A light, nice sauce that is a perfect addition to Parmesan chicken instead of the typical marinara sauce. Also goes nicely over garlic mashed potatoes.

- Melt the butter in a small saucepan over medium heat. Stir in the shallot; cook until the shallot has softened and turned translucent, about 3 minutes. Pour in the wine, cream, chicken broth, and lemon juice. Simmer until the liquid has reduced by half, about 10 minutes. Stir in the rosemary, season to taste with salt.

- Take pan used to cook lamb or pork roast (not much juice please or reduce the stock to measure the 1/2 cup) Add garlic, rosemary, lemon juice, and stock to skillet and deglaze over high heat, stirring and scraping up brown bits, 1 minute.
- Whisk in butter.
- Pour sauce over pork or lamb.

- Reduce white wine to approximately 4 to 5 ounces by simmering.
- Add shallots and rosemary, and continue simmering, stirring occasionally.
- When the mixture has been reduced to approximately 1½ to 2 ounces, add heavy cream and further reduce to 4 ounces.
- Whisk in Dijon mustard.
- Serve immediately.
ROSEMARY DEMI-GLACE

- In a heavy bottomed saucepan, over medium-high heat, add the grapeseed oil. When the oil is hot add the onion and saute until translucent, 3 to 4 minutes, stirring throughout. Deglaze the pan with wine. Once the pan has been deglazed add the stock, tomatoes, rosemary, and parsley.
- Reduce the sauce until it is reduced by 40 percent, about 15 to 20 minutes. Once the sauce has reduced, remove from heat and pour through a chinois or cheesecloth into a bowl. Return the sauce to the pan and stir in butter to finish the sauce. Sauce can be held warm until serving or stored in a covered container in the refrigerator.
LAMB CHOPS WITH GARLIC-ROSEMARY SAUCE
Steps:
- Chop garlic. Pat lamb dry and season with salt and pepper. In a 12-inch heavy skillet heat oil over moderately high heat until hot but not smoking and sear lamb 3 minutes. Turn lamb over and sear 2 minutes more for medium-rare. Transfer lamb to 4 plates. Add garlic, rosemary, lemon juice, and stock to skillet and deglaze over high heat, stirring and scraping up brown bits, 1 minute. Whisk in butter. Pour sauce over lamb.
ROSEMARY APPLESAUCE
Steps:
- Heat the oven to 400 degrees. In a 9-by-13-inch baking dish, combine the apples, cider and rosemary. Roast uncovered until the apples are soft, 30 to 40 minutes, stirring once or twice. Remove from the oven.
- Add the sugar and mash the mixture roughly with a fork. Add more sugar if desired. Cool.

- Season the fish on both sides with salt and pepper. Lightly dredge it in the flour, shaking off the excess.
- Heat a medium nonstick skillet over medium-high heat until the pan is very hot. Add the olive oil. Place the fish in the skillet and cook for 2 minutes without moving the fillets. Turn and cook 2 more minutes, reducing heat if necessary to prevent browning. Pour off the fat and flip the fish again.
- Making room in the side of the pan, add the garlic and cook, stirring, for 10 to 15 seconds, being careful not to let it burn. Immediately add the wine, olives, and rosemary leaves and swirl them around in the pan as the wine reduces, about 1 1/2 minutes. Divide the fish between 2 warm serving plates. Swirl the butter into the sauce and pour the sauce evenly over the fish. Garnish with fresh rosemary sprigs and serve with lemon wedges.

- Roughly chop the garlic, then mash it to a paste with the blade of a chef's knife. Melt the butter in a saucepan over medium-low heat. Add the garlic and the rosemary and cook, stirring frequently, for 5 minutes.
- Add the wine and increase the heat so the wine comes to a boil. Cook until the wine is reduced to about 1/2 cup.
- Reduce the heat to medium and add the cream and the Glace de Poulet Gold®, stirring to dissolve the glace. Simmer the sauce until it reduces and thickens slightly, 15-20 minutes.
- Strain the sauce through a fine-mesh strainer, pressing on the solids with a spatula or wooden spoon. Return the sauce to the pan over low heat and season to taste with salt and pepper, nutmeg, and cayenne. Ladle the sauce over chicken and garnish with a sprig of fresh rosemary.
