ROSEMARY SOURDOUGH BREAD (BREAD MACHINE)
In case you need the bread to go along with my Sandwiches of Rosemary Fig Chutney! This is an adaptation of a recipe I found online. It makes a 1 1/2 pound loaf.

Steps:
- Add all ingredients to bread machine in order listed, or as recommended by your bread machine, beginning with 3 cups bread flour.
- Bake on the basic cycle. I always use the lightest crust setting.
- Check the dough about 5-10 minutes into the cycle and add up to another 1/2 cup flour if it seems too sticky.

- Follow directions for the bread mix- only add the garlic to the water so the oil doesn't touch the yeast.
- Add rosemary and cook according to directions.

- Biga:.
- Place the biga ingredients in machine according to your manufactures directions. My machine calls for wet first then top with dry.
- Set machine for dough cycle, press start and let kneed for 5 minutes. Shut machine off and let rise over night at least 12 hours.
- Dough:.
- Place the wet ingredients over the biga then top with flour and rosemary. Place salt, sugar and yeast in separate corners.
- Set machine to basic dough setting press start.
- When finished remove dough to two bowls covered with an oiled plastic wrap.
- Place in a draft free warm place and let rise till tripled in size. About 1 hour.
- Flour 2 cookie sheet pans.
- Carefully place each dough onto pans. With floured hands shape dough into a rectangle one inch deep. Try not to release any of the air bubbles that were made during the rise.
- Sprinkle dough with flour and let rise again in a draft free warm place for 30 minutes.
- Preheat oven to 425 degrees.
- Bake for 25-30 minutes.
- Spraying with water during baking gives a crisp crust. Or you can place a couple ice cubes in the oven to release steam which will produce a crisp crust.

ROSEMARY BREAD - STARTED IN THE BREAD MAKER - BAKED IN THE OVEN
I love the ease of the bread maker but the consistency of the bread is too soft and fluffy for my taste. So, I experimented with different recipes, which I could start in the bread machine and then bake the old fashioned way. This is the version that worked best, the bread has great texture, it has a wonderful crust and the inside has a good bite but is not too dense. I used a french loaf pan, if you don't have one, form 2 round boule style loafs and bake them on an oiled cookie sheet or on a pizza stone.

Steps:
- Set bread machine on "Dough"cycle, depending on machine, choose either small or medium loaf size.
- Add all ingredients except 1 tsp rosemary.
- Make sure the water is only luke warm otherwise it will kill the yeast.
- Start the bread machine and let it run until the dough cycle is completed and the machine turns itself off.
- Remove dough to a floured board, cut into 2 portions and shape 2 loafs.
- Spray pan or cookie sheet with butter or oil spray and put the dough loafs on.
- If using the french baguette pan, form oblong loafs, otherwise make round boule style loafs.
- with a sharp knife, cut one long slit in the oblong loafs or a tic-tac-toe pattern in the boule style loafs.
- Sprinkle rosemary and coarse salt, if desired, on top and press lightly on, let rest for another 10 - 15 minutes.
- Preheat oven to 400°F or 200°C.
- Put a pan with hot water on the bottom when you turn the oven on.
- Bake in the lower half of the oven, ca. 50 - 60 minutes or until golden brown.
- the bread should sound hollow on the bottom when tapped.
- Remove from oven and let cool.
- Enjoy!

ROSEMARY BREAD (BREAD MACHINE)
This is an easy bread machine recipe that I came up with after tweaking a few other recipes, mixing and matching and finding what works for me. My family likes to eat this while still warm, and we usually dip it in olive oil, with a few drops of balsamic vinegar and coarsely ground pepper. I have listed ingredients by the way I add them to MY bread machine, so be sure to check that your particular bread machine doesn't require another way of adding ingredients. If so, follow your bread machines instructions for the order in which to add ingredients.

- Combine milk with 2 T rosemary and microwave until warm; about 45 seconds.
- Place ingredients in bread pan in order specified by your bread machines manual.

- Mix above ingredients for the rub and brush on bread after removing from bread machine. Ideally, while bread is still warm.
