My husband is a huge fan of pulled pork sandwiches, so my sister shared this incredibly easy recipe with me. At potlucks and family dinners, nobody can get enough of this root beer-braised version. -Carolyn Palm, Radcliff, Kentucky

1 boneless pork shoulder butt roast (3 to 4 pounds)
1 can (12 ounces) root beer or cola
1 bottle (18 ounces) barbecue sauce
12 kaiser rolls, split

Steps:

  • Place roast in a 4- or 5-qt. slow cooker. Add root beer; cook, covered, on low until meat is tender, 8-10 hours., Remove roast; cool slightly. Discard cooking juices. Shred pork with two forks; return to slow cooker. Stir in barbecue sauce. Cook, covered, until heated through, about 30 minutes. Serve on rolls. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

1 pork tenderloin or roast (about 2 pounds), cut in half
1 tablespoon seasoning salt
1 can (12 ounces) root beer
1 bottle (4 ounces) liquid smoke
1 cup Sassy Sauce, recipe follows, or your favorite barbeque sauce
8 hamburger buns
Spicy bread and butter pickle chips, for serving
1 cup ketchup
1/2 cup brown sugar
1/4 cup Dijon mustard
1/2 cup molasses
1/2 teaspoon garlic salt
1/2 teaspoon fresh ground pepper
1 tablespoon liquid smoke
2 tablespoons Worcestershire sauce
1/8 teaspoon cayenne pepper

Steps:

  • Place the pork tenderloin or roast in the bottom of a slow cooker and sprinkle with the seasoning salt. Pour the root beer and liquid smoke over the top. Place the lid on the slow cooker and cook on low for 8 hours. Once the pork is done, remove from the pan and shred with a fork. Place into a bowl and add in the Sassy Sauce, as well as 1/2 cup of the juice from the slow cooker. Serve on a bun with bread and butter pickles.

1 (3 1/2) pound boneless pork shoulder
8 fluid ounces root beer
3 tablespoons brown sugar
1 tablespoon ground cumin
1 tablespoon paprika

This root beer pulled pork is juicy, tender and sticky sweet with a bite, and gets a dose of reduced root beer for an extra flavor punch!

4 lb pork shoulder (also called pork butt)
2 tsp chili seasoning
2 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp smoked paprika
1 tsp dry mustard
1 tsp ground fennel seed ((See Note 1))
1/2 tsp celery seed
1 large onion (chopped)
24 oz root beer ((2-12 oz bottles))
24 oz Kansas City Style BBQ sauce (or your favorite recipe or store brand)

Steps:

  • Mix the chili, garlic and onion powders, salt, dry mustard, paprika and ground fennel and celery seeds together with a whisk in a small bowl. Rub the pork shoulder all over and press dry rub into the meat. Set aside.
  • Chop an onion and place in the bottom of a slow cooker. Place the dry rubbed pork shoulder on top of the onions and pour 1 bottle of root beer and your favorite BBQ sauce over the pork. Cover and cook on Low for 8 hours.
  • Pour 1 bottle of root beer in a small saucepan. Bring to a boil and turn to medium-low and simmer for 15-20 minutes until reduced to about 1/3 cup of syrup.
  • Remove cooked pork to a plate, remove any bone and pull the pork (shred). Set aside.
  • Pour the onion, root beer and BBQ sauce mixture from slow cooker into the saucepan with the root beer reduction and either use a hand immersion blender or pour it into a blender and purée. Cook and reduce until it is a catsup like consistency and pour over the pulled pork.
  • Serve the glazed pulled pork on a roll or bun of choice with coleslaw.

2 ½ teaspoons garlic powder
2 teaspoons onion powder
1 tablespoon kosher salt
2 teaspoons black pepper
1 teaspoon ground coriander
1 teaspoon smoked paprika
3 lb pork shoulder, cut into 6-8 equal pieces
1 tablespoon canola oil
½ medium yellow onion, minced (about 1 cup - 150 G)
1 can root beer
3 tablespoons distilled white vinegar
½ cup barbecue sauce
½ medium green cabbage, shredded
½ cup red onion, pickled
1 carrot, shredded
1 tablespoon apple cider vinegar
2 tablespoons mayonnaise
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Steps:

  • Make the pulled pork: In a small bowl, combine the garlic powder, onion powder, salt, pepper, coriander, and paprika.
  • Add the pork to a large bowl and sprinkle with the spice mixture, tossing to coat evenly.
  • Turn an Instant Pot to the sauté setting. Add the canola oil and heat on medium heat. Working in batches, add the pork to the pot in batches and brown all over, 2-3 minutes per side. Transfer to a cutting board.
  • Add the onion to the pot and cook for 3-5 minutes, scraping up any browned bits from the bottom of the pot, until the onion is soft and translucent. Add the root beer, vinegar, and barbecue sauce to the pot and stir to combine.
  • Return the pork to the pot, nestling the pieces in together so they fit in a single layer and are sitting evenly in the cooking liquid. Put on the lid and seal the pressure valve.
  • Cook on normal pressure for 60 minutes. Once the timer has stopped, let the valve naturally release for 15 minutes before manually opening the valve.
  • While the pork is cooking, make the pickled onion slaw: In a medium bowl, combine the cabbage, pickled onions, carrot, vinegar, mayonnaise, salt, and pepper. Toss well to coat. Chill in the refrigerator until ready to serve.
  • Using tongs, transfer the pork from the Instant Pot to a large bowl. Turn Instant Pot to the sauté setting and reduce the braising liquid by half, 10-12 minutes.
  • Meanwhile, use 2 forks to shred the pork into small pieces, discarding any large pieces of fat or sinew.
  • Starting with ½ cup (120 ml), gradually add the reduced braising liquid back to the pork until juicy and well-coated.
  • To serve, spread barbecue sauce on both sides of each roll. Place a generous scoop of pork on each bottom bun and top with a small scoop of pickled onion slaw. Top with the top bun and serve.

  • Spray slow cooker with cooking spray. Add pork, fat-side (white-side) up. Add root beer, spices, and enough water to cover the roast.
  • Cook on high for 30-60 minutes, then cook on low for another 5-8 hours. Alternately, skip the high temp and just cook on low for 8-10 hours (that's what I usually do, as I'm running out the door to work as soon as I put the roast in).
  • Carefully remove pork (tends to fall apart and splash hot liquid). Let cool enough to touch, then separate meat from fat using two forks with help from your bare hands. (To be honest, I mostly use my bare hands if it's just me and my husband eating it.) Shred the pork with the forks and/or your clean hands. Discard fat and cooking liquid. Use immediately or freeze.
  • Rinse out the slow cooker. Put pulled pork back in the pot and add 1/4 cup to 1/2 cup of water to ensure moistness. If you're using BBQ sauce, add it to the pork and mix to combine. Don't be stingy!
