Lamb for Lovers image

This is a rack of lamb dish with rosemary and mint demi-glace. Serve with oven roasted red potatoes and sauteed green beans amandine. Perfect for Valentine's Day! Buy a seven bone rack of lamb, and have the butcher trim the fat cap and in between the bones for you, and save these trimmings for roasting.

2 tablespoons olive oil
2 (7 bone) racks of lamb, trimmed, fat reserved
salt and pepper to taste
4 cloves garlic, minced
1 large onion, diced
4 carrots, diced
1 cup celery tops
1 cup port wine
1 cup red wine
1 (14.5 ounce) can low-sodium chicken broth
5 sprigs fresh spearmint
3 sprigs fresh rosemary
1 cup mint apple jelly
2 tablespoons olive oil
salt and pepper to taste
1 tablespoon garlic, minced
¼ cup panko bread crumbs
2 tablespoons olive oil
4 sprigs fresh mint

Steps:

  • To Make Demi-Glace: Heat 2 tablespoons olive oil in a medium skillet over medium heat, and add trimmings from lamb. Season with salt and pepper. Brown the fat, reduce heat, and add 4 cloves minced garlic, onion, carrots, celery leaves, port, red wine, and chicken broth. Transfer the mixture to a slow cooker, and simmer on Low 8 hours, or overnight.
  • Strain the slow cooker mixture into a saucepan over medium-low heat. Mix in the spearmint, rosemary, and mint jelly, and simmer, adding more port, wine, or broth as needed, until mixture leaves a syrup-like coating on the back of a spoon. Strain once more, and keep warm while lamb roasts.
  • To Roast Lamb: Place a cast iron or oven-proof skillet in the oven, and preheat to 450 degrees F (230 degrees C). Rub lamb with 2 tablespoons olive oil, salt, pepper, and garlic. Coat with panko bread crumbs.
  • Carefully remove the heated skillet from the oven, warm 2 tablespoons olive oil in the skillet, and sear lamb on both sides. Return the skillet with the lamb to the preheated oven, and continue cooking 5 to 10 minutes, to an internal temperature of 145 degrees F (63 degrees C).
  • Pour a small amount of the demi-glace on platter and arrange lamb criss-crossed. Drizzle with more demi-glace, and garnish with fresh mint to serve.

1/4 cup reduced-sodium chicken broth
3 tablespoons honey
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 tablespoon Dijon mustard
1 teaspoon balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
2 pork tenderloins (1 pound each)
2 tablespoons olive oil, divided
4 garlic cloves, minced

Steps:

  • Whisk together first 7 ingredients. Cut tenderloins crosswise into 1-in. slices; pound each with a meat mallet to 1/2-in. thickness., In a large nonstick skillet, heat 1 tablespoon oil over medium-high heat. In batches, cook pork until a thermometer reads 145°, 3-4 minutes per side. Remove from pan., In same skillet, heat remaining oil over medium heat; saute garlic until tender, about 1 minute. Stir in broth mixture; bring to a boil, stirring to loosen browned bits from pan. Add pork, turning to coat; heat through.

2 tablespoons grapeseed oil
1 tablespoon diced red onion
1 cup Cabernet wine
2 cups beef stock or demi-glace
1/4 cup chopped sun-dried tomatoes
1 sprig rosemary
2 sprigs flat-leaf parsley
2 tablespoons unsalted butter, room temperature

Steps:

  • In a heavy bottomed saucepan, over medium-high heat, add the grapeseed oil. When the oil is hot add the onion and saute until translucent, 3 to 4 minutes, stirring throughout. Deglaze the pan with wine. Once the pan has been deglazed add the stock, tomatoes, rosemary, and parsley.
  • Reduce the sauce until it is reduced by 40 percent, about 15 to 20 minutes. Once the sauce has reduced, remove from heat and pour through a chinois or cheesecloth into a bowl. Return the sauce to the pan and stir in butter to finish the sauce. Sauce can be held warm until serving or stored in a covered container in the refrigerator.

  • Melt butter. Heat a large saucepan over medium heat and melt 1/4 cup of butter to begin making demi glace. Stir occasionally until the butter is completely melted.
  • Whisk in flour. Slowly sprinkle flour over the melted butter. Use a wire whisk to incorporate the flour into the butter and prevent it from clumping. The butter and flour will form a roux and look like a thickened paste when completely combined.
  • Add veal, beef or vegetable broth. Pour broth into the pan. Use a whisk to stir the roux of flour and butter off the bottom of the pan and mix it into the broth.
  • Stir in wine. Stir red wine into the broth using a circular motion. Be sure the red wine is thoroughly incorporated into the mixture.
  • Simmer the broth and wine. Allow the red wine demi glace to simmer at low heat for 1 hour. Stir the mixture occasionally. Reduce heat slightly if there is any buildup on the bottom of the pan.
  • Reduce by half. Check the broth and wine after 1 hour to see if it has reduced in volume. The liquid should have reduced to approximately half its original volume in the pan.
  • Check consistency. Dip a spoon into the demi glace, then turn it over and look at the back. The demi glace is ready if it glazes the back of the spoon and stays on it.
  • Stir in more butter. Melt an additional 1/4 cup of butter slowly into the demi glace over low heat. Stir the sauce continuously as the butter melts so it mixes completely into the sauce.
  • Add demi glace to meat dishes. Use the finished demi glace as a glaze or drizzle over steaks or roasts. You can also serve demi glace on the side like a gravy.
