1/2 cup butter, cubed
4 tablespoons minced fresh rosemary or 2 tablespoons dried rosemary, crushed
2 tablespoons minced fresh parsley
1 teaspoon salt
1/2 teaspoon pepper
3 garlic cloves, minced
1 whole roasting chicken (5 to 6 pounds)
6 small red potatoes, halved
6 medium carrots, halved lengthwise and cut into 2-inch pieces
2 medium onions, quartered

Steps:

  • In a small saucepan, melt butter; stir in the seasonings and garlic. Place chicken breast side up on a rack in a shallow roasting pan; tie drumsticks together with kitchen string. Spoon half of the butter mixture over chicken. Place the potatoes, carrots and onions around chicken. Drizzle remaining butter mixture over vegetables. , Bake at 350° for 1-1/2 hours. Baste with cooking juices; bake 30-60 minutes longer, basting occasionally, until a thermometer inserted in thickest part of thigh reads 170°-175°. (Cover loosely with foil if chicken browns too quickly.), Let stand 10-15 minutes, tented with foil if necessary, before carving. Serve with vegetables.

This easy chicken wing recipe is a healthier alternative to the deep-fried variety! Baked in a honey, garlic and herb glaze, these chicken wings are finger lickin' good!

1 pound chicken wings (separated)
2 tablespoons vegetable oil
2 teaspoons herbes de Provence
1 teaspoon roasted garlic powder
1 teaspoon Kosher salt
2 tablespoons butter
2 garlic cloves (minced)
1 teaspoon herbes de Provence
1/8 cup mild honey (such as clover or wildflower)
chopped fresh herbs (such as parsley, basil, rosemary, chives)

Steps:

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  • In a large bowl, combine wings, vegetable oil, garlic powder, herbs de Provence, and salt. Use tongs to toss and coat evenly.
  • Spread wings onto the prepared baking sheet and bake for 15 minutes. Remove from the oven and use metal tongs to flip. Return to the oven for an additional 15 minutes.
  • While the wings are cooking, make the glaze. Melt butter in a small skillet over medium-high heat. Once melted, add minced garlic and herbs de Provence and cook until fragrant, about 30 seconds. Add honey and stir until smooth.
  • Once fully cooked, remove wings from the oven and change the oven to broil. Flip all wings skin-side up and brush with glaze. Broil for 2-4 minutes until crispy.
  • Serve immediately, topped with chopped fresh herbs.

These meaty out-of-the-ordinary roasted wings are infused with lots of lemon, garlic and rosemary, then roasted on a bed of fingerling potatoes. Use a large roasting pan that's at least 3 inches deep, or a big earthenware gratin dish, or a couple of Pyrex lasagna pans side by side. The lemony chicken and potatoes are delicious hot and crisp, but just as good at cool room temperature.

2 pounds very small potatoes, such as fingerlings, whole, or use medium-size yellow-fleshed potatoes, cut in halves or wedges)
3 pounds chicken wings, preferably drumettes
Salt and pepper
Red pepper flakes, to taste
3 tablespoons extra-virgin olive oil
6 small lemons, cut into 1/4-inch thick half-moon slices
6 large rosemary sprigs, leaves stripped
8 garlic cloves, minced, or 1/2 cup chopped green garlic shoots
1 cup dry white or rosé wine
Pinch of dried oregano (optional)

Steps:

  • Heat oven to 400 degrees. Rinse potatoes with lukewarm water and pat dry.
  • Spread chicken wings out on a baking sheet or cutting board in a single layer. Season both sides of wings generously with salt and plenty of freshly ground black pepper. Sprinkle with red-pepper flakes as desired.
  • Transfer seasoned wings to a large bowl. Add olive oil, lemon slices, rosemary and garlic and toss well with (plastic-gloved) hands so everything is evenly coated.
  • Place potatoes on the bottom of a roasting pan. Arrange seasoned wings over potatoes in a single layer. Add wine and cover pan tightly with foil.
  • Bake, covered, for about 45 minutes, until potatoes are done. Remove foil and return the pan to the oven and bake about 20 minutes more, until wings are nicely browned. Using tongs, turn wings over and bake for another 20 minutes to brown the wings' other side. Sprinkle with dried oregano, and serve hot or at room temperature.

1 pound chicken wings (separated into flats and drums)
1 tablespoon rosemary (chopped fresh)
1 tablespoon lemon zest (from about 2 lemons)
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/4 cup + 1 tablespoon olive oil
1 large onion (peeled and sliced into 1/4-1/2" wedges)
1 head garlic (not peeled, separated into cloves)

Steps:

  • In a small bowl combine the rosemary, lemon zest, salt, pepper, red pepper flakes and 1/4 cup olive oil and stir well. Set aside.
  • Rinse and dry the wings and place them in a 1 gallon resealable storage or freezer bag. Add the marinade, seal the bag, getting out most of the air. Massage the chicken wings in the marinade until well coated. Refrigerate overnight.
  • Take the chicken wings out of the refrigerator and let them sit at room temperature for about 30 minutes.
  • Preheat the oven to 400°.
  • Bring a small pot of water to a boil and add the cloves of garlic. Cook for 3-4 minutes, drain and let the cloves cool. Slip the skins off the cloves of garlic and set aside.
  • Heat a large, heavy ovenproof skillet (preferably cast iron) over medium high heat. Add one tablespoon olive oil, when the oil is hot, add the onions and cook while stirring occasionally for one minute. Add the chicken wings one at a time to the hot pan and cook for 1-2 minutes (without turning or prodding them) so that they get a little sear. Using tongs, flip the wings. Add the peeled garlic cloves and stir them with the onions. Cook for 1-2 more minutes, then transfer the skillet to the hot oven.
  • Cook for 10 minutes, then flip the chicken wings and stir the onions and garlic before returning to the oven. Cook an additional 8 minutes and flip the chicken wings again. Cook for a final 8 minutes and remove from the oven.
  • Transfer the wings to a platter and serve.

2 garlic cloves
1 lemon zest

  • Light your oven or grill and get it to a very high temperature 500-600 Degrees.

one 4-5 pound chicken (at room temperature, giblets and neck removed from cavity)
2 onions (quartered)
1 head of garlic (cut in half plus 3 garlic cloves minced)
3 lemons (2 cut in half and remaining half sliced into thin slices)
4 tablespoons unsalted butter* (softened)
2 teaspoons grated lemon zest
2 fresh rosemary sprigs plus 1 sprig minced
Kosher salt and freshly ground pepper
½ cup white wine

Steps:

  • Preheat the oven to 425°F and position a rack in the lower third of the oven. Mix the butter with minced rosemary, 3 cloves of minced garlic, lemon zest, salt and pepper.
  • Pat the chicken dry and rub half of the butter, garlic and lemon zest mixture under the skin and the rest over the chicken and season with salt and pepper. Generously season cavity of chicken with salt and pepper and stuff with lemon half, ½ head of garlic, 2-3 quarters of onion and 2 rosemary sprigs. Truss legs with cooking twine and tuck wings under bird.
  • Place chicken in a roasting pan breast-side-up with the remaining onion, garlic, lemons and herbs. Add ½ cup of white wine.
  • Roast for 30 minutes or until the breast is firm and just beginning to brown in spots. Using tongs, turn the chicken breast-down, baste with juices and roast for 20 minutes longer, until the skin is lightly browned. Using tongs, turn the chicken breast-side-up and baste again. Add ½ cup of water if wine has evaporated. Roast for about 20 minutes longer, until an instant-read thermometer inserted in the inner thigh registers 155°F to 160°F and juices are running clear.
  • Transfer the bird to a cutting board and tent with foil. Remove aromatics and vegetables from the cavity, carve the chicken and serve.

15 cloves garlic, minced
1 tablespoon smoked paprika

  • Mix buttermilk, garlic, paprika, salt, and pepper together in a large bowl; stir to combine.

12 chicken legs
2 cloves garlic, minced
4 stems rosemary, leaves picked and roughly chopped
4 cups panko bread crumbs
Kosher salt and freshly ground black pepper
2 eggs
2 cups milk
3 cups all-purpose flour
Extra-virgin olive oil
Lemon wedges, for serving

Steps:

  • Preheat the oven to 350 degrees F. Put a sheet tray in the oven to preheat.
  • Wash and trim the chicken legs of any excess fat. Mix the garlic, rosemary and panko together in a shallow rimmed dish and season well with salt and pepper. Alternately, crush the garlic and rosemary with some olive oil and salt in a mortar and pestle.
  • Crack the eggs into a similar dish, add the milk and whisk to combine. Season with salt and pepper, to taste. In another dish add the flour and season with salt and pepper, to taste.
  • Take the chicken legs and 1 at a time, dredge in the flour, then the egg wash and then coat well with the rosemary-garlic panko bread crumbs. Lay the chicken legs out on a tray lined with parchment paper, as you work. Refrigerate the legs for about 15 to 20 minutes for the breading to set.
  • Remove the hot sheet tray from the oven and drizzle with a good amount of olive oil. Arrange the chicken legs carefully on the tray, spacing them out evenly (the chicken will sizzle when added to the hot oil). Roast until the chicken legs are golden and crispy, about 35 to 40 minutes Remove the chicken from the oven to a serving platter. Season with salt and serve with lemon wedges.

  • Put all of the ingredients for the Lemon, Garlic & Rosemary marinade in a large zip-loc bag. Remove the little end part from each wing. Place the trimmed wings in the plastic bag with the marinade - or you can cut the wings into smaller drummets and wing pieces. I have done both. Place the bag in a small casserole dish or a bowl to guard against leaks, and refrigerate overnight to two days, turning every 8 hours or so.
