot over medium heat.
  • Once the oil begins to lightly smoke add in the steaks and cook for 2 to 2 ½ minutes per side or until browned. You may have to do this in batches depending on how big the pan is. Remove the steak from the pan.
  • Add the onions and garlic to the pan and roast for 6-8 minutes or until browned.
  • Deglaze with wine and cook until most of it has been absorbed, there should be 2 to 3 tablespoons left in the pan.
  • Add in the tomatoes and stew over medium-low heat for 20 minutes or until the sauce is thick and the tomatoes have broken down. Season with salt and pepper.
  • Add the steaks to the top of the tomato sauce, place a lid on and cook for 5 to 6 minutes to warm the steak back up.
  • Finish by stirring in some fresh oregano and serve.

QUICK STEAK PIZZAIOLA

Quick Steak Pizzaiola image

Our quick version of pizzaiola is brimming with Italian flavors: tomatoes, mozzarella, and oregano. Serve it with a side of your favorite pasta.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Time 30m

Number Of Ingredients 7

4 small steaks, (each 6 ounces and 3/4 inch thick)
Coarse salt and ground pepper
1 tablespoon olive oil
4 cloves garlic, minced
1 can (28 ounces) diced tomatoes
1 tablespoon chopped fresh oregano, (or 1 teaspoon dried), plus more for garnish
2 ounces fresh mozzarella, cut into 1/4-inch cubes (1/3 cup)

Steps:

  • Generously season steaks on both sides with salt and pepper. Heat oil in a large skillet over high heat. Working in batches if needed to avoid crowding pan, add the steaks, and sear until browned, 1 to 2 minutes per side; transfer to a plate.
  • Reduce heat to medium; add garlic. Cook, stirring, until golden, about 1 minute. Add tomatoes and oregano. Cook over high heat until sauce is thickened, scraping up browned bits from bottom of pan with a wooden spoon, 8 to 10 minutes.
  • Return steaks and any accumulated juices from plate to skillet; cover, and cook until steaks are just heated through, 1 to 2 minutes. To serve, transfer steaks to plates, and top with sauce and mozzarella; garnish with more oregano.

CHEF JOHN'S STEAK PIZZAIOLA

Chef John's Steak Pizzaiola image

There are hundreds of ways to make pizzaiola, from versions featuring slowly braised tough cuts of beef to quickly seared tenderloin medallions, like I used here. The one thing most people agree on is that you should, if at all possible, use really fresh, very sweet, vine-ripened tomatoes. Serve on top of toasted bread with mozzarella cheese.

Provided by Chef John

Categories     World Cuisine Recipes     European     Italian

Time 40m

Yield 4

Number Of Ingredients 15

1 pound beef tenderloin steaks, cut into 4 medallions
salt and pepper to taste
1 tablespoon olive oil
1 cup sliced fresh mushrooms
2 teaspoons butter
1 pinch salt
1 cup sliced sweet and hot peppers
4 cloves garlic, crushed
½ cup white wine
¼ teaspoon dried oregano
1 cup tomato concasse (see footnote for recipe link)
2 tablespoons chopped fresh oregano
1 teaspoon balsamic vinegar
1 pinch red pepper flakes
1 pinch salt and ground black pepper to taste

Steps:

  • Season steak medallions with salt and black pepper on both sides.
  • Heat olive oil in a large skillet over high heat. Add steaks and cook until browned, about 2 minutes per side. Transfer to a plate. Reserve oil in skillet.
  • Place mushrooms and butter into the skillet and season with salt; cook and stir until mushrooms are softened and beginning to brown, 5 to 6 minutes. Reduce heat to medium; add peppers and cook and stir until softened, about 2 minutes. Stir in garlic and cook for 1 minute. Pour in wine and sprinkle in dried oregano. Increase heat to medium-high and cook until the wine is nearly evaporated, about 3 minutes.
  • Stir tomato concasse into the mushroom mixture and simmer until tomato is softened, 3 to 4 minutes. Add fresh oregano, balsamic vinegar, and red pepper flakes; stir to combine. Adjust salt and black pepper to taste.
  • Place steaks back into the skillet with the mushroom mixture and cook until warmed through and cooked to desired doneness, 4 to 10 minutes.

STEAK PIZZAIOLA

Steak Pizzaiola image

Drawing inspiration from a Neapolitan classic, we simmer steak in a tomato-based sauce flavored with peppers and onions for a hearty one-pot meal.

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 12

1 1/4 pounds boneless sirloin steak (about 1 inch thick), excess fat trimmed
Kosher salt
2 tablespoons extra-virgin olive oil
4 cloves garlic, smashed
1 large onion, sliced 1/4 inch thick
2 bell peppers (1 red, 1 yellow), sliced 1/2 inch thick
4 jarred pepperoncini, drained and thinly sliced
1 15-ounce can crushed tomatoes
1/2 teaspoon dried oregano
Pinch of red pepper flakes
2 tablespoons chopped fresh parsley
Focaccia, for serving (optional)

Steps:

  • Sprinkle the steak all over with 1/4 teaspoon salt. Heat the olive oil in a large skillet over medium-high heat. Add the steak and sear until browned, about 2 minutes per side. Transfer to a plate. Add the garlic to the skillet. Once it sizzles, add the onion and bell peppers and cook, stirring occasionally, until they soften slightly, about 4 minutes. Add the pepperoncini, tomatoes, oregano, red pepper flakes and 3/4 cup water and stir to combine. Bring to a rapid simmer, then nestle the steak in the sauce and simmer, turning once, until medium rare, about 7 minutes.
  • Transfer the steak to a cutting board and let rest about 5 minutes. Continue simmering the sauce until thickened, about 3 more minutes. Thinly slice the steak against the grain and divide among plates. Top with the sauce and parsley. Serve with focaccia.

BEEF OR VEAL ALLA PIZZAIOLA

Beef or Veal alla Pizzaiola image

This is a flavorful recipe for less tender cuts of beef or veal. I usually prepare this dish using beef chuck steak, beef round steak or veal chops. This can be cooked either on top of the stove or in the oven.

Provided by Dee514

Categories     Veal

Time 2h10m

Yield 4 serving(s)

Number Of Ingredients 11

2 lbs beef round steak or 2 lbs veal chops, cut 1 1/2 inches thick
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
2 cloves garlic, chopped
1 tablespoon chopped fresh Italian parsley, leaves only (the flat kind)
1 -2 teaspoon oregano
1 small onion, sliced (optional)
1/2-1 cup fresh small white button mushrooms (optional)
1/2-1 green pepper, seeded and cut into chunks (optional)
1 (20 ounce) can Italian plum tomatoes, unseasoned

Steps:

  • Coat the bottom of a large pan with olive oil.
  • Using your hands, crush the canned tomatoes and add about half of them to the bottom of the pan.
  • Add half of the salt, pepper, garlic, parsley, oregano and onions to the pan (only add the mushrooms to the top layer).
  • Place the meat on top of this mixture.
  • Cover the meat with remaining crushed tomatoes, salt, pepper, garlic, parsley, oregano, mushrooms and onions.
  • Cover pan tightly and cook over a low flame for about 1 1/2 to 2 hours (until meat is tender).
  • Add the green peppers to the pan for the last 15 minutes of cooking time.
  • To prepare this in the oven instead of stove top, use a shallow roasting pan, (follow above directions), cover pan tightly and bake at 325°-350°F for 1 1/2 to 2 hours (until meat is tender).
  • Serve with potatoes or rice and a green salad.

  • Pat steaks dry with paper towels. Season both sides of steaks generously with salt and pepper.
  • In a 12 inch cast iron skillet, heat 2 tablespoon oil, over medium-high heat, just until smoking. Add half the steaks and sear, about 3 minutes per side. Repeat with remaining steaks. Transfer steaks to plate and set aside.
  • Carefully wipe out most of the oil from the skillet (I used paper towels, gripped with long-handled tongs) leaving the brown bits in the bottom of the pan. Add 1 Tablespoon oil, onions, mushrooms, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to the skillet and saute until the onions are soft, 8-10 minutes. Add the garlic, dried Italian seasoning, and the sun-dried tomatoes and continue to cook for 1 minute. Stir in balsamic vinegar, scraping up any brown bits on the bottom of the skillet, and cook until most of the vinegar evaporated. Add crushed tomatoes, roasted red peppers, and water. Bring to a rapid simmer, then nestle the steaks in the sauce and continue to simmer, turning the steaks once, 5-7 minutes. Remove the steaks to a cutting board and allow to rest 5 minutes. Continue to simmer the sauce until it thickens a bit, about 3-5 minutes.
  • Place the whole steak on plates or thinly slice the steaks against the grain, and divide among plates. Top with the sauce, a sprinkle of shaved Parmesan and julienned basil and serve.
