FALL FIGS STUFFED WITH STILTON CHEESE, WRAPPED IN PROSCIUTTO AND CHATEAU ELAN PORT WINE SYRUP

Steps:
- Cut figs into quarters and place them in a saucepot with the port wine and bring to boil, simmer and reduce by 2/3. You should have a little less than a 1/4 cup of port at a syrup consistency. Allow the port syrup to cool.
- On a cutting board, tear thin slices of prosciutto lengthwise in half and place 16 pieces on the board. Take a piece of fig and place it at 1 end of the prosciutto and place a small piece of Stilton cheese on top of the fig and roll the fig with the prosciutto. Continue this process with the remaining figs, Stilton cheese, and prosciutto.
- To serve, arrange the figs on a platter and drizzle with the port wine syrup.

- Lay prosciutto onto a work surface. Place 1 fig on the end of each prosciutto slice. Spread a thin layer goat cheese onto each fig. Roll prosciutto around each fig; arrange on a baking sheet.
- Bake in the preheated oven until prosciutto is crisp, 3 to 4 minutes.

- Preheat oven to 375°F.
- Slice 12 ½-inch slices of bread from the baguette. Place on a baking sheet, and brush generously with the olive oil. Sprinkle a little salt if desired on each slice.
- Bake for about 10 mins, or until crisp and slightly golden. Remove from oven and cool slightly.
- Spread goat cheese on each crostini. Spread about a tablespoon of Bonne Maman Fig Preserves on top of the goat cheese.
- Fold the slices of prosciutto neatly and place on top of each crostini.
- Lay fresh arugula leaves on top of each crostini to taste.

- Preheat oven to 350 degrees F (175 degrees C). Spread 1 tablespoon olive oil on a baking sheet.
- Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir shallots until translucent, about 3 minutes. Stir garlic, thyme, salt, and pepper into shallots; cook and stir until fragrant, about 2 minutes. Transfer shallot mixture to a bowl; stir in goat cheese, mozzarella cheese, cream cheese, figs, and basil until well combined.
- Pound each chicken breast on a work surface until thin. Spoon about 1/4 cup goat cheese mixture onto the middle of each piece of chicken. Roll chicken around the filling and wrap 2 pieces prosciutto around each chicken roll, covering the opening with 1 layer of prosciutto. Place chicken rolls onto the prepared baking sheet, seam-side down.
- Bake in the preheated oven for 20 minutes; turn chicken and continue baking until chicken is no longer pink in the center and prosciutto is crisp, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Let chicken stand for 5 minutes before serving.

- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper; set aside.
- Cut a small hole in the center of the flesh of each fig. Fill each hole with 1/4 teaspoon of goat cheese.
- Take a prosciutto slice and tear in half. Use 1 half to diagonally wrap around the fig, starting from the top. Tuck underneath at the ends. Repeat until all figs are wrapped. (Secure with toothpicks if necessary.) Place wrapped figs on prepared baking sheet, evenly spaced.
- In a small bowl, combine honey and pumpkin pie spice. Drizzle honey evenly over each fig.
- Place in the oven on the top rack and roast for 8 to 10 minutes. Remove and serve immediately.

- Mix goat cheese, parsley and garlic together in a bowl until well blended. Place about 2 teaspoons of the mixture on each prosciutto slice. Fold the sides of each slice over cheese then fold one end over, forming a roll. Arrange the rolls on a plate and sprinkle with olive oil, lemon juice and pepper to taste. Serve at room temperature. GRILLED FIGS WITH GOAT CHEESE AND PROSCIUTTO

- Combine goat cheese, rosemary, and a pinch of salt and pepper in a small mixing bowl, and stir.
- Make a small slit in bottom or side of each fig. Fill a pastry bag fitted with a small plain tip with cheese mixture. Pipe cheese into each fig through slit. Fill figs with just enough cheese so they expand slightly.
- Tear or cut the prosciutto slices into long strips. Wrap a strip of prosciutto around each fig, and skewer 4 figs on each rosemary sprig. Brush figs with olive oil, and season with salt and pepper.
- Place figs on a moderately hot grill, rotating skewers until figs are very hot and cheese starts to ooze, about 6 minutes. Remove from grill; serve immediately with a drizzle of olive oil and good bread.
ROULADE OF PROSCIUTTO, FIGS, STILTON, AND GOAT CHEESES WITH PORT GLAZE

- Blend all cheeses till smooth. Place plastic wrap on work surface. Arrange prosciutto to form 8X10-inch rectangle and overlapping slices slightly. Carefully spread cheese mixture over prosciutto leaving 1/2-inch border on sides. Season with pepper. Drain figs; reserve Port. Finely chop figs and sprinkle over cheese. Roll prosciutto up tightly beginning at one long side. Wrap in plastic and refrigerate till firm, about 4 hours. (Can be prepared 1 day ahead.) Bring reserved Port to boil. Reduce heat and simmer till thick, syrupy and reduced to 1/3 cup, about 15 minutes. Cool to room temperature. Remove wrap. Slice into 18 rounds. Place three rounds on each plate. Drizzle rounds with glaze. Garnish with quartered figs.

- Cut each fig in half lengthwise. Note: I like to leave the stem on as a handle but you’re welcome to cut that off as well.
- Cut each slice of prosciutto in half lengthwise as well. Place 1/2-1 tsp of goat cheese (depending on the size of the fig) in the center of the fig.
- Wrap the fig with half a slice of prosciutto and place it cut side up on the baking sheet. Repeat with the remaining figs.
