1 pint vanilla bean ice cream
2 quarts root beer

Steps:

  • Hang a large, well packed scoop of vanilla ice cream on the edge of a fountain glass or other tall drinking glass. Fill the glass 3/4 full with root beer. Set the fountain glass on a salad plate, underlining the glass for overflow. Serve floats with straws and parfait spoons. When you are ready to enjoy the floats, knock the ice cream into the root beer and watch it fizz up as the ice cream floats. Yummy! This is the simplest and my most favorite fountain drink!

This grown-up version of a root beer float is fun enough to drink in a fancy frosted glass with a curly straw. I prefer International Delight® Cold Stone Creamery Sweet Cream or Dunkin Donuts® Extra Extra Sweet flavor. I used a store brand root beer and the least expensive coconut rum my store had at the time.

2 fluid ounces coconut-flavored rum
2 fluid ounces sweetened coffee creamer (such as International Delight®)
6 fluid ounces root beer

Steps:

  • Pour ice into a glass. Top ice with rum and creamer; stir to combine. Pour root beer over the top.

3/4 cup root beer (separated)
2 oz butterscotch schnapps (may substitute rum, vodka or tequila)
1 generous scoop vanilla ice cream
Maraschino cherries (optional)

Steps:

  • Pour half of the root beer into the mug then add vanilla ice cream. Pour the butterscotch schnapps over the top of the ice cream then top with remaining root beer. Adding root beer at the end will help create foam.
  • Top with cherries and add a straw.
  • One 12-ounce can of root beer makes 2 perfect root beer float cocktails.

I love to create new surprises for our neighborhood gatherings, so this is one that I've made in the past, but the most recent that I've posted. I think that they may be made non-alcoholic by using more flattened root beer to replace the schnapps and vodka and adding a drop of vanilla extract (but I've never tried). *NOTE: Prep time includes cooling and refrigeration time. I hope you enjoy them.

1 (3/4 ounce) envelope knox unflavored gelatin
10 ounces flattened root beer (your favorite brand)
1/2 cup root beer Schnapps (your favorite brand)
1/4 cup vanilla vodka (your favorite brand)
real whipping cream (aerosol) (optional)

Steps:

  • In a small saucepan, pour in the flattened root beer and then sprinkle the unflavored gelatin over the top. DO NOT STIR and DO NOT HEAT. Allow to sit for 2-3 minutes.
  • Whisk pan ingredients together and place the pan over medium heat and bring to a boil while stirring frequently to make sure that the gelatin dissolves. Remove from heat.
  • Allow to cool to room temperature.
  • In the meantime, line up shot glasses on a sheet pan.
  • Once cooled, add the root beer schnapps and vanilla vodka. Stir/whisk until well combined.
  • Pour the mix into little, plastic shot glass cups and place sheet pan into the refrigerator for at least 4 hours, until firm.
  • Top each shot with just a tiny squirt of whipping cream, if desired.
  • Enjoy!

I make super jello shots, but one day I felt like I wanted to make something more...why not pudding? So I just thought and thought and came up with a few yummy recipes. Not sure how many servings this makes..possibly 16.

1 1/2 c cold milk, preferably whole milk
1/2 c root beer schnapps, any brand
ROOT BEER FLOAT PUDDING SHOTS

Steps:

  • 1. Empty instant vanilla pudding mix into a large glass bowl. Add milk. With mixer set to medium, blend ingredients. Add schnapps. With mixer set to medium high, mix all ingredients well for 2 minutes. Pour into approximately 16 1-oz shot glasses, chill.
  • 2. If not using immediately, put lids on the shot glasses prior to chilling. Chill for at least 2 hours. Enjoy!
