1 tablespoon yeast
1 tablespoon sugar
1 cup warm water
2 1/2 cups flour
1 teaspoon salt
2 tablespoons rosemary
2 tablespoons butter

Steps:

  • Place yeast, sugar and water in large bowl or food processor and allow mixture to become bubbly.
  • Mix in 1 T butter, salt, and 2 cups of flour.
  • Add one tablespoon of the fresh chopped rosemary.
  • Knead for about 10 minutes by hand or in food processor about 5 minutes until smooth and elastic.
  • Add more flour if necessary.
  • Oil a bowl, put dough in it and cover with a towel.
  • Let dough rise in a warm place for one hour until doubled.
  • Punch down dough and divide in half.
  • Let dough rest about 5 minutes.
  • Spray baking pan or cookie sheet with cooking spray.
  • Shape the dough into 2 small rounded oval loaves.
  • Sprinkle remaining 1 Tablespoon of rosemary over the loaves and press lightly into the surface.
  • Let loaves rise again until doubled, about 45 minutes.
  • Preheat oven to 375°F.
  • Bake for 15 to 20 minutes, until lightly browned.
  • Carefully remove from oven, brush with remaining butter (and salt if desired.).

5 whole garlic bulbs
2 teaspoons olive oil
1/4 cup minced fresh rosemary or 4 teaspoons dried rosemary, crushed
1 tablespoon chicken broth
9 to 9-1/2 cups bread flour
1/2 cup sugar
3 packages (1/4 ounce each) quick-rise yeast
3 teaspoons salt
1-1/2 cups milk
1 cup water
3/4 cup butter, divided
1 egg
1-1/2 teaspoons garlic salt

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic heads, leaving root end intact. Place cut side up in a small baking dish. Brush with oil; sprinkle with rosemary. , Cover and bake at 425° for 30-35 minutes or until softened. Cool for 10 minutes; squeeze softened garlic into a bowl. Add broth; lightly mash., In a large bowl, combine 3 cups flour, sugar, yeast and salt. In a large saucepan, heat the milk, water and 1/2 cup butter to 120°-130°. Add to dry ingredients; beat just until moistened. , Beat in egg and garlic paste until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes, Turn dough onto a lightly floured surface; divide into thirds. Divide each portion into three pieces; shape each into an 18-in. rope. Place three ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. Repeat with remaining dough. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 350° for 15 minutes. Melt remaining butter; add garlic salt. Brush over bread. Bake 10-15 minutes longer or until golden brown. Remove from pans to wire racks to cool.

1 head garlic (roasted)
1 Tablespoon olive oil
3 cups all-purpose flour
1 1/2 teaspoons kosher salt
1/2 teaspoon active dry yeast
1 1/2 cups room temperature water
1 Tablespoon fresh rosemary (chopped)

Steps:

  • To roast the garlic, heat the oven to 425 degrees. Slice the top off the head of a garlic bulb to expose the cloves, then drizzle with 1 tablespoon of olive oil over the exposed garlic cloves. Wrap in tinfoil and roast for 45 minutes, then remove from oven and cool until the soft garlic can be squeezed out of the papery skin.
  • In a large bowl, combine the flour, salt, yeast, rosemary, and roasted garlic. Add the water and stir to combine, just until it starts to come together in a very shaggy dough. Cover tightly with plastic wrap and let it sit on the counter at room temperature for 12-18 hours.
  • When you are ready to bake the bread, place a dutch oven, pizza stone, or other oven-safe pan in the oven to preheat and heat the oven to 450 degrees.
  • Working on a clean, well-floured surface, turn the dough out onto the counter or table and shape into a ball using floured hands. The dough will be very sticky.
  • Drop the ball of dough into the preheated dutch oven or other baking dish, cover with lid or an oven-safe bowl, and bake for 30 minutes with the lid on. Remove the lid and bake for another 10-15 minutes, until golden brown and crusty on top.
  • Remove bread from the dutch oven to cool completely before slicing.

2 teaspoons sugar
2 tablespoons extra-virgin olive oil, plus more for brushing and serving
2 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons dried rosemary
1 teaspoon fine salt
1/2 teaspoon kosher salt Freshly ground pepper

Steps:

  • Stir the yeast, sugar and 1/4 cup warm water in a large bowl (or in the bowl of a stand mixer). Let sit until foamy, about 5 minutes.
  • Add 1 tablespoon olive oil, the flour, 1 1/2 tablespoons rosemary, the fine salt and 3/4 cup warm water; stir with a wooden spoon (or with the dough hook if using a mixer) until a dough forms.
  • Turn the dough out onto a lightly floured surface and knead, dusting lightly with flour if necessary, until smooth and elastic, about 10 minutes. (Or knead with the dough hook on medium-high speed, adding a little flour if the dough sticks to the bowl, about 8 minutes.)
  • Brush a large bowl with olive oil. Add the dough, cover with plastic wrap and let stand at room temperature until more than doubled, about 2 hours.
  • Brush 2 baking sheets with olive oil. Generously flour a work surface; turn the dough out onto the flour and divide into 4 pieces. Working with one piece at a time, sprinkle some flour on the dough, then fold the top and bottom portions into the middle. Fold in the sides to make a free-form square. Use a spatula to turn the dough over, then tuck the corners under to form a ball. Place seam-side down on a prepared baking sheet. Repeat with the remaining dough, putting 2 balls on each baking sheet. Let stand, uncovered, until more than doubled, about 2 hours.
  • Preheat the oven to 400 degrees F. Bake the loaves 10 minutes; brush with the remaining 1 tablespoon olive oil and sprinkle with the kosher salt and the remaining 1/2 tablespoon rosemary. Continue baking until golden brown, about 10 more minutes. Transfer to a rack to cool. Serve with olive oil seasoned with pepper.

1 large (1 pound loaf) of Italian bread
2 tablespoons fresh rosemary, chopped
2 cups shredded Asiago cheese
1 stick butter, softened to room temperature
1/2 teaspoon kosher salt
Fresh cracked black pepper to taste
1/2 teaspoon Italian seasoning
2 tablespoons fresh garlic, chopped fine or minced through a garlic press
1 tablespoon fresh parsley, chopped

Steps:

  • Preheat the oven to 400 degrees.
  • Make the butter mixture by adding the butter, salt, pepper, Italian seasoning, garlic and parsley to a small bowl and mixing together.
  • Split the bread open lengthwise and place each half, cut side up, on a baking sheet.
  • Divide the butter between the halves, spreading the butter to cover the bread completely.
  • Bake the bread in the oven for 10 minutes, then remove the bread from the oven.
  • Top each half with the asiago cheese, then place back into the oven for 5-7 minutes until the cheese has completely melted.
  • Garnish with the chopped rosemary and serve.
  • Make the recipe and let the bread cool completely. Put the halves back together then wrap in foil and put into a freezer bag.
  • To reheat the bread from frozen, thaw the bread completely in the refrigerator. Place the bread into a 350 degrees preheated oven for 20-25 minutes until heated through. Open up the bread and serve as is or broil for an additional 2-3 minutes.

Our focaccia bread recipe is very simple to make - no fancy equipment is needed at all. The secret to the best focaccia is a great tasting olive oil. Since there is quite a bit used, the bread really takes on the flavor. You don't need to spend lots of money, just use olive oil you love. For the herbs, we love a combination of thyme and rosemary, but you could use whatever herbs you love - fresh or dried. Or, omit the garlic and herbs all together and use plain olive oil instead. A note on pan size: In this recipe, we call for a 9-inch by 13-inch rimmed baking sheet. If you do not have this, you can use a 9-inch by 13-inch rimmed baking dish with taller sides.

2 garlic cloves, finely minced

Steps:

  • In a cold medium skillet, combine olive oil, minced garlic, thyme, rosemary, and black pepper. Place the pan over low heat and cook, stirring occasionally, 5 to 10 minutes or until aromatic, but before the garlic browns. Set aside.
  • In a large bowl, combine the warm water, yeast, and honey. Stir a few times then let sit for 5 minutes.
  • Add 1 cup of flour and a 1/4 cup of infused garlic-olive oil mixture to the bowl with yeast and honey. Stir 3 to 4 times until the flour has moistened. Let sit for another 5 minutes.
  • Stir in the remaining 1 ½ cups of flour and salt. When the dough comes together, transfer to a floured board and knead 10 to 15 times until smooth.
  • Transfer the dough to a large oiled bowl, cover with a warm, damp towel and let rise for 1 hour. (It's best to let the dough rise in a warmer area of your kitchen).
  • After 1 hour, heat the oven to 450 degrees Fahrenheit.
  • Use two tablespoons of the remaining garlic-olive oil mixture to oil a 9-inch by 13-inch rimmed baking sheet. (See above if you do not have this pan size).
  • Transfer the dough to the baking sheet then press it down into the pan. Use your fingers to dimple the dough then drizzle the top with the remaining 2 tablespoons of the garlic olive oil mixture. Let the dough rise for 20 minutes until it puffs slightly.
  • Bake until golden brown, 15 to 20 minutes. Cool baked focaccia bread on a wire rack.

500 g flour
7 g dried yeast
1 tsp salt
4 sprig(s) fresh rosemary diced or (2 teaspoons dried rosemary)
3 Tbsp garlic infused olive oil
300 ml warm water

Steps:

  • 1. In a medium size bowl, mix together the water, yeast, rosemary, salt and garlic infused oil. Add a quarter of the flour, mixing well. Now, slowly add the rest of the flour a little at a time.
  • 2. Knead the dough for 10 - 15 minutes.
  • 3. Put the dough in a bowl, cover with a damp tea and place in a warm area and let rise to double it's size. This should take about an hour.
  • 4. Place the dough on a lightly floured surface. Roll into a large dome shape or turn into rolls; then place the dough on a parchment lined tray and proof in a warm spot for another hour.
  • 5. After the dough has finished proofing for a second time, grind some fresh sea salt over the top of the dough and cut a cross into the top of the bread.
  • 6. When your dough is just about finished its second proofing, preheat your oven to 230 degrees.
  • 7. Place the bread on the bottom shelf and bake the for 25 minutes.
  • 8. The bread is ready when you hear a hollow sound if you tap the bottom of the bread. Enjoy

1 (.25 ounce) package active dry yeast
1 teaspoon salt

  • Add chopped rosemary and roasted garlic to the dough. We used a lot of garlic! Remove garlic cloves from the bulbs before adding. Remember it will soften and shrink down a lot.

  • Place the yeast and sugar in the bowl of a stand mixer fitted with a dough hook or paddle attachment. Or, if you do not own a stand mixer, a regular large mixing bowl. Heat the milk on the stove or in the microwave until warm to touch, about 110°F (43°C). Pour warm milk on top of yeast/sugar. Whisk gently to combine, then loosely cover with a clean kitchen towel and allow to sit for 5-10 minutes. The mixture will be frothy after 5-10 minutes.
  • Add the butter, egg, flour, salt, garlic powder, and rosemary. Beat on low speed for 3 minutes. Dough will be soft. Transfer it to a lightly floured work surface. Using lightly floured hands, knead it for 1 minute. If the dough is too sticky to handle, add 1-3 more Tablespoons of flour, but you want a very soft dough. Shape into a ball.
  • Place the dough in a greased bowl (I use nonstick spray to grease) and cover with plastic wrap or aluminum foil. Place in a slightly warm environment to rise until doubled in size, around 60-90 minutes. (If desired, use my warm oven trick for rising.   • Add all of the ingredients to a mixing bowl and stir together. The dough will be sticky, shaggy and a hot mess. That's okay, it's supposed to be that way.
  • Lay out a piece of parchment paper and dust it with flour. Transfer the dough from the bowl to the paper and behind shaping it. You'll want to stretch out each side and fold it over and work around until you have it in the shape of a ball. (Don't worry you can't mess this up).
  • Place the dutch oven in the oven (I didn't include the lid). Preheat your oven to 450F and let it come to temperature. Your bread will rise while your dutch oven heats up.
  • Using oven mitts, take the dutch oven out of your oven and place it on top of the stove. Lift the bread using the parchment paper and transfer it to the dutch oven. Score the bread to let steam escape while it bakes. I just did a simple slash down the center with a knife, but you can make it pretty with designs if you'd like.
