ROU JIA MO (SPICY PORK SANDWICHES)
This sandwich is a speciality of Shaan-xi Province in China. I have modified this to use pork rather than the lamb which would be traditional. The filling would also make a great filling for Steamed Buns unstead of the Chinese Barbequed Pork tradtionally used.

Steps:
- Heat oven to 375°F.
- Cook sausage into ground bits and drain grease.
- While pork is cooking, chop onions and garlic. Add to sausage.
- Add white wine and vinegar. Add sugar. Stir well.
- Add chili oil and Peppercorns. Stir well.
- Once most of liquid has been absorbed by meat, prepare dough.
- Separate dough into 8 biscuits. Press or roll each into 6-inch round.
- Divide filling evenly onto half of each biscuit round to within 1/4 inch of edge.
- Fold dough round over filling; press edges to seal. Place on ungreased cookie sheet.
- Bake 15 to 20 minutes or until edges are golden brown.
- Immediately remove sandwiches from cookie sheet. Serve warm or cool down and serve later cold.

- Keep the pork belly whole, or cut it into large, 4- to 5-inch chunks. Place the pork belly in a medium pot, and fill it with just enough water to cover it. Bring the water to a boil. Once the pork has gone opaque and appears cooked on the outside, shut off the heat, remove the pork from the pot, and rinse it clean under running water. Dump out the water and clean the pot.
- Put the pork belly back in the clean pot, and add 3 cups of water, the Shaoxing wine, rock sugar, light soy sauce, dark soy sauce, scallions, ginger, star anise, cinnamon, black cardamom, galangal, Sichuan peppercorns, and bay leaves. Bring everything to a boil, then immediately turn down the heat to low and simmer for 90 minutes to 2 hours, until fork tender. To test it, stick a fork into the meat. It’s done if you can pull the fork out easily. Do not use high heat when simmering to avoid drying out the sauce. Add salt to taste.
- While the pork is simmering, make the buns. To a mixing bowl, add the flour, yeast, and salt. Slowly add the warm water, mixing and kneading until it forms a smooth dough ball. Once a dough ball is formed, knead it for another 10 minutes to build up the gluten in the dough--this will make the buns chewier. You can also use an electric mixer with the dough hook attachment for this. The dough should feel soft and easy to work with. Cover the dough, and let it proof at room temperature for about an hour until it doubles in size.
- After proofing, knead the dough for about 5 minutes to get rid of any air bubbles. Divide the dough into 12 equal pieces. Cover the dough balls with a kitchen towel to prevent them from drying out while you’re shaping the buns.

- Place pork belly in a 5.5-quart dutch oven and add cold water to cover the pork by 1 inch (2 cm). Bring to a boil over medium-high heat. Turn to medium low heat and boil for 10 minutes. Skim the broth with a fine mesh strainer to get rid of the foam.
- Add chili peppers, cloves, nutmeg, star anise, cinnamon, ginger, green onion, and Shaoxing wine. Bring to a boil over medium-high heat, then turn to lowest heat and simmer, covered, for 30 minutes.
- Add light soy sauce, dark soy sauce, sugar, and salt into the pot and stir to mix well. Continue to simmer, covered, for an additional 1 hour. Skim off the oil from the top by using a fine mesh strainer.
- Uncover, and continue to simmer for another hour or so, until the broth is reduced to about one fourth and has thickened slightly. Keep an eye on the pork during the last 30 minutes, because the broth can reduce very fast at the end and burn the bottom. You should have at least 1 cup of broth in the pot after reducing, in order to assemble the pork buns.

- Cut pork belly into small pieces. Load wok with a large pot of water, add ginger, Sichuan peppercorn and cooking wine, cook the pork belly for 2-3 minutes after boils. Transfer out and drain.
- Mix yeast with water and set aside for 5 minutes. Add salt and oil to flour and then pour yeast water in. Mix and knead the dough until smooth. Cover with a wet cloth or plastic wrap to rest for around 15 minutes to 30 minutes depending on your temperature until the dough is 1/3 bigger than the previous one. (this is just a semi fermented dough).
- Transfer the meat out and finely minced. If you like, you can add chopped coriander and cumin powder.
