SOUTH AFRICAN ROOIBOS (REDBUSH) ICED TEA
Rooibos tea (known in Britain as Redbush), grown in South Africa is naturally caffiene free and low in tannins so it's healthier and doesn't have the heavy tannin taste that puts me off most regular teas. You can also buy Organic Rooibos which is even better. This iced tea lasts for ages in the fridge and it's really light and refreshing!

Steps:
- Cut the orange and lemon into 4 thick slices each.
- Put all the ingredients into a glass jug and cover with boiling water.
- Leave to stand for 30 minutes.
- Strain, lightly squeezing the excess liquid from the teabags, fruit and mint.
- Pour strained tea into a 2L container and top up with cold water.
- Serve over ice with a little sugar syrup (if you like it sweeter) and a few slices of mixed citrus fruit (if you want to show off) -- .

ROOIBOS ORANGE TEA
This one is another fine rooibos based tea blend. Alas, I can't claim the credit for this one since my boyfriend actually came up with the recipe. Anyway, this tea is best hot. Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

Steps:
- Assemble all the ingredients and place in a tea ball. Note: If you don't own a tea ball, then you can put the ingredients directly in the water and then strain out later. Note that I was forced by food.com to list the rooibos as "rooibos tea bags" but I actually used loose leaf tea.
- Place tea ball in hot water and steep for 10 minutes.

- Pure Rooibos Latte. Pure rooibos is perfect for making lattes, either pure or flavored. Unlike coffee or real tea, rooibos is caffeine free and suitable for any time of the day.
- DIY Rooibos tea blend. Blending your own rooibos tea gives you an opportunity to create any blend you wish and experiment with new flavors every day. Use about 2/3 parts of pure red rooibos tea and 1/3 part of other ingredients.
- Red Rooibos Syrup. Making a batch of red rooibos syrup will open a whole new world of opportunities to enjoy rooibos tea. Mix it with warm milk, add to cocktails or regular and rice puddings.
- Rooibos Iced Tea. To make Rooibos Iced tea, brew a cup of hot rooibos tea same as if you were making a latte. Increase the steeping time and add a bit more leaves.

- Pour 1 tsp of absinthe into a rocks glass. Swish the absinthe along the bottom and sides of the glass, be sure to coat every part of the interior of the glass. Dispose of the excess absinthe.
- Fill the glass with ice cubes and add all the cocktail ingredients, except for the absinthe (which you've already used for the rinse) and orange peel. Stir for about 30 seconds, then strain through a Hawthorne strainer into a rocks glass filled with ice. Roll up the orange peel and squeeze it above the cocktail to express the citrus oils before placing it in the glass as garnish.
- Place all the ingredients for the rooibos tea syrup in a small saucepan with 1 cup of water. Bring to a simmer over medium heat and simmer for about 20 minutes, until the liquid has reduced by a third. Remove from the heat and set aside to cool before straining through a fine-mesh sieve and transferring to a sealed bottle or jar. The aromatics can be discarded. Keep in the fridge until ready to use. Rooibos tea syrup will keep in the fridge for up to 3 weeks.
