ROSEHIP & CRAB APPLE JELLY
Use up wild rosehips and crab apples in this sparkling jelly preserve - as good on toast as it is with roast meats

- Before you start your jelly, put 2 saucers in the freezer. Thoroughly wash the rosehips and apples. The rosehips will take much longer to cook, so put them in a pan with water to generously cover and bring to the boil. Reduce the heat and simmer for 40 mins, topping up with hot water from the kettle when necessary.
- Halve the crab apples (or chop the dessert apples - no need to peel or core) and pare wide strips of peel from the lemon. Add to the pan, with more hot water to cover the fruit. Return to the boil, then simmer for 15 mins until the apples and rosehips are very soft.
- Pour the fruit and liquid into a jelly bag and leave overnight to drip through.
- In the morning, select a few small jars with lids, wash the jars and lids in hot soapy water, rinse well and put the jars upright in a roasting tin. Heat at 180C/160C fan/gas 4 for 10 mins. Measure the juice and pour into a clean pan. For each litre of juice, add 800g sugar (or 80g sugar to each 100g juice). Add the honey and juice from the lemon.
- Bring the mixture slowly to the boil, stirring to dissolve the sugar. Boil hard for 5-15 mins until setting point is reached (see below). Don't overboil as apples are high in pectin and the jelly should set quickly. Remove from the heat and stir in the butter to disperse the foam on top. Pour into the prepared jars, seal, label and store in a cool, dark place for up to 1 year.

- Roughly chop the apples and place in a large, heavy-based saucepan with enough water to cover. No need to peel them, use the skins, cores and all. Pulse the rosehips in a food processor until broken down, then stir through the apples in the pan.
- Heat the mixture until boiling, then turn the heat down and simmer for 30-40 minutes until the apples are pulpy. Line a colander with muslin or cheesecloth or prepare a jelly bag. Pour the fruit pulp and any liquid into the prepared strainer and let the liquid drip into a bowl for several hours. It’s often best to do this overnight so you can resist the urge to squeeze the bag or cloth - squeezing the bag or cloth will lead to cloudy jelly.
- When the fruit pulp has drained, measure the liquid. For every 600ml liquid weigh out 400g of sugar and add both to a large, heavy-based saucepan. Heat gently, stirring to dissolve the sugar, then turn the heat up and boil until the mixture reaches 105°C / 220°F on a sugar thermometer (see notes for alternative method).

- Peel and core the apples, then reserve in acidulated water. Reserve all of the skin, seeds and core, wrap in cheesecloth and tie to make a bouquet. Cut the bottom off of each rose hip, then cut in half, remove the seeds, julienne ¼ inch and reserve.
- Shred the apples through the grating attachment on a food processor or similar, then combine with the hips, meyer lemon zest and juice, vinegar, sugar, bouquet and water. Bring the mixture to a simmer, then cook in a wide pan (I use a 10 inch brazier) slowly on medium-low heat, stirring occasionally until the pan is nearly dry, roughly 30 minutes.
- Pack the mixture into ½ pint canning jars, then process for 10 minutes in a water bath, or transfer to labeled, dated containers and reserve refrigerated until needed. The jam will keep for a long time.
