OVEN ROASTED BEEF BRISKET

4 lbs boneless point half beef brisket
4 garlic cloves, minced
1/2 tsp paprika
1/2 tsp ground coriander
1/4 tsp onion powder
1/2 tsp chopped fresh oregano
1/2 tsp chopped fresh thyme leaves
1 tsp salt
1/2 tsp freshly ground black pepper
1 cup beef stock
1/2 cup reduced sodium soy sauce or tamari

Steps:

  • Place beef in a large rectangular dish or bowl.
  • Make several small cuts into the brisket using a paring knife to allow spice rub to penetrate the meat.
  • In a small bowl, stir together garlic, paprika, ground coriander, onion powder, oregano, thyme, salt, and pepper. Rub the brisket with the spice mixture on all sides.
  • Cover and refrigerate for 12-24 hours.
  • Preheat oven to 325˚F.
  • Heat a large skillet over medium-high heat. Once hot, remove brisket from bowl and add to the pan. Sear on all sides, about 3-4 minutes per side, until browned.
  • Transfer to a large rectangular baking pan.
  • In a medium bowl, stir together beef stock and soy sauce until combined. Pour into the bottom of the baking pan.
  • Roast for 2 hours and 30 minutes to 2 hours and 45 minutes, until cooked through. The meat should have an internal temperature of at least 180˚F, as indicated by a meat thermometer.
  • Remove from oven and let stand for 1 hour, loosely covered in foil. Slice and serve with juices from the baking pan.

2 tablespoons chili powder
2 tablespoons salt
1 tablespoon garlic powder

1 bay leaf, crushed
4 pounds beef brisket, trimmed
1 1/2 cups beef stock

Steps:

  • Preheat the oven to 350 degrees F.
  • Make a dry rub by combining chili powder, salt, garlic and onion powders, black pepper, sugar, dry mustard, and bay leaf. Season the raw brisket on both sides with the rub. Place in a roasting pan and roast, uncovered, for 1 hour.
  • Add beef stock and enough water to yield about 1/2 inch of liquid in the roasting pan. Lower oven to 300 degrees F, cover pan tightly and continue cooking for 3 hours, or until fork-tender.
  • Trim the fat and slice meat thinly across the grain. Top with juice from the pan.

This easy slow-roasted beef brisket in the oven includes a homemade sauce and results in juicy, tender strips of melt-in-your-mouth beef.

1 fresh beef brisket (4 to 5 pounds)
2 tbsp Worcestershire sauce
2 tbsp soy sauce
1 tbsp onion salt
1 tbsp liquid smoke
2 tsps salt
2 tsps pepper
dash hot pepper sauce
1/2 cup ketchup
3 tbsps brown sugar
1 tbsp lemon juice
1 tbsp soy sauce
1 tsp ground mustard
2-3 drops hot pepper sauce
dash ground nutmeg

Steps:

  • Place brisket, fat side down, in a 13x9-inch baking dish. In a small bowl, mix the Worcestershire sauce, soy sauce, onion salt, liquid smoke, salt, pepper, and hot pepper sauce and pour it over the brisket. Turn the brisket fat side up and refrigerate, covered, overnight.
  • Remove the brisket from the refrigerator. Preheat oven to 300°. Bake fat side up, covered for 4 hours.
  • Optional: In a small bowl, combine the sauce ingredients and spread it over the brisket. Bake uncovered for 15 to 30 minutes longer or until tender.
  • Cut diagonally across the grain into thin slices.

6 lb fresh beef brisket
2 Tbsp chili powder
2 Tbsp kosher salt
2 Tbsp granulated garlic powder
2 Tbsp granulated onion powder
1 Tbsp coarse grated black pepper
1 Tbsp paprika
1 1/2 Tbsp dark brown sugar, firmly packed
1 Tbsp dry mustard
2 bay leaves, crushed really fine
2 c beef broth, or half red wine & half broth
1 large red onion, thick sliced
1 large spanish onion, thick sliced
2 large red bell peppers, cut into thick wide strips
1 lb fresh sliced mushrooms
1 1/2 Tbsp ground cumin
1 Tbsp thyme
1 Tbsp liquid smoke flavoring, optional
1/3 c all purpose flour

Steps:

  • 1. Preheat oven to 350 degrees F. Rub half of liquid smoke over each side of beef.
  • 2. Combine all of the spices and the crushed bay leaves together in a small bowl to create the dry rub.
  • 3. Season the beef brisket LIBERALLY ON BOTH SIDES with the dry rub . Spray a large roasting pan with non stick cooking spray, and then place the seasoned brisket in the pan.
  • 4. Bake in oven UNCOVERED at 350 degrees F. for 1 hour.
  • 5. While roast is cooking during the first hour,mix all of the vegetavles in a large bowl, add the flour and dust the veggies liberally. Remove roast from oven after the first hour.
  • 6. Assemble the vegetables around the roast in the pan. Then add the beef stock & (wine if using.) REDUCE THE OVEN TEMPERATURE TO 300 DEGREES F. Then cover pan tightly with foil or lid, and return to oven and roast for an ADDITIONAL 3 hours or UNTIL MEAT IS FORK TENDER.Use additional time if needed.
  • 7. Remove roast from oven after the 3 hours and allow to rest for about 20 minutes. Then carve against the grain into thin slices. An electric knife works very well for carving roast. Serve with your favorite pasta, rice or potatoes, and top with veggies and juices from pan.
  • 8. Note you can also add additional vegetables like carrots, potatoes, celery, parsnips etc.

EASY BAKED BEEF BRISKET



Easy Baked Beef Brisket image

For a brisket recipe, this is considered very fast. The convention of cooking it low and slow often results in dried-out meat that never reaches the proper internal temperature. Instead of waiting all day and risking such disappointment, we dial up the temperature slightly and bake it in about half the time to ensure it's both tender and moist. Garnish with chives if desired.

3 pounds first-cut brisket (or flat-cut), trimmed of fat
4 teaspoons kosher salt
2 teaspoons freshly ground black pepper
½ teaspoon cayenne pepper
2 tablespoons butter
1 large yellow onion, sliced
1 teaspoon kosher salt
4 cloves garlic, sliced
1 tablespoon minced fresh rosemary
1 cup apple juice

Steps:

  • Season both sides of the brisket generously with salt, pepper, and cayenne. For best results, place brisket over an aluminum foil "rack" set over a plate and refrigerate, uncovered, 8 to 12 hours.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Melt butter in a saucepan over medium heat. Add onion and salt. Cook and stir until translucent, about 5 minutes. Stir in garlic, rosemary, and apple juice. Increase heat to high and boil until liquid is reduced by about half, about 3 minutes.
  • Transfer half of the apple-onion mixture into a baking dish. Place brisket fat-side up on top; cover with remaining apple-onion mixture. Cover baking dish tightly with foil.
  • Bake in the preheated oven for 1 hour 30 minutes. Reduce oven temperature to 250 degrees F (121 degrees C) and bake until fork-tender, about 2 hours 15 minutes. Check for doneness after 2 hours.
  • Transfer brisket to a plate and tent with foil.
  • Pour the onions and braising liquid into a large measuring cup or bowl. Skim some fat off the top. Puree with a stick blender to create a gravy.
  • Slice brisket across the grain and serve with the gravy.

You're going to love how easy my dry rub oven-baked brisket is to prepare. And your friends and family are going to love how delicious that fork-tender brisket is!

5 lb beef brisket
¼ cup brown sugar
2 tbsp coarse sea salt (kosher salt can be substituted. *If you use table salt cut it down to 1 tbsp.)
1 tbsp cracked black pepper (more if you like black pepper as much as I do.)
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp sweet paprika
1 tbsp smoked paprika
1 tsp dried mustard
1 tsp dried thyme

Steps:

  • Mix dry rub ingredients. (This recipe for dry rub will cover a 5 lb brisket.)
  • Remove the brisket from the package and trim away any silver skin or excess fat.
  • Coat the entire brisket with the dry rub and massage the dry rub into the meat. Make sure to coat the sides of the brisket.
  • Wrap the dry-rubbed brisket tightly with non-stick Reynolds foil and refrigerate overnight. Completely wrap it as a package in one direction then go across the other direction sealing the foil.*A minimum of 3 hours is needed for the dry rub to penetrate the brisket.
  • Take the brisket out of the refrigerator an hour before cooking it, allow the brisket to get to room temperature before cooking.
  • Preheat the oven to 275° F
  • Insert an oven-safe meat thermometer into the thickest part of the brisket
  • Slow Roast in the oven until the internal temperature reaches 175 degrees F. Remove the brisket from the oven and carefully cut the foil open to expose the brisket and continue roasting until the internal temperature reaches 195-205 degrees F.*Depending on your oven, and where you inserted the meat thermometer, this process may take 5-6 hours.
  • Do not be tempted to raise the temperature for faster cooking time, or your brisket will be very tough. Slow oven roasting allows the fats to break down gradually, tenderizing the beef, so it has a stretching juicy quality in the end.
  • Remove the brisket from the oven and place it on a cutting board. Tent the brisket with a sheet of foil, and let it rest for 3 hours so the juices redistribute evenly throughout the brisket.
  • When cutting the brisket make sure to go against the grain. Slice the brisket in pencil width slices. *See Notes

1-1¼kg/2¼-2¾ lb boned and rolled beef brisket
5 tbsp vegetable oil
large knob of butter
2 large onions, halved and sliced
2-3 celery sticks, finely chopped
2 carrots, sliced
200-250g/8-9oz large flat mushrooms, stalks chopped and heads thinly sliced
500-550ml bottle brown ale or stout
a few fresh thyme sprigs
2 bay leaves
1-2 tsp light muscovado sugar
500g parsnips, cut into wedges
1 tbsp Dijon mustard
chopped fresh parsley or thyme to serve

Steps:

  • Preheat the oven to 190C/Gas 5/fan oven 170C. Wash and dry brisket and season. Heat 2 tablespoons of oil in a deep casserole and brown beef all over. Remove from pan. Turn down heat, add butter and fry the onions, celery, carrots and mushroom stalks for 6-8 minutes.
  • Return beef to pan and add beer, thyme, bay leaves and sugar. Add water if necessary so the liquid comes about two-thirds up the beef. Season, bring to a simmer, cover tightly, and cook in the oven for 20 minutes. Reduce heat to 160C/Gas 3/fan oven 140C and cook for 2 hours, turning twice, until tender.
  • An hour before the beef is done, toss the parsnips in oil, season and roast on a baking tray above the beef for 50 mins - 1 hr until tender, turning once.
  • Turn oven up to 190C/Gas 5/fan oven 170C. Lift out the beef, tent with foil and keep warm. Stir the parsnips and mushroom caps into the beef juices. Check seasoning; add water if needed. Cover and cook in the oven for 20-25 minutes until mushrooms are tender.
  • To serve, use a slotted spoon to remove vegetables and arrange round the beef. Spoon off the excess fat from the juices, then whisk in the mustard and pour into a jug. Moisten the beef with a little juice and scatter with parsley or thyme.
