ROSEMARY AND HAM SCONES

1 box biscuit mix (recommended: Jiffy)
3 tablespoons finely chopped rosemary, 4 small stems
1/2 cup cream
A couple pinches salt
3 pieces deli-sliced glazed smoked ham, chopped, about 1/8 pound
1 tablespoon orange zest
2 teaspoons sugar

Steps:

  • Preheat oven to 375 degrees F.
  • Mix together biscuit mix, rosemary, cream, salt, ham and orange zest. Pile mixture into 4 large mounds or 8 small mounds onto a nonstick cookie sheet. Sprinkle with a little sugar and bake. Bake scones for 10 to 12 minutes for large scones, 7 to 8 minutes for small scones.

Number Of Ingredients 17

SAUCE:
1/2 cup peach preserves
1 tablespoon horseradish
1 teaspoon wasabi powder
1/2 teaspoon ground mustard
1/4 teaspoon ground ginger
SCONES:
4 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons salt
2 cups finely chopped fully cooked ham
2 cups shredded cheddar cheese
2 cups heavy whipping cream
TOPPING:
1 large egg
1 tablespoon water
1 tablespoon poppy seeds

Steps:

  • For sauce, combine all ingredients. Refrigerate until serving. Preheat oven to 375°. , For scones, in a large bowl, whisk flour, baking powder and salt. Add ham and cheese; toss to combine. Stir in whipping cream just until moistened., Turn onto a lightly floured surface; knead gently 10 times. Pat dough into two 7-in. circles. Cut each into six wedges. Place wedges on a greased baking sheet. , For topping, whisk egg with water; brush over scones. Sprinkle with poppy seeds. Bake 40-45 minutes or until golden brown. Serve warm with peach sauce.,

2 cups plain flour (can use wholemeal but they will be denser)
4 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon sugar
1 tablespoon butter
1 tablespoon freshly chopped rosemary (1tsp dried)
1 cup milk (have use soya milk too, also good)

Steps:

  • Sift dry ingredients in a bowl and rub in butter,add rosemary and milk and combine to form a soft dough.
  • Roll out on to a floured board to 1 1/2 inch thickness and cut into 2 inch rounds.
  • Place on a greased baking tray,brush with a little milk and bake in a pre-heated oven 220c (425f) for12 minutes.

  • As I mentioned above, you want to keep your butter, cream, and eggs COLD until you are ready to use them. That being said, grab a large bowl and whisk together your flour, brown sugar, baking powder, baking soda, and salt. Set aside.
  • In a small bowl, combine the rosemary, diced ham, and Parmesan cheese and toss. Place bowl in refrigerator until needed.
  • Grab that stick of frozen butter from the freezer and a box grater. Grate the frozen butter on the large side of the grater. I don't own a food processor but one will do the job, too. Add the butter into the bowl of dry ingredients and toss gently with a fork.
