For a simple but sensational side dish, I throw together this refreshing broccoli salad with raisins. I adjusted a friend's recipe to cut a few calories. The raisins add sweetness, and the bacon gives it a nice crunch. -Angela Oelschlaeger, Tonganoxie, Kansas

Number Of Ingredients 7

4 cups fresh broccoli florets (1 medium bunch)
3/4 cup golden raisins
1 small red onion, chopped
1/2 cup Miracle Whip
1 tablespoon white vinegar
2 teaspoons sugar
3 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the broccoli, raisins and onion. In a small bowl, combine the Miracle Whip, vinegar and sugar. Pour over broccoli mixture; toss to coat. Sprinkle with bacon. Refrigerate for at least 2 hours before serving.

2 cups fresh broccoli
1/2 cup green onion (chopped)
3/4 cup seedless raisins
4 slices bacon (cooked and crumbled)
1/3 cup shelled sunflower seeds
6 tablespoons mayonnaise
2 tablespoons cider vinegar
2 tablespoons sugar
1/4 teaspoon pepper
1/2 teaspoon salt

Steps:

  • over and soak raisins with water till plump, drain.
  • Combine broccoli, onion, bacon, sunflower seeds, and raisins and set aside.
  • Mix the mayonnaise, vinegar, sugar, salt, and pepper.
  • Toss with salad, chill until served.
  • Makes about six servings.

6 cups chopped broccoli
1 small red onion, finely chopped
1 cup raisins
1 cup mayonnaise
½ cup white sugar
2 tablespoons white vinegar
1 (3 ounce) package sunflower seeds

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and cool. Chop bacon.
  • Mix broccoli, bacon, red onion, and raisins in a bowl.
  • Whisk mayonnaise, sugar, and vinegar together in a bowl; stir dressing into broccoli mixture until evenly coated. Cover bowl and refrigerate for flavors to blend, about 1 hour. Sprinkle salad with sunflower seeds.

Number Of Ingredients 8

2 bunch broccoli, washed & cut up into bite size pieces
1 small red onion, chopped, i used vidalia
1/2 c raisins, i used twice as much
3/4 c sunflower seeds
1 lb regular or turkey bacon, cooked crisp and crumbled
1 c mayonnaise (regular or light)
1/2 c sugar or splenda
4 Tbsp apple cider vinegar

Steps:

  • 1. The broccoli yield about 5 cups when cut into bite size pieces. Pour into a large bowl.
  • 2. These are some of the main ingredients used for the salad.
  • 3. Cut onion into quarters then eights, and process in a food processor into small pieces. The onions takes on the flavor of the smoked bacon. They marry well together.
  • 4. Now add the chopped bacon and onion mixture to the bowl of broccoli flowerettes. Add in the sunflower seeds as well.
  • 5. Stir to mix together.
  • 6. Add the mayonnaise, sugar or splenda and apple cider vinegar to a medium size bowl and whisk or beat together till blended.
  • 7. Mixture should be creamy and smooth. I added the raisins also to the salad dressing and allowed them to absorb the flavor and moisture of the dressing for about 10 minutes.
  • 8. Now pour salad dressing mixture over the broccoli and stir to blend together. If time permits allow to sit and flavors marry before serving. About 1/2 hour to 45 minutes.
  • 9. Stir just before serving. Then serve and enjoy.

This broccoli salad has all the goodies you're craving in the classic side dish! Easy, perfect for BBQ and picnic season, delicious enough to make it a meal! My version is made healthier with an easy homemade dressing that's paleo and Whole30 friendly.

6 cups broccoli florets
8 slices nitrate free bacon (sugar free for Whole30 cooked and crumbled (see notes for my method**))
2/3 cup chopped red onion (about 1 small onion)
1/2 cup raisins (or juice-sweetened dried cranberries***)
1/3 cup roasted sunflower seed kernels
3/4 cup homemade mayo or store bought paleo mayo*
1 Tbsp fresh lemon juice
1/2 tsp onion powder
1/2 tsp garlic powder
1 teaspoon dried chives
1/2 teaspoon dried parsley
1/4 tsp black pepper
Sea salt to taste

Steps:

  • In a large bowl, combine the broccoli, onion, cooked and crumbled bacon, raisins and sunflower seeds. In a separate medium bowl, whisk together the dressing ingredients. If you are using a store bought paleo ranch, skip this step.
  • Toss the dressing with the broccoli mixture, cover and refrigerate for 15 minutes-1 hour before serving. This allows the dressing to settle into the broccoli for the best flavor. You can also dress the salad up to 8 hours before serving, keeping it covered in the refrigerator. Enjoy!

1 bunch green onions chopped
1 medium red onion, chopped 1 cup
1 1/2 medium yellow onion, chopped
2 1/2 c radishes chopped
9 c fresh broccoli floweretts
8 c cauliflower, small florets
1 c golden raisins, plumped
2 c real bacon bit crumbles
2 c miracle whip
1 c mayonnaise
1 1/3 c apple cider vinegar
2 c splenda zero calorie sweetener

Steps:

  • 1. Add the raisins to a medium size bowl, cover with water, then cover bowl with saran wrap and Microwave for about 5 minutes. Remove and allow raisins to sit and plump as the water cools.
  • 2. I chose to process the green, yellow and red onions in the food processor. I also processed the radishes in the food processor, so as to avoid having big large chunks in the salad, but you may want large chunks in yours so do what suits you and your family best.
  • 3. For the cauliflower, and Broccoli, I did it by hand, as I didn't want it to be like crumbs, I wanted a bit of texture to the salad.
  • 4. Drain raisins, and allow to cool completely before adding to salad. Using a large bowl add in the broccoli, cauliflower, Bacon, Radishes, and chopped onions and raisins. Stir to mix together.
  • 5. In a separate bowl add the mayonnaise & miracle whip, Splenda, & apple cider vinegar, then whisk to blend together. MY APOLOGIES FOR THE PICTURES NOT BEING AS CLEAR AS THEY USUALLY ARE.
  • 6. Pour Dressing mixture over salad mixture, and stir with a large spoon to mix together. Pour into a large container, and refrigerate to allow the flavors to come together before serving. NOTE: MAY NEED TO STIR SALAD BEFORE SERVING . This salad is very tasty, but not as waist friendly because of the Mayonnaise & Bacon, but I bet you will love it, so eat sparingly & savor every bite. smile
