ROSIE'S ENCHILADA BAKE CASSEROLE image

This is a yummy casserole shared by a close friend years back. My son is grown and married now with a son of his own and he still asks for this casserole.

Number Of Ingredients 9

1 1/2 lb ground beef
1 can(s) cream of celery soup
1 can(s) cream of mushroom soup
1 can(s) green chili peppers (chopped)
1 c milk
1 can(s) enchilada sauce
1 pkg taco flavored doritos (crush in bag)
1 1/2 c grated cheese (your choice: cheddar, mexican blend, etc)
1 pkg taco seasoning mix

Steps:

  • 1. Preheat oven to 350 Degrees
  • 2. Brown ground beef with taco seasoning, drain. Stir in soups, peppers, milk, and enchilada sauce cooking until bubbly. In a prepared 9 X 13 baking dish layer meat, cheese, crushed Dorito chips and repeat for a second layer. Bake in 350 degree oven for 30 minutes.

1/2 cup all-purpose flour
1 teaspoon baking powder
12 large eggs, lightly beaten
4 cups shredded Monterey Jack cheese, divided
2 cups 4% cottage cheese
2 plum tomatoes, seeded and diced
1 can (4 ounces) chopped green chiles, drained
4 green onions, sliced
1/2 teaspoon hot pepper sauce
1 teaspoon dried oregano
2 tablespoons minced fresh cilantro
1/2 teaspoon salt
1/2 teaspoon pepper
Salsa, optional

Steps:

  • In a large bowl, combine the flour and baking powder. Add the eggs, 3-1/2 cups Monterey Jack cheese, cottage cheese, tomatoes, chiles, onions, hot pepper sauce, oregano, cilantro, salt and pepper. Pour into a greased 13x9-in. baking dish. Sprinkle with the remaining Monterey Jack cheese., Bake, uncovered, at 400° for 15 minutes. Reduce heat to 350°; bake 30 minutes longer or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting. Serve with salsa if desired.
