1/2 cup confectioners' sugar
1 tablespoon unsalted butter, melted
1 teaspoon fresh lemon juice
1 1/2 teaspoons water
Pinch of coarse salt
1/2 cup plus 1 tablespoon unsalted butter, room temperature
6 teaspoons finely chopped fresh rosemary
3/4 cup plus 2 tablespoons quick-cooking polenta
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon coarse salt
1/2 cup extra-virgin olive oil
5 large eggs plus 2 large egg yolks, room temperature
1/2 teaspoon pure vanilla extract
1 1/3 cups granulated sugar

Steps:

  • Cake: Preheat oven to 350 degrees. Brush a 10-inch Bundt pan with 1 tablespoon butter. Sprinkle with 2 teaspoons rosemary and 2 tablespoons polenta; shake to coat.
  • Whisk together flour, baking powder, salt, and remaining 3/4 cup polenta and 4 teaspoons rosemary. In another bowl, whisk together oil, eggs, yolks, and vanilla.
  • Beat remaining 1/2 cup butter and the sugar on medium until pale and fluffy, about 3 minutes. Slowly beat in egg mixture until just combined. With mixer on low, add flour mixture in 3 batches; beat until just combined.
  • Pour batter into pan. Bake until golden and a toothpick comes out clean, 35 to 40 minutes. Let cool in pan 15 minutes, then turn out onto a wire rack to cool completely.
  • Glaze: Whisk together all ingredients until smooth. Drizzle glaze over cake. Cut into wedges; serve.

2 ¾ cups low-sodium chicken broth
2 cups water
1 ½ cups milk
3 cloves garlic, minced
1 ½ teaspoons chopped fresh rosemary
1 teaspoon salt
1 ½ cups yellow cornmeal
½ cup shredded Parmesan cheese, or more if desired
salt and black pepper to taste

Steps:

  • In a saucepan, bring to a boil the chicken broth, water, milk, garlic, rosemary, and salt. Gradually whisk in cornmeal, set heat to medium-low, and simmer the cornmeal mixture until thick and creamy, stirring often to prevent lumps, about 15 minutes. Remove from the heat, and stir in the Parmesan cheese until well combined.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart casserole. Spoon the polenta into the prepared casserole, adding more Parmesan cheese if desired. Sprinkle the top with salt and pepper.
  • Bake in the preheated oven until the polenta is bubbling and golden brown on top, about 30 minutes.

1/4 pound (1 stick) unsalted butter
1/4 cup olive oil
1 tablespoon minced garlic (3 cloves)
1 teaspoon crushed red pepper flakes
1 teaspoon minced fresh rosemary leaves
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 cups chicken stock, preferably homemade
2 cups half-and-half
2 cups milk
2 cups cornmeal
1/2 cup good grated Parmesan
Flour, olive oil, and butter, for frying

Steps:

  • Heat the butter and olive oil in a large saucepan. Add the garlic, red pepper flakes, rosemary, salt, and pepper and saute for 1 minute. Add the chicken stock, half-and-half, and milk and bring to a boil. Remove from the heat and slowly sprinkle the cornmeal into the hot milk while stirring constantly with a whisk. Cook over low heat, stirring constantly, for a few minutes, until thickened and bubbly. Off the heat, stir in the Parmesan. Pour into a 9 by 13 by 2-inch pan, smooth the top, and refrigerate until firm and cold.
  • Cut the chilled polenta into 12 squares, as you would with brownies. Lift each one out with a spatula and cut diagonally into triangles. Dust each triangle lightly in flour. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large saute pan and cook the triangles in batches over medium heat for 3 to 5 minutes, turning once, until browned on the outside and heated inside. Add more butter and oil, as needed. Serve immediately.

2 cups course ground cornmeal (polenta)
6 cups water or vegetable broth
1 teaspoon salt
3/4 cup grated Parmesan cheese
2-3 sprigs fresh rosemary, chopped
olive oil (for sautéing)
salt and pepper to taste

Steps:

  • Bring water or broth to a boil and add cornmeal and salt. Reduce heat to low and stir for 5 mintues. Add 1/4 cup of cheese and stir until melted and well combined. Remove from heat, cover, and allow to cool for 30 minutes.
  • Cut a piece of parchment paper to line a 9x13" baking pan, allowing for enough parchment paper to come up over the edge to make it easy to lift polenta cake once cooled. Refrigerate for at least two hours, or overnight.
  • Gently remove polenta from baking pan and place on a cutting board. Cut into desired shapes using a sharp knife or bisucuit cutter.
  • Heat 1 teaspoon of olive oil in a non-stick saute pan. Working in batchs of 3-4 at a time, saute each cake for 3-4 minutes on each side until golden brown.
  • Remove from pan using a slotted spatula and plate on a serving dish or single plate. Top with remaining cheese, rosemary, salt and papper.

  • Grease and base-line a 23cm springform cake tin. Put the whole oranges in a large pan of water, bring to the boil and simmer for 1 hour, until soft. Remove, cool, then halve and remove the pips.
  • Preheat the oven to 180°C/fan160°C/ gas 4. Whizz the orange halves (with the skin) to a purée in a food processor. Beat in the eggs, polenta, almonds, sugar and rosemary.
  • Pour into the tin and sprinkle with the demerara sugar. Bake for 1 hour, until the cake is risen and golden.

In a large bowl, using an electric mixer, beat the softened butter with the sugar at medium-high speed until pale and fluffy, about 2 minutes. Add the eggs one at a time, beating well between additions. Beat in the vanilla extract and lemon juice. Gradually add the flour mixture to the egg mixture, beating the batter at low speed until just incorporated.
  • Scrape the batter into the prepared loaf pan and bake for about 1 hour, until a cake tester inserted in the center of the cake comes out with a few moist crumbs attached. Turn the pound cake out onto a rack and let it cool until warm.
  • In a small saucepan, combine the honey with the water and rosemary sprigs and simmer over moderate heat for 2 minutes. Let the syrup cool to room temperature, about 15 minutes. Discard the rosemary sprigs. While the cake is still warm, lightly brush the top of the cake with the rosemary syrup.

  • Preheat oven to 150°C and butter the base of a 26cm diameter cake tin (we used a fluted tin) and line it with baking paper. Beat butter, honey and lemon rind in an electric mixer until light and fluffy (4-5 minutes), scrape down sides of bowl, then add yolks one at a time, beating well between additions. Transfer to a large bowl, fold in ricotta, then almond meal, polenta, rosemary and a pinch of salt.
  • Whisk eggwhites and a pinch of salt in an electric mixer to soft peaks, then gradually whisk in 110gm sugar and whisk until glossy (1-2 minutes). Fold into ricotta mixture, then spoon batter into tin, smooth top and scatter with almonds. Bake until golden and a skewer withdraws clean (45-50 minutes). Remove from oven and pierce all over with a skewer.
  • Stir lemon juice, remaining sugar and 80ml water in a saucepan over medium-high heat until sugar dissolves. Add vanilla bean and seeds, bring to the boil and cook until a light syrup forms (4-5 minutes). Discard vanilla bean, add rosemary sprigs and pour half over cake. Chill remaining.
