STRAWBERRIES IN RED WINE



Strawberries in Red Wine image

This is a very simple, but quite wonderful dessert, best made with sweet, ripe, fragrant berries, which complements the tannins of red wine. Let the strawberries macerate in wine for up to 1 hour, but no more or they'll be unpleasantly soggy. (It's fine to prepare and sugar them in advance.)

1 pound strawberries, preferably organic, hulled and halved, or left whole if small
2 tablespoons granulated sugar
1 tablespoon lemon juice (from 1 small lemon)
2 cups dry red wine

Steps:

  • Place strawberries in a medium bowl. Sprinkle with sugar and lemon juice, and toss to coat.
  • Add the wine and let macerate for 45 minutes or up to 1 hour.
  • Spoon berries and wine into wide dessert glasses (or low soup plates). Serve at cool room temperature.

about half a bottle of rosé wine
4 tbsp cassis
4 sprigs mint
icing sugar , for dusting
crisp buttery biscuits , to serve

Steps:

  • Halve any strawberries that are larger than a mouthful. Divide between 4 wine glasses and pour over the wine and cassis. Tuck a mint sprig into each glass. Leave to soak for up to 1 hr, then dust each with icing sugar and serve with crisp biscuits.

2 cups fruity red wine such as Santa Maddalena, Barbera, Valpolicella, Merlot, or Zinfandel
1 teaspoon fresh lemon juice
About 1/2 cup sugar
1 lb strawberries (2 pt), trimmed, and halved if large

Steps:

  • Stir together wine, lemon juice, and sugar (to taste) in a bowl. Stir in strawberries and let macerate at room temperature 1 hour, then chill until cold, up to 1 hour but no longer. (Fruit will become too soft if it steeps for more than 2 hours.)
  • Serve berries in small bowls with some of their juices.

1 small orange
1 small lemon
1/4 cup dry white or rose wine
1/4 cup pure maple syrup
2 quarts strawberries, hulled and halved (6 cups)
2 star-anise pods

Steps:

  • Preheat oven to 350 degrees. Peel three 2-inch-long strips of zest each from orange and lemon, then juice both (you should have 1/4 cup juice total). Stir wine and maple syrup into juice. Place strawberries in a 9-by-13-inch baking dish. Add juice mixture, zest strips, and star anise; stir to combine. Roast, stirring once, until sauce is slightly syrupy and strawberries turn bright red, 1 hour, 20 minutes to 1 hour, 30 minutes. Let cool completely. (Strawberries can be refrigerated in an airtight container up to 3 days.)

A favourite "grown-up" summery and romantic dessert in our home! Summer berries - raspberries and strawberries, steeped in Rosé wine with a little sugar. Great by themselves or with whipped cream or crème fraiche. So easy to make - and they work better if made up to 48 hours beforehand. These berries are stunning if used in trifles or fruit fools! Please adjust the sugar to your personal taste and also according to the sweetness of the fruit.

750 ml rose wine
2 -4 tablespoons sugar, depending on sweetness of fruit
400 g fresh hulled strawberries
400 g fresh raspberries
cream (optional)
creme fraiche (optional)

Steps:

  • Pour the bottle of wine into a large bowl - add the sugar, and stir to dissolve.
  • Add the berries and mix thoroughly - but gently as not to bruise them or break them.
  • Cover and store in the fridge for 12 to 48 hours.
  • When you are ready to serve them, spoon the berries into a large wine glass or a parfait/pudding glass or bowl.
  • Pour the sugared wine over the top and serve straight away, with whipped cream or creme fraiche. Ice cream is also good with this dessert.
  • These berries can also be served with shortbreads or cake - and are amazing in trifles!

1/2 cup seedless raspberry jam
1 cup Beaujolais or another light, fruity red wine
3 cups ripe strawberries
Sprigs of herbs (basil, sage, savory or mint) for decoration, if desired Cookies, if desired

Steps:

  • Mix the jam and red wine together in a bowl.
  • Wash and hull the berries. Cut the smaller ones in half; quarter the larger ones. Add the berries to the bowl and mix gently but thoroughly.
  • Cover the bowl with plastic wrap, arranging the wrap so it touches the berries and helps keep them submerged in the wine mixture. Refrigerate until cold.
  • Serve the berries and surrounding liquid in wine goblets. If desired, garnish with herb sprigs and serve with cookies.
