PEAR AND ROQUEFORT TART

Pear and roquefort tart image

Pear and blue cheese is a classic combination and one that Eric Lanlard puts to good use in this savoury tart recipe.

Provided by delicious. magazine

Categories     Savoury tarts

Time 1h20m

Yield Serves 8

Number Of Ingredients 16

For the pastry
225g plain flour, plus extra for dusting
110g chilled unsalted butter, cut into pieces, plus extra for greasing
1 free-range egg yolk, plus an extra yolk, beaten, to seal (see tips)
2-3 tbsp chilled water
For the filling
3 ripe pears, quartered and cored (we used conference pears)
2 tsp olive oil
100g British free-range smoked bacon lardons
150g mascarpone
2 medium free-range eggs, beaten
50ml whole milk
2 tsp chopped fresh thyme, plus extra sprigs to garnish
150g roquefort cheese, crumbled
You will also need
23cm fluted tart tin with a removable base

Steps:

  • To make the pastry, put the flour and a pinch of salt in a bowl, then add the chilled butter and rub in, using your fingers, until the mixture resembles fine breadcrumbs. Stir in the egg yolk, then gradually add just enough chilled water to bring the mixture together into a firm dough - don't add too much water or the dough may become sticky. (Alternatively, whizz the flour, salt and butter in a food processor until it resembles fine breadcrumbs, then add the egg yolk and the water. Pulse to bring the dough together.)
  • Roll out the dough into a circle on a lightly floured surface to the thickness of a £1 coin, then loosely roll the pastry around the rolling pin. Unroll it over a lightly greased 23cm fluted tart tin with a removable base, then gently push the pastry into the tin using a little ball of floured pastry to help you ease it into the tin's edges and flutes. Roll the rolling pin over the top to trim the edges. Prick the base all over with a fork, line the case with baking paper and fill with baking beans. Chill for 30 minutes.
  • Meanwhile, heat the oven to 200°C/fan180°C/gas 6. Blind bake (see our how to video below) the pastry case for 20 minutes, then remove the paper and beans and bake for 10 minutes more until the pastry begins to turn golden. Remove from the oven, brush the pastry with beaten egg yolk (see tips), then return to the oven for 5 minutes.
  • Arrange the pears in neat circles to cover the base of the case. Bake for 10-12 minutes until the pears begin to soften. Heat the oil in a frying pan and fry the lardons until golden, then set aside. Turn down the oven to 180°C/fan160°C/gas 4.
  • Put the mascarpone in a bowl and stir briefly to soften, then add the beaten eggs and milk. Stir until smooth and combined. Season with a little salt and lots of black pepper (the bacon and roquefort are salty), then stir in the chopped thyme.
  • Scatter the cooked lardons and the roquefort over the softened pears, then pour over the mascarpone mix. Sprinkle over some small thyme sprigs and bake for 25 minutes or until the filling is set and golden. Once cooked, leave to cool in its tin before removing.
  • Serve at room temperature with lightly dressed salad leaves.

ROQUEFORT PEAR SALAD

Roquefort Pear Salad image

This is the best salad I've ever eaten and I make it all the time. It is tangy from the blue cheese, fruity from the pears, and crunchy from the caramelized pecans. The mustard vinaigrette pulls it all together.

ROQUEFORT AND PEAR STRUDEL

Provided by Josie Le Balch

Categories     Appetizer     Bake     Blue Cheese     Pear     Pecan     Winter     Bon Appétit     Vegetarian     Pescatarian     Peanut Free     Soy Free     Kosher

Yield Makes 8 servings

Number Of Ingredients 14

Dough:
2 cups all purpose flour plus additional for dusting
3/4 cup warm water (105°F to 115°F)
1/4 cup vegetable oil
1/2 teaspoon salt
Filling:
1 1/2 teaspoons unsalted butter plus 1/4 cup (1/2 stick) unsalted butter, melted
1 1/2 pounds firm but ripe Bosc pears, peeled, halved, cored, cut into 1/3-inch cubes (about 3 1/2 cups)
6 ounces Roquefort cheese, crumbled (about 1 1/3 cups)
1/2 cup chopped toasted pecans
1 tablespoon all purpose flour
1 1/2 teaspoons fresh lemon juice
2 tablespoons sugar
2 tablespoons plain dried breadcrumbs

Steps:

  • For dough:
  • Combine 2 cups flour, 3/4 cup warm water, oil, and 1/2 teaspoon salt in large bowl of stand mixer fitted with paddle attachment. Mix on medium speed 3 minutes (dough will be sticky). Remove strudel dough from bowl and divide in half. Form each dough half into ball; wrap each in plastic. Refrigerate 1 dough ball overnight for strudel; freeze second dough ball for another use.
  • For filling:
  • Melt 1 1/2 teaspoons butter in heavy large skillet over high heat. Add pears and sauté until soft, about 4 minutes. Strain pear mixture, discarding juices, then transfer pears to rimmed baking sheet, spacing apart; cool completely. Transfer cooled pears to large bowl. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Add cheese, pecans, flour, and lemon juice to pears and toss gently to combine.
  • Place 36x24-inch cotton cloth or clean cotton tablecloth on large work surface; secure all 4 corners to work surface with tape to keep in place. Dust cloth lightly with flour. Unwrap refrigerated strudel dough and place in center of prepared cloth; sprinkle lightly with flour. Using rolling pin, roll out dough as thinly as possible without tearing, dusting dough lightly with flour as needed to prevent sticking.
  • Line rimmed baking sheet with parchment paper. Slide hands under center of dough and gently pull with palms (not fingers) toward edges, being careful not to tear dough and stretching to thin rectangle. Gently pull dough edges with floured fingertips to form 34x18-inch rectangle. Using sharp knife, trim edges to form 33x17-inch rectangle. Cut dough rectangle lengthwise in half, forming two 33x8 1/2-inch rectangles. Brush each dough rectangle lightly with melted butter, then sprinkle each evenly with 1 tablespoon sugar and 1 tablespoon dried breadcrumbs. Starting 1 inch in from 1 short end of dough, spoon filling crosswise atop each dough rectangle in 1 1/2-inch-wide log, leaving 1-inch plain border on long sides of both rectangles. Starting at edge of cloth closest to filling and using cloth as aid, lift edge of cloth and start rolling up strudel dough (not cloth) over filling, enclosing filling completely and forming 2 strudels. Tuck in short ends of dough and pinch to seal. Transfer strudels to prepared baking sheet. Brush strudels all over with melted butter. Chill at least 1 hour and up to 6 hours.
  • Position rack in bottom third of oven and preheat to 375°F. Bake strudels until golden brown, about 40 minutes. Cool strudels on baking sheet 30 minutes.
  • Cut strudels crosswise into 1-inch-thick slices. Serve warm or at room temperature.
  • Test-Kitchen Tip:
  • Although only half of the strudel dough is used in this recipe, you'll need to make a full batch of the dough to achieve the best texture. The remaining dough half can be stored airtight in the freezer for up to one month.

MULLED PEARS WITH ROQUEFORT DRESSING

Mulled pears with Roquefort dressing image

Pear, blue cheese and toasted nuts is a combination made in heaven

Provided by Sara Buenfeld

Categories     Dinner, Starter

Time 25m

Number Of Ingredients 10

3 firm, shapely Conference pears , peeled, halved and cored, but stalks left on
300ml red wine , such as Merlot
3 tbsp caster sugar
1 cinnamon stick
handful toasted pecan nuts
couple handfuls watercress
1 tsp white wine vinegar
3 tsp olive oil
100g roquefort , crumbled
125ml crème fraîche

Steps:

  • Put the pears in a pan large enough to fit them in a single layer on the base. Pour over the wine and 300ml water, sprinkle over the sugar, then add the cinnamon stick. Put a small saucepan lid on top so the pears stay submerged under the liquid, then simmer for 10 mins until tender, but not mushy. Cool in the liquid, then chill until ready to eat. Can be made the previous day.
  • Make the dressings. First, mix the vinegar and oil with seasoning in a bowl. Make the Roquefort dressing by slowly warming the cheese in a pan with the crème fraîche.
  • Toast the pecans in a dry pan, then set aside. Take the pears from their poaching liquid, slice them three-quarters of the way up from the base toward the stalk end, then fan out on plates. Toss the watercress in the vinegar and oil dressing, pile onto the plates, then sprinkle over the nuts. Pour the warm Roquefort dressing around the pears or serve in shot glasses or mini jugs on the plates for guests to pour themselves.

PEAR STRUDEL

Pear Strudel image

Provided by Sandra Lee

Time 2h25m

Yield 4 servings

Number Of Ingredients 11

1 ( 9-ounce) box pie crust mix
1/3 cup apple cider
2 tablespoons all-purpose flour, for rolling
4 pears, such as Red Bartlett
splash of lemon juice
2 tablespoons unsalted butter
1/4 cup brown sugar
1 1/2 teaspoons pumpkin pie spice, divided
1 large egg
2 tablespoon sugar
1 cup heavy cream

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, combine the pie crust mix and 1/3 cup cold apple cider until it forms a ball. Wrap in plastic wrap and chill one hour in the refrigerator.
  • Peel and core the pear and chop into approximately 1/2 inch pieces, (reserve 1 cup for Round 2 Recipe Cabbage and Pear Slaw, toss with a splash of lemon juice to prevent browning)
  • In a large skillet over medium heat, add the butter, brown sugar and pumpkin pie spice. When it is melted, add the pears. Cook until the pears are slightly softened and the liquid thickens, about 5 to 6 minutes. Let cool.
  • On a floured surface or on parchment paper, roll out the chilled dough into a 12-inch-by-10-inch rectangle. Spread the cooled pear mixture in the middle of the rectangle, fold in the short ends, and roll the crust over enclosing the pear mixture. Place the strudel, seam side down, onto a baking sheet.
  • In a small bowl beat the egg with a tablespoon of water. In another small bowl mix together the remaining 1/2 teaspoon pumpkin pie spice and sugar. Brush the strudel with the egg wash and sprinkle with half the spiced sugar. Make five small slits on top to let the steam escape. Bake until golden brown, about 25 to 30 minutes. Let cool for 30 minutes.
  • When you are ready to serve, whip the cream with the remaining pumpkin pie spice and sugar mixture. Serve the strudel topped with whipped cream.

ROQUEFORT CHEESE AND APPLE STRUDEL WITH SPICED PICKLED ...
2015-11-09 Delia's Roquefort Cheese and Apple Strudel with Spiced Pickled Pears recipe. In this strudel I have used two cheeses: Roquefort, which is a sheep’s cheese, and to go with it is a mild goat’s cheese. The apple inside is not meant to cook through but to remain crunchy. This, together with walnuts, leeks and celery, makes a wonderful combination of flavours and textures.
