APPLE CIDER JELLY

It's not too sweet as less sugar is needed. I use the dark cider (or use your homemade cider) for more robust cider taste.

Yield 7-8 half pints

Number Of Ingredients 4

6 cups apple cider
4 cups sugar
1/2 teaspoon cinnamon
1 (1 3/4 ounce) box sure-jell dry sugar-free pectin

Steps:

  • In a small bowl, mix together 1/4 cup of the sugar and the powdered pectin. Set aside.
  • Pour the apple cider into a cooking pot.
  • Add the pectin/sugar mixture to juice in the cooking pot; Stir vigorously and well.
  • Bring mixture to full rolling boil stirring constantly.
  • Stir in remaining sugar and the cinnamon. Return to full rolling boil and boil for one-minute, stirring constantly.
  • Remove from heat. Skim off any foam.
  • Ladle into sterilized jars to within 1/8 inch of tops.
  • Seal and process five-minutes in boiling water bath.

Yield 6 half-pints.

Number Of Ingredients 4

1 quart unfiltered apple cider or juice
2/3 cup red hots candy
1 package (1-3/4 ounces) powdered fruit pectin
5 cups sugar

Steps:

  • In a Dutch oven, combine cider and red hots. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into six hot half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

OLD FASHIONED APPLE CIDER JELLY PIE

Number Of Ingredients 7

8 sheets phyllo dough
14 tablespoons butter, melted
3/4 cup chopped walnuts
2/3 cup maple sugar or firmly packed light or dark brown sugar
1 1/4 cups pure maple syrup
1 cup apple cider jelly or apple jelly
6 eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees. Butter 9-inch pie plate. Lay 1 sheet phyllo dough on clean surface. Place slightly damp kitchen towel over remaining dough to keep from drying out. With pastry brush, lightly brush with melted butter. Lay another sheet phyllo on top of buttered sheet, lightly butter. Repeat until all 8 layers are buttered, using 6 tablespoons of the butter. Place phyllo dough into the prepared pan, pressing it along bottom and sides. Trim the edges. Sprinkle walnuts over bottom of crust. In medium bowl beat together maple sugar, maple syrup, jelly, remaining 8 tablespoons butter, and eggs. Pour egg mixture over walnuts. Bake 40 to 45 minutes, or until filling is set. Serve chilled.

3 c apple cider
1 c cranberry juice
1 Tbsp lemon juice
1 pkg powered fruit pectin
5 c sugar
6 pt canning jars

Steps:

  • 1. In a large kettle, combine the first 4 ingredients. (apple cider, cranberry juice, lemon juice and powdered fruit pectin)
  • 2. Bring to rolling boil over heat, stirring constantly.
  • 3. Stir in sugar, return to a full rolling boil. Boil for 1 minute, stirring constantly.
  • 4. Remove from heat, skim off foam.
  • 5. Pour hot liquid into hot jars. Put lids and bands, and tightened.
  • 6. Process for 5 minutes in hot boiling bath.

2 oranges
2 quarts cranberry juice
4 three-inch cinnamon sticks
2 two-inch pieces fresh ginger, peeled and sliced lengthwise
Sugar, to taste

Steps:

  • With a vegetable peeler or a sharp knife, remove four 3-inch-long strips of peel from orange; set aside. Juice orange, and strain out pulp. In a medium stockpot, combine orange juice, reserved orange peel, cranberry juice, cinnamon sticks, and ginger. Taste, and add sugar if desired. Heat over medium-high heat until simmering. Reduce heat to low; simmer 20 minutes. Strain, and discard solids. Serve hot.

  • While the cider simmers and reduces, wash and rinse 4 8-ounce mason jars, rings, and fresh lids. Keep the jars and rings in a 200-degree oven until you're ready to use them, and the lids in a pot of barely simmering water until then.
  • If you're water bath canning your jelly, you'll want to get your canning pot ready and on for a boil now too.
