I found this recipe in my Campbell cookbook cooking with soup. I love this cookbook. The cookies were very moist and good. They had a nip of spice taste to them and were a hit with my hubby.

Number Of Ingredients 12

1 1/2 cup(s) flour
1 1/3 cup(s) sugar
1 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
2 teaspoon(s) cinnamon
1 teaspoon(s) allspice, ground
1 cup(s) shortening
1 - egg
1 can(s) condensed tomato soup
2 cup(s) uncooked rolled oats
1 cup(s) seedless raisins
1 cup(s) chopped walnuts

Steps:

  • Preheat oven to 350 degrees. Sift dry ingredients except oats, raisins and walnuts. In mixer add shortening, egg, and soup. Beat at medium speed for 2 minutes, scraping sides and bottom of bowl constantly. Stir in oats, raisins, and walnuts.
  • Drop by rounded spoonfuls onto ungreased cookie sheets. Bake about 15 minutes until lightly browned.

My mother gave me this recipe, but I am unsure as to where she got it from. This recipe makes a LOT of cookies. The pinkish colour is very appealing. Great for school bake sales. The not so sweet taste is also good for adults. Don't make if you are allergic to tomatoes.

1 3/4 cups flour
1 1/3 cups sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon allspice
1 cup butter
1 egg
1 can tomato soup
2 1/2 cups rolled oats
1 cup raisins

Steps:

  • In a large bowl, stir together the flour, sugar, baking powder, baking soda, cinnamon and allspice.
  • Add butter, egg and soup.
  • Beat at medium speed for 2 minutes, constantly scraping sides of bowl.
  • Stir in oats and raisins.
  • Drop by teaspoon on greased baking sheets (or parchment lined sheets).
  • Bake at 350F for 9-11 minutes.

1½ cups brown sugar
1 cup butter, (softened)
3 eggs
1 teaspoon pure vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup raisins
1 cup walnuts

Steps:

  • Preheat your oven to 350 degrees
  • In a large bowl, cream together the softened butter and the brown sugar.
  • Add the eggs and vanilla to the butter and sugar mixture and stir to combine.
  • Add the flour, baking powder, baking soda, and cinnamon to the mixing bowl and stir well to incorporate all the ingredients.
  • Add the walnuts and raisins and mix well.
  • Drop the batter by tablespoons onto a parchment lined baking sheet, and bake in a preheated oven for 15-17 minutes.
  • Remove to a wire rack to cool.

MOM'S RAISIN ROCK COOKIES

This was my mom's favorite cookie recipe. In fact, I don't remember her making any other cookies (besides chocolate chip). I think the "rocks" are the walnuts. I'm totally guessing at the "time to make" and number of cookies it makes because I bake cookies even less frequently than Mom did. Please feel free to correct

Number Of Ingredients 11

2 cups seedless raisins
1 teaspoon baking soda
1 1/2 cups brown sugar
1 cup butter, softened
1 pinch salt
3 eggs
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla extract
3 cups flour
1 -1 1/2 cup chopped walnuts

Steps:

  • Put raisins in a large sauce pan. Add enough water to the pan to cover the raisins.
  • Simmer 5 minutes.
  • Remove from heat. Add baking soda to pan and let cool. Drain when cool.
  • Cream butter and sugar together.
  • Add salt, eggs, spices, vanilla, flour, walnuts, and drained raisins. Mix well.
  • Drop by rounded tablespoons on a greased baking sheet.
  • Bake at 400 degrees apx 12 minutes per batch.

Another Christmas staple in our house. This dough is very heavy, so make sure you use a stand mixer or electric mixer to make these cookies.

1 1/2 cups sugar
1 cup butter
3 large eggs, well beaten
3 cups flour, sifted
1 lb dates, chopped
1 lb walnuts, chopped
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 pinch salt
1 tablespoon hot water

Steps:

  • Cream together sugar, butter and eggs.
  • Add dry ingredients.
  • Add hot water.
  • Add dates and nuts.
  • Drop dough by teaspoonsful onto ungreased cookie sheets.
  • Bake in preheated 350°F oven until golden brown, 10-12 minutes.
