ICY HOLIDAY PUNCH

- In a 4-qt. freezer-proof container, dissolve gelatin and sugar in boiling water. Stir in pineapple juice and cold water. Cover and freeze overnight. Remove 2 hours before serving. Place in a punch bowl; stir in ginger ale just before serving.

- In a large container, mix together sugar, cranberry juice, pineapple juice and almond extract. Refrigerate for 1 day.

- Line a baking pan with parchment, place scoops of the sherbet in the pan and freeze until firm, 30 minutes.
- Place the frozen scoops of sherbet in a large punch bowl and add the cranberry juice and ginger ale; stir gently. Serve immediately.
ROSY MULLED PUNCHES
Part of the pleasure of these mulled punches is the aroma of sweet spices from the simmering pot, a pleasure that's repeated in the fragrant steam rising from each cup.

Steps:
- In small saucepan, combine all syrup ingredients; mix well. Cook over medium heat until mixture comes to a boil, stirring constantly. Reduce heat; simmer 10 minutes.
- Strain syrup. Cool slightly. Refrigerate syrup at least 3 hours or until serving time.
- At serving time, place half of prepared syrup (about 1 1/4 cups) in each of 2 large saucepans. To one add raspberry-cranberry drink. To the other add wine. Simmer each over low heat until thoroughly heated. Serve hot with cinnamon sticks and citrus twists, if desired.
