CRISPY ROSEMARY CHICKEN AND FRIES

Crispy Rosemary Chicken and Fries image

This is a one pan meal that's in the oven in 15 minutes. Rosemary, garlic, and oregano create a mouth watering aroma. If using dried herbs in place of fresh, use 1/3 the amount. Potatoes are crispy like french fries, just serve with ketchup. Kids just love this!

LOLA FRIES WITH ROSEMARY

Lola Fries with Rosemary image

Rosemary on potatoes is so good, and hot crispy fries with rosemary and some sea salt are the best. I think of sea salt the way I do extra-virgin olive oil, as something to finish with. I use Maldon, which has a nice flaky texture. There's no better way to ensure crispy fries than to fry them twice: first at 275 degrees F and then later at 360 degrees F. They crisp up even better on their final cook if they've been thoroughly chilled in the refrigerator. This means you can do the first fry well in advance of serving and pop them in the fridge. When you're ready, the fries take about 5 minutes to finish.

Provided by Michael Symon : Food Network

Time 1h40m

Yield 6 to 8 servings

Number Of Ingredients 4

2 pounds russet potatoes
Canola oil or lard, for frying
1 teaspoon finely chopped fresh rosemary
1 teaspoon coarse sea salt

Steps:

  • Peel the potatoes and cut them into long fries about 1/4-inch thick. As you cut them, put them in a bowl of cold water to cover.
  • Pour enough oil into a medium pot so that the oil comes 3 inches up the sides. Heat the oil to 275 degrees F.
  • Drain the fries, rinse them of excess starch under cold water, and pat dry. Working in batches if necessary, cook them in the oil for about 5 minutes; they should be soft and pale. Remove them from the oil using a slotted spoon and rinse under cold water to remove excess oil and starch for a crisper fry later. Reserve the pot of oil.
  • Cover a rimmed baking sheet with paper towels and lay the fries on top. Chill completely in the refrigerator. The potatoes can be prepared this way up to 1 day in advance of cooking them.
  • Heat the oil to 360 degrees F.
  • Add the fries, in batches if necessary, to the oil and cook, stirring gently, until the fries are golden brown, about 5 minutes. Remove them from the oil to a large paper-towel-lined bowl and season them with the rosemary and salt, shaking the bowl to distribute the seasonings evenly.

ROSEMARY-PAPRIKA CHICKEN AND FRIES

Rosemary-Paprika Chicken and Fries image

This sheet-pan chicken dinner was inspired by patatas bravas, the crispy potatoes typically served with a spicy sauce and aioli in tapas bars all across Spain. Here, there are potatoes, of course, but they're cut into matchsticks and browned on a sheet pan; and there's a garlic mayonnaise for dipping. (Make real-deal aioli if you have a few minutes to spare.) But instead of the traditional smoky, brick-red sauce, similar seasonings are smeared onto chicken before roasting: a mix of lemon, garlic, rosemary, smoked paprika and red-pepper flakes. Using bone-in parts keeps the white meat juicy, while the skin gets crisp and some of the schmaltz glosses the fries.

Provided by Ali Slagle

Categories     dinner, weeknight, poultry, main course

Time 45m

Yield 2 to 3 servings

Number Of Ingredients 11

1/2 cup mayonnaise
1 tablespoon lemon zest (from 1 large lemon)
3 garlic cloves, grated
Kosher salt (Diamond Crystal) and black pepper
1 tablespoon smoked paprika
1 teaspoon chopped rosemary leaves (or ½ teaspoon dried rosemary)
1/2 teaspoon red-pepper flakes
2 large bone-in, skin-on chicken breasts (1½ to 2 pounds total), patted dry
1 large russet potato (about 1 pound), scrubbed
1 tablespoon olive oil
1 tablespoon lemon juice

Steps:

  • Heat the oven to 425 degrees, and place a sheet pan on the oven's lowest rack to heat. In a liquid measuring cup or small bowl, stir together the mayonnaise, lemon zest and garlic. Season with salt and pepper.
  • Transfer half of the mayonnaise mixture (about ¼ cup) to a medium bowl. Stir in the smoked paprika, rosemary, red-pepper flakes and ½ teaspoon black pepper. Season the chicken all over with 1½ teaspoons salt. Add the chicken to the bowl of paprika-mayonnaise, and rub it all over the chicken. Set aside.
  • Halve the potato crosswise (no need to peel), then cut it into ¼-inch-thick fries. Right on the cutting board, drizzle with the olive oil, and season with salt and pepper. Toss to coat.
  • Place the chicken breasts skin side down on the heated sheet pan, then scatter the potatoes around the chicken in a single layer. Roast on the bottom rack for 15 minutes, then flip the chicken so the skin side is up. (No need to turn the potatoes.) Roast for another 10 to 15 minutes, until the fries are browned underneath and the chicken registers 155 degrees when an instant-read thermometer is inserted in the thickest part. (The temperature will rise as the meat rests.) Let the chicken rest for at least 5 minutes, then cut the chicken meat from the bones and slice. Stir the lemon juice into the remaining mayonnaise mixture. Eat the chicken with the fries and a puddle of the lemon-garlic mayo for dipping.

  • Soaking: If possible, soak your peeled and cut potato strips in a bowl of water for as long as possible. If you can soak them overnight, that's awesome! If you can only soak them for an hour or two, that's great! Even just soaking them for just 15 minutes is better than not soaking them at all!
  • Remove your soaked potatoes from the water and pat them dry using paper towels. If you forget to pat them dry, you'll end up with steamed potatoes and not deliciously, crispy ones.
  • Place the dried off potato strips in a large bowl and toss with olive oil, rosemary, salt, garlic, and pepper until coated well.

  • Preheat oven to 425°F. Spread oil on a large dark baking sheet with edges, making sure it is completely covered. Soak the potato slices in hot water for 10 minutes. Drain and dry (really well!) with a towel. Place in a large bowl.
  • Meanwhile, stir together Argo® Corn Starch and water. Pour over the soaked and dried potatoes and toss to coat completely with the corn starch slurry (using your clean hands works best!).
  • Spread out fries on the prepared pan, letting any excess corn starch slurry drip off before they go to the pan. Ensure there is room between each piece so all sides get crispy!
  • Bake for 15 minutes, then use a flat stiff spatula to carefully flip the fries over. Bake for an additional 10-12 minutes until fries are brown and crispy. While fries are baking; mix together the rosemary, garlic, and a pinch of salt, pressing together with the back of a spoon. Once they’re done baking, remove the fries from the pan and let cool slightly on a paper towel to remove some excess oil. Sprinkle with salt.

  • If you have new potatoes, scrub them (peel them otherwise) really well and cut into ½ cm / 0.2" wide matchsticks. Try to make them as even as possible so that they cook evenly.
  • Plunge the matchsticks into a bowl of cold water and let them sit in it for about 30 min. Soaking will get rid of excess starch and result in crispier fries. Prepare roasted garlic dip while fries are soaking.
