EASY ROQUEFORT POTATO GRATIN



Easy Roquefort Potato Gratin image

This potato dish is a must served with prime rib! You can use gorgonzola in place of Roquefort. This makes a huge amount so it is a perfect dish to serve for a dinner party, of coarse you can cut the recipe in half. Please don't leave out the dried rosemary, it really adds extra flavor.

5 1/2 lbs potatoes (peeled and cut into 1/8-inch very thin slices)
salt and pepper
2 cups whipping cream
6 ounces Roquefort cheese, crumbled
3/4 cup dry breadcrumbs (can use a bit more breadcrumbs)
1 -2 teaspoon dried rosemary
1/3 cup butter, cut into tiny pieces

Steps:

  • Set oven to 425 degrees.
  • Butter a 15 x 10-inch baking dish (preferably glass).
  • Layer potatoes in prepared dish, sprinkling each layer with salt and pepper.
  • Bring the whipping cream to a boil in a saucepan; reduce heat to medium and add in Roquefort, whisk until cheese melts.
  • Pour the cheese/cream mixture over the potatoes.
  • Cover with foil.
  • Bake for about 1 hour, or until potatoes are desired tenderness.
  • Set oven to broil.
  • In a small bowl mix together the breadcrumbs and dried rosemary.
  • Sprinkle over potatoes.
  • Dot with butter pieces, and broil until the crumb mixture is golden brown (watch closely) about 3-4 minutes.
  • Let stand for 10 minutes before serving.

3 tablespoons unsalted butter
2 large yellow onions, thinly sliced
1 teaspoon minced garlic
3 lbs yukon gold potatoes, peeled and cut into 1-inch chunks
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/8 teaspoon cayenne
1 bay leaf
4 cups chicken stock
1 cup light cream
1/2 cup heavy cream
1 cup crumbled Roquefort cheese, , or other creamy blue cheese
2 teaspoons chopped fresh thyme
2 tablespoons tawny port
6 slices bacon, cooked and crumbled

Steps:

  • In a large saucepan, melt the butter over medium-high heat.
  • Add the onions and cook, stirring, until just beginning to caramelize, about 10 minutes.
  • Add the garlic and cook, stirring, for 30 seconds.
  • Add the potatoes, salt, pepper, cayenne, and bay leaf, and cook, stirring, for 3 minutes.
  • Add the stock and bring to a boil.
  • Reduce the heat to medium-low and simmer, covered, until the potatoes are tender, about 25 to 30 minutes.
  • Remove and discard the bay leaf.
  • Remove from the heat and puree until smooth.
  • Add the light and heavy creams, and stir well to blend.
  • Gently reheat and barely simmer; careful not to boil.
  • Add 3/4 cup of the cheese, the thyme, and Port, and whisk until the cheese is just melted.
  • Adjust the seasonings, to taste.
  • Top each serving with some of the remaining 1/4 cup of cheese and the crumbled bacon.

Potatoes au Gratin image

The humble potato gets the red carpet treatment in this easy yet luxurious recipe for potatoes au gratin. Sliced Yukon Gold or russet potatoes (you can use either, but don't use a combination as they cook at different rates) are layered with half-and-half or heavy cream, topped with butter and grated cheese, then baked until golden and bubbly. Feel free to play around: Add leeks, onions, garlic or more cheese between the layers. Experiment with fresh or dried herbs. It's incredibly adaptable and practically foolproof. Just don't forget to season with salt and pepper as you go. Like all potato dishes, it needs plenty of seasoning.

3 to 4 pounds potatoes, peeled and cut into 1/4-inch slices
Kosher salt and black pepper
2 tablespoons unsalted butter
2 to 3 cups half-and-half or heavy cream
1/4 cup grated Parmesan or Gruyère
Pinch of nutmeg (optional)

Steps:

  • Heat oven to 400 degrees. Seasoning each layer with salt and pepper as you go, layer the potatoes in a 10- or 12-inch ovenproof skillet.
  • Dot the top with 2 tablespoons butter. Pour in half-and-half. (It should come about 3/4 of the way to the top.)
  • Bring to a boil over medium-high heat. Reduce to low and cook for 10 minutes, uncovered, until the half-and-half has reduced by about half.
  • Transfer to the oven and bake until the top is golden brown, about 10 minutes. Reduce heat to 300 degrees and cook until the potatoes are fork tender and the top is nicely browned, about 8 minutes more. Top with grated cheese and return to the oven until the cheese is melty and golden brown, about 3 to 5 minutes. Sprinkle with a pinch of nutmeg, if using, and serve.

Double-Baked Roquefort Potatoes image

These are an elegant accompaniment to your holiday roast (like my Recipe #321011), and they're relatively simple to make. Best of all, you can prepare them the day before your big meal, and just pop them in the oven about a half an hour before serving.

6 (10 -12 ounce) russet potatoes, scrubbed
2/3 cup crumbled Roquefort cheese
1/2 cup sour cream
salt and pepper (to taste)
6 tablespoons freshly grated parmesan cheese
2 tablespoons butter, cut into small pieces
chopped fresh parsley

Steps:

  • Preheat oven to 375 degrees.
  • Pierce potatoes with fork. Place potatoes directly on oven rack. Bake until potatoes are tender, about 1 hour 15 minutes. Transfer to baking sheet; cool 5 minutes.
  • Halve each potato lengthwise. Scoop flesh from potatoes, leaving 1/4-inch-thick shell; place flesh in large mixing bowl. Add crumbled Roquefort cheese and sour cream to potato flesh; mash until smooth. Season mixture with salt and pepper.
  • Spoon potato mixture into 8 potato shells, mounding slightly and dividing equally (reserve remaining 4 potato shells for another use). Place potatoes on baking sheet. Sprinkle Parmesan cheese over potatoes. Dot with butter. (Can be made 1 day ahead. Cover and refrigerate.).
  • Preheat oven to 400 degrees. Bake potatoes until heated through and beginning to brown on top, about 25 minutes. Sprinkle parsley over potatoes and serve.

  • Preheat broiler. Mix breadcrumbs and rosemary in small bowl. Sprinkle over potatoes. Dot with butter. Broil until butter melts and crumb mixture is golden brown, watching closely, about 4 minutes. Let stand 10 minutes. Serve warm.
