1 cup brown sugar
⅔ cup sweetened condensed milk
½ cup corn syrup
¼ cup butter
½ teaspoon vanilla extract

Steps:

  • Pour popcorn into a large bowl.
  • Combine brown sugar, condensed milk, corn syrup, butter, and vanilla extract in a saucepan over medium heat. Cook, stirring often, until a candy thermometer reads 234 degrees F (112 degrees C), about 5 minutes. Pour over popcorn; stir to coat evenly.
  • Scoop some of the popcorn mixture onto a piece of plastic wrap. Gather and twist the plastic wrap to shape into a ball. Place popcorn ball on a baking sheet lined with parchment paper; repeat with remaining mixture. Let cool until set, about 5 minutes.

1/4 cup Challenge Unsalted Butter (plus more for greasing your hands)
2 teaspoons water
2 1/2 cups powdered sugar
1 cup mini marshmallows (see note)
20 cups plain popped popcorn (see note)
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Steps:

  • Place popcorn in a large pot or bowl.
  • Melt butter in a medium saucepan over medium heat. Add corn syrup, water, powdered sugar and marshmallows. Heat and stir the mixture until it boils. Remove from heat and stir in salt and vanilla.
  • Pour the mixture carefully over the popcorn and stir to coat each kernel. Do this carefully - the mixture is very hot.
  • Grease your hands with additional butter and shape coated popcorn into popcorn balls. Work quickly to make all the balls before they cool.

This Root Beer Popcorn recipe is super easy to make and perfect for entertaining during the holidays, or any time of the year. This a family favourite for movie night.

8 cups popped popcorn
1/2 cup unsalted butter
1 cup brown sugar
1/2 cup root beer
1 cup corn syrup
1 tsp salt
1 tsp vanilla extract
1 tsp root beer extract (optional)

Steps:

  • Line a large cookie sheet with parchment paper. Set aside.
  • Pour popcorn into a large bowl, should be twice the size of the amount of popcorn you are using. I use a small roasting pan quite often for mixing candy popcorns. Set this aside.
  • Place a large saucepan on the stove, place the butter in the saucepan followed by the brown sugar. Turn heating element on medium heat and cook the mixture until the sugar dissolves. This should take about 3 to 5 minutes, more or less depending on your heat level and pan.
  • Add the root beer and cook over medium heat for about 3 minutes, bringing it to almost a boil. You want it bubbling a bit across the surface.
  • Add the corn syrup and allow to cook over medium-high heat until it begins to thicken. It should bubble up throughout the process, almost like making fudge, it will start to bubble and thicken after a few minutes. Stir every so often to make sure you don't heave the heat too high. You don't want the mixture to stick to the bottom of the pan.
  • Once it begins to thicken considerably, and starts to resemble caramel (takes about 5 to 8 minutes, or so) you can take it off the heat, turn off the element, and add the salt, and vanilla. You can also add the root beer extract if you're using it. It just gives a stronger root beer flavour. I did not use it for this batch of popcorn, but do use it on occasion depending on how strong I want the flavour to be. Stir the mixture until smooth. Allow to cool for about 5 to 7 minutes so when you pour it over the popcorn that the popcorn won't shrivel up.
  • Once it's cool you can pour it over the popcorn, then use a big spoon to mix everything up really well. You want to coat all the popcorn thoroughly. Once it's even coated transfer it to the cookie sheet you prepared earlier. Spread it out evenly on the pan. Allow to cool on the pan until the root beer mixture hardens up. Drying takes about 1 to 2 hours. Don't put it in the oven or you'll just melt the mixture again!
  • You can stir it every 30 minutes so it doesn't stick together. Personally I like it to stick together a little bit so I leave mine in chunky pieces.
  • Once dry you can serve it or place it in an airtight container. Best if eaten on day 1, but will keep for 2 to 3 days. If it lasts that long.
  • Serve with a bit old root beer loving smile!

Steps:

  • In a small pot over medium high heat combine corn syrup, butter, sugar, marshmallows, water, vanilla and salt. Keep stirring until mixture comes to a boil.
  • Separate popcorn into bowls depending on how many different colors you are using. If you are using 5 colors, separate popcorn into 5 bowls - this will make it safer so you don't mix colors.
  • Carefully (it's hot) pour your syrup mixture into bowl of popcorn. Make sure to equally distribute into each bowl of popcorn. For example if you are using 5 colors, separate the syrup into 5 equal parts.
  • Add 2 drops of food coloring to the bowl.
  • With a spoon stir popcorn so every piece is coated with syrup mixture. Tip: Use a different spoon for each bowl so you don't mix colors.
  • Using your hands shape into popcorn balls (whatever size you prefer). You have to do this quickly before the syrup cools off. You can use food safe plastic gloves sprayed with nonstick spray to make this easier to do.

16 cups popped popcorn ((around 2/3 cup unpopped kernels))
5 tablespoons unsalted butter
1 16-ounce package mini marshmallows
Purple gel food coloring (or color of your choice)
Halloween sprinkles
Candy eyes
Paper straws

Steps:

  • Place a piece of wax paper or parchment paper on the counter top for the popcorn balls to cool once they are made.
  • In a large stock pot or Dutch oven, melt the butter over medium heat.
  • Add the marshmallows and stir until melted. TIP: use a silicon spoon or spatula sprayed with non-stick spray to keep the mixture from sticking.
  • Remove the pan from heat and add three to four drops of purple gel food coloring. Stir until well mixed and the marshmallows are bright purple (or color of your choice).
  • Add the popcorn to the pan and stir to coat.
  • Spray hands with non-stick cooking spray and roll popcorn mixture into balls aproximately 3-inches in diameter. Squeeze to compact the balls.
  • Roll the popcorn ball in sprinkles, and press candy eyes into them (if desired).
  • Stick a paper straw into the top of each popcorn ball and allow to cool completely on the wax paper before serving. NOTE: if the popcorn balls begin to separate when the straw is inserted, squeeze the ball together and allow the set.

1 cup granulated sugar

1 drop of Americolor "Orange" food coloring gel or equal

Steps:

  • This recipe can also be doubled successfully. 1. Pop the popcorn kernels. Set aside in 2 large bowls. 2. Over medium heat, melt the butter in a medium sauce pan. 3. Add the corn syrup and water. Stir. 4. Add the sugar. Make sure not to let any sugar stick to the edges of the pan. If one grain of sugar is left undissolved, it can cause the whole batch to crystallize. 5. Bring to a boil and continue to cook until the mixture reaches 235-245 degrees. (Please use a candy thermometer). It is important for the mixture to reach this temperature, if it doesn't the candy will not harden properly. 6. Add the baking soda and stir quickly as the mixture begins to bubble. Once bubbly and frothy, remove the pan from heat. 7. Add the flavor and food coloring until mixed in. 8. Pour over the popped popcorn in both bowls. Fold into the popcorn until evenly coated.

1 cup granulated sugar
1/2 cup Karo® Light OR Dark Corn Syrup
1/4 cup butter or margarine
1/2 teaspoon salt
1 teaspoon pure vanilla extract
1/2 teaspoon baking soda
3 tablespoons festive sprinkles, optional

Steps:

  • Spray large roasting pan sprayed lightly with nonstick cooking spray; add popcorn and place in 300ºF oven until warm.
  • Combine sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to boil over medium heat. Continue stirring and boil 2 minutes.
  • Remove syrup mixture from heat; stir in vanilla and baking soda.
  • Pour syrup mixture over warm popcorn stirring to coat well. Add in sprinkles and mix to combine.
  • Once mixture has cooled slightly and is able to be touched, spray your hands with nonstick cooking spray. Working quickly to shape twelve 3-inch popcorn balls.
  • Cool completely. Wrap individually in plastic wrap.
