CHEESE STUFFED MANICOTTI
This recipe is pretty quick and easy, that's why I like it. I found this recipe on the back of the "Ronzoni" Manicotti noodle box. The best way to prep the noodles is to pre-boil the noodles, making them still firm enough to stuff but soft enough for them to finish cooking when you bake the dish in the oven.

Steps:
- Heat oven to 350°F
- Bring 5 quarts of water to a rapid boil. For best results, add 1 tablespoons of salt.
- Add pasta and stir; return to rapid boil.
- Cook uncovered, stirring occasionally, for 4 to 6 minutes.
- Remove noodles from boiling water and place them in a bowl of cold water. Tubes will be firm; making them easy to fill but will finish cooking and become soft and tender while cooking in the oven.
- In a large bowl stir together ricotta cheese, 1-1/2 cups mozzarella cheese, 1/4 cup parmesan cheese, eggs, parsley and seasonings.
- Pour enough spaghetti sauce in the bottom of a 13x9-inch pan to just cover the bottom of the pan.
- Spoon about 1/3 cup cheese mixture into each pasta tube; place in the pre-sauced pan.
- Pour the remainder of sauce over filled pasta; sprinkle with remaining mozzarella and Parmesan cheese.
- Cover with foil; bake 35 minutes or until hot and bubbly.
- Remove from the oven and serve.
RONZONI'S CHEESE-FILLED MANICOTTI
The hint of nutmeg really makes this dish. You can use storebought spaghetti sauce or my recipe #182243 or make a white sauce. When we have company I like to to make half red sauce and half white sauce. They look beautiful that way in the pan.

- Preheat oven to 350 degrees.
- Cook pasta according to package directions. Drain and lay flat on foil to cool.
- Meanwhile, in a large bowl, add most of the ricotta, mozzarella, and parmesan, leaving just enough to sprinkle over the top later. Also add the eggs and seasonings and mix well.
- Spoon or pipe about 1/3 c cheese mixture into each pasta tube and place in a 13 x 9 pan.
- Pour spaghetti sauce over filled pasta, sprinkle with remaining mozzarella, parmesan and parsley.
- Cover with foil and bake 35 minutes or until hot and bubbly.
- NOTE: To make a white sauce, take equal parts butter and flour, melt and brown in pan, taking care not to burn it. Add a pinch of salt and nutmeg, then cream or milk slowly, to reach the right consistency. For this recipe, you would need about 1/2 cup each of butter and flour and about 3 c of cream or milk.

MANICOTTI
If you choose to make the manicotti with pasta squares, fill and roll them on a damp towel-it will make them easier to handle. For a lighter, thinner sauce, add a little stock to the tomato sauce or to the baking dish after you add the sauce, or don't cook the sauce quite so much when you make it. If you have some fresh basil in the kitchen, tear some leaves and scatter them over the manicotti in the dish right before you bake them.

- Spoon the ricotta into a large, fine-mesh sieve or a colander lined with a double thickness of cheesecloth or a basket-type coffee filter. Set the sieve over a bowl and cover the ricotta well with plastic wrap. Let the ricotta drain in the refrigerator at least overnight, or up to 24 hours. Discard the liquid in the bottom of the bowl.
- Make the tomato sauce and the crepes or pasta squares. (The crepes may be made up to one day in advance; the pasta squares up to several hours in advance.)
- Whisk the eggs and salt together in a large bowl until foamy. Add the drained ricotta, the mozzarella cubes, 1/2 cup of the Parmigiano-Reggiano, the parsley, pepper, and nutmeg. Stir well until blended.
- Preheat the oven to 425° F. Coat the bottom of each of two 13 × 9-inch baking pans (or any two pans into which the manicotti will fit comfortably) with 1/2 cup of the sauce. Working with one crepe or pasta square at a time, spoon 3 full tablespoons of the ricotta filling about 1 inch from the edge closest to you. Roll loosely into a cylinder, smoothing out the filling along the length of the tube as you roll.
- Arrange the manicotti, seam side down and side by side, over the sauce in the baking pans. Spoon the remaining sauce over the manicotti and sprinkle them with the remaining 1/2 cup of the Parmigiano-Reggiano. Cover the baking dishes loosely with aluminum foil and poke the foil several times with a fork.
- Bake 20 minutes. Uncover the dishes, scatter the grated mozzarella, if using, over the top of the manicotti, and bake until the edges are bubbling and the cheese topping is golden brown, about 20 minutes.

SPINACH CHEESE MANICOTTI
My husband says this dish is restaurant quality. It can be made ahead and kept in the refrigerator overnight. Very filling and great served with a salad and garlic bread.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine ricotta, spinach, onion and egg. Season with parsley, pepper and garlic powder. Mix in 1 cup mozzarella and 1/4 cup Parmesan. In a separate bowl, stir together spaghetti sauce and water.
