Try my chicken club wrap, which is a classic chicken club sandwich that gets transformed into a delicious chicken wrap. Salty bacon, tender chicken, lettuce, tomatoes, and a mexi-ranch that is to die for.

1 pound chicken tenderloins or breast (cut up into small pieces)
8-10 slices of bacon (cooked)
2 to matoes (sliced thin)
6-8 lettuce leaves (washed)
6-8 to rtillas (I used sundried tomato flavored tortillas)
1 packet of homemade ranch dress (plus ingredients to make it)
1 cup prepared salsa
2 cups shredded cheese
1 teaspoon oil
1 tablespoon Kansas City Seasoning (or another seasoning for chicken)

Steps:

  • Start by cooking your chicken and bacon. I did my bacon in the oven and chicken on the stove. For the bacon, I did 400 degrees and laid it out on a baking sheet wrapped in aluminum foil, cooked till bacon was done.
  • For the chicken I diced it up and placed 1 teaspoon oil in a skillet and tossed in my raw chicken, and the Kansas City Seasoning. Cook until the chicken is fully cooked.
  • For the mexi ranch I made the ranch dressing as to what followed on the back of the package. Once done I stirred in 1 cup salsa.
  • To assemble the wraps, layout lettuce leaf, tomatoes, chicken, a slice or two of bacon, shredded cheese, and a drizzle of mexi ranch.
  • Roll up the wrap tightly like a burrito, slice, and serve with more mexi-ranch on the side for dipping.
  • These chicken club wraps are so easy to make and are bursting with flavor.

2 tablespoons mayonnaise

Steps:

  • Lay a tortilla on a cutting board in front of you. Spread 1 tablespoon of mayo in the center of the tortilla. Add 1/2 cup lettuce, a few tomato slices, 1/2 avocado, about 3 ounces of chicken, and 2 slices of bacon. Fold in the sides and roll up. Repeat with the remaining ingredients. Slice the tortilla in half and serve.

I got hooked so I watched closely and finally made my own version at home; they are so delicious! ½ cup plain yogurt
2 chipotle chiles in adobo sauce, finely chopped
2 large spinach tortillas

4 slices cooked bacon, chopped
1 red onion, finely chopped

Steps:

  • Whisk mayonnaise, yogurt, and chipotle chiles together in a bowl.
  • Cook tortillas in the microwave until warm and pliable, about 30 seconds.
  • Spread 1 tablespoon chipotle mayonnaise down the center of each tortilla. 8 slices thick-cut bacon, crisply cooked and crumbled
1 large tomato, seeded and small diced
2 cups bite-size pieces iceberg lettuce
1 1/2 cups shredded cheddar cheese
1/3 cup mayonnaise, or to taste
6 (8-inch) flour tortillas
Prepared guacamole, optional

Steps:

  • Place chicken, bacon, tomato, lettuce, and cheese in a mixing bowl; add mayo and lightly toss ingredients together. Slightly warm flour tortillas according to package directions. If using guac, spread about 2 tablespoons in a line down the center of a tortilla. Spoon 1/6 of the chicken mixture down the center of each tortilla. Fold up bottom third of tortilla over the filling then roll sides up and secure with a toothpick on top. Serve immediately.

½ teaspoon freshly ground pepper, divided
3 tablespoons nonfat plain Greek yogurt
3 tablespoons cider vinegar
3 tablespoons minced onion

Steps:

  • Preheat grill to medium-high.
  • Sprinkle chicken on both sides with 1/4 teaspoon pepper. Oil the grill rack (see Tip). Grill the chicken, turning once or twice, until an instant-read thermometer inserted into the thickest part registers 165 degrees F, 15 to 18 minutes. Transfer to a clean cutting board and let cool for about 5 minutes.

1/4 cup Hidden Valley® Simply Ranch dressing
1/2 cup mozzarella cheese
1/4 cup cilantro (minced (optional))
4 8 '' tortillas

Steps:

  • Lay tortillas on a clean flat surface. Place about 1/2 cup chicken, 1 tablespoon ranch, 2 tablespoons of cheese, and 1 tablespoon of minced cilantro on each tortilla. Fold tightly to form a burrito shape.
  • Heat a heavy-duty pan or grill to medium heat. Coat with a light layer or oil or cooking spray and cook wraps for 1-2 minutes on each side or until the tortilla is crispy and golden. Remove from heat, slice in half and serve immediately.

8 slices bacon
2 cups shredded chicken
salt and pepper
1 mango, finely chopped
6 tablespoons mayonnaise, divided
2 tablespoons fresh lime juice
1 large avocado, or 2 small
4 large whole wheat or spinach tortillas (10-inch)
2 cups shredded romaine
1 large tomato, diced

Steps:

  • Place the bacon in a large skillet and cook until crisp. Transfer to a paper towel lined plate and set aside.
  • Place the chicken in a large bowl and season with salt and pepper. Add the mango, 3 tablespoons of the mayonnaise and the lime juice.
  • Remove the pit and skin from the avocado and place in another bowl. Roughly mash, season with salt and pepper, then stir in the remaining 3 tablespoons of mayonnaise.
  • Lay a tortilla on a work surface and spread 1/4 of the avocado mixture over the tortilla, leaving a 1-inch border. Layer 1/4 of the lettuce down the center, followed by 1/4 of the tomato, 2 slices of bacon, then 1/4 of the chicken mixture. Fold in the 2 sides of the tortilla, then roll up like a burrito.
  • Repeat with the remaining tortillas and ingredients.
  • Cut each wrap in half before serving.

1 (2 1/2 pound) rotisserie chicken, skin and bones discarded, meat removed and chopped into bite-sized pieces
4 (10 inch) flour tortillas
4 slices Swiss cheese
4 slices tomato
2 leaves romaine lettuce
8 slices bacon, cooked until crispy and crumbled
GARLIC MAYONNAISE
3/4 cup mayonnaise
3 garlic cloves, minced
2 1/2 tablespoons lemon juice
3/4 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • In a small bowl mix together mayonnaise, garlic, lemon juice, salt and pepper. Cover and refrigerate for at least 30 minutes before using. Spread a thin layer of garlic mayonnaise down the center of a tortilla, leaving about 1 to 2 inches from the sides without sauce. Place a slice of Swiss cheese in the center of the sauce. Place 1/4 of the steak on the top of the cheese. Place some of the crumbled bacon over the chicken and place 1/2 of a romaine lettuce leaf and 1 tomato slice over the bacon. Bring the sides toward the center of the filling. Fold the bottom of the tortilla over the filling and continue to roll until the wrap closes. Repeat with remaining tortillas.

PERFECT CHICKEN (OR TURKEY) POT PIE

Nothing says "comfort food" like just-out-of-the-oven chicken pot pie on a cold evening. I have tweaked this recipe for several years before it became perfect (at least according to my standards, which are pretty high) :). This makes one pie, you can double, or I like to use smaller ramekins for individual pot pies. Kid pleaser. :) This recipe is a little labor intensive, but for the perfect pot pie, it is worth it!

1/2 - rotisserie chicken, deboned, deskinned (a good rotisserie chicken makes all the difference) or leftover turkey
1 cup(s) carrots, sliced
1 - leek, chopped
1 cup(s) frozen green peas
1/2 cup(s) butter
2/3 cup(s) all purpose flour
2 1/2 cup(s) chicken broth
1/3 cup(s) half and half
1/3 cup(s) apple juice (trust me on this and pour in that apple juice!)
1 teaspoon(s) salt
1 teaspoon(s) poultry seasoning
- ground pepper to taste
1 - egg, beaten
1 - pie crust, homemade preferred, but any refrigerated crust will work

Steps:

  • Find your favorite pie crust recipe. I highly recommend a homemade crust, but if you're pie-crust challenged, a store-bought will do. ;) I make my pie crust a day ahead and keep in fridge till I'm ready. If you're making a double crust pie, go ahead and roll out your bottom crust and place in your baking dish. Cover well with plastic wrap and keep in fridge up to one day prior to use. I leave the top crust in a ball, wrapped in plastic wrap and take out while I'm cooking the rest of the ingredients. Roll out the top crust when you're ready to use it. Do not cook the crust beforehand.
  • Preheat oven to 425 degrees. In a large saucepan, toss in your frozen peas and sliced carrots. Pour the chicken broth over them and cook on high heat. Cover when it comes to a boil, and cook for about 10-12 minutes on medium-high or until carrots are tender (not mushy!) Don't throw out that broth when veggies are done!
  • While the vegetables are cooking, shred your rotisserie chicken or turkey. Chop your leeks. When the veggies are done, strain your liquid from your veggies into a bowl (SAVE your chicken broth!)
  • In the same saucepan cook the leeks in the butter over medium heat, stirring occasionally until leeks are slightly soft, and butter has started to brown. Whisk in the flour, salt, a little pepper, and poultry seasoning. Add the chicken broth, half and half, and apple juice VERY slowly, whisking the whole time over medium-high heat. Reduce heat to medium-low and cook at least 10 minutes until you have a very thick gravy. Make sure your filling is thick or you'll end up with chicken soup instead of chicken pot pie! Reduce heat to low.
  • Add your shredded chicken or turkey and your cooked vegetables. Stir around and remove from heat.
  • Pour pot pie mixture into your bottom crust (if making double crust pie) or into your baking dish of choice. Top with your pie crust, and cut 3 slits in the top. With a pastry brush, brush crust and edges with beaten egg. (Don't have a pastry brush? Leafy greens make a good makeshift brush, or just use a bunched up paper towel dabbed in the egg wash and blot it on the pie.) Bake in preheated oven for 35 minutes or until crust is a golden brown. Makes great leftovers!
  • Enjoy! I serve with applesauce on the side.
