RøMMEGRøT {NORWEGIAN PUDDING}
Our family likes to eat this warm, with a hefty drizzle of melted butter and a good sprinkling of cinnamon sugar!

- In a large saucepan over medium heat, heat milk to 195° F. Stir almost continuously so milk does not burn, scraping the bottom of the saucepan.
- While milk is heating, whisk together flour, sugar, and salt in a small bowl. Set aside.
- While milk is heating, melt butter in a small saucepan over medium heat. Turn off heat and hold until milk has reached 195° F.
- Once milk temperature has reached 195° F, stir flour mixture into melted butter to form a thick paste. Transfer to the heated milk and stir constantly until milk starts to boil. Turn heat down to low and let cook for 5 minutes more, stirring often. Remove saucepan from heat.
- Spoon into individual bowls and serve with warm melted butter and cinnamon sugar (the more, the better!).

NORWEGIAN ROMMEGROT RECIPE
This Norwegian cream pudding is cheap to make and feeds a crowd. Serve warm or chilled with melted butter on top. Once you start cooking the mixture, butter starts to seep out. Remove this from the mixture and save for a topping.

- Heat whipping cream in a heavy-bottomed kettle over medium heat, until it comes to a simmer. Whisk in about half of the flour, one tablespoon at a time. Try to whisk out any clumps of flour. As the mixture cooks, some butter will begin to seep out. Pour this butter into a dish and use when you are ready to serve. My batch yielded just over a tablespoon of butter.
- Whisk in the remaining flour. Slowly whisk in the warm milk. Whisk out any remaining lumps of flour. Add sugar. Cook for a few minutes, until pudding is thick.
- Serve warm or chilled, topped with cinnamon, sugar, and melted butter.
NORWEGIAN RICE PORRIDGE (RISGRøT)
My family adds raisins to this rice pudding, but they're not my favorite so I left them out. This recipe is a little bit sweeter than the traditional. Feel free to reduce the amount of sugar.

- Bring water and rice to a simmer over medium-high heat. Cook for about 10 minutes, stirring, until most of the water is absorbed into the rice.
- Turn heat down to medium. Start adding milk to the rice, one cup at a time. After each cup is added, stir the rice and cook for 5 minutes or so, until most of the milk is absorbed into the rice. Continue with this process until all the milk is added. The rice is cooked low and slow - the whole process can take up to an hour. Once all the milk is added, stir in the sugar, vanilla extract, and salt.
- Serve rice warm with butter and cinnamon on top. The rice can also be served cold, with melted butter on top.

- Garnishes: melted butter sugar ground cinnamon Place the sour cream in a heavy-bottomed saucepan and bring to a simmer over medium heat, stirring constantly.
- Turn down heat and allow to barely simmer for 1 hour, uncovered, to reduce slightly.
- It must not boil.
- Use a heat diffuser for this process.
- Using a flour sifter or strainer, slowly add enough flour to thicken the cream.
- I use about 11-12 Tbsp. for a very thick pudding.
- Using a wire whisk, whip in the flour 1 Tbsp. at a time.
- The cream will thicken and start to pull away from the sides of the pan.
- If the sour cream is very rich, the butter will now begin to form and rise tot he top.
- Remove this with a spoon and set it aside. Stir in enough hot milk to obtain a porridge-like consistency.
- Add sugar and salt to taste. Serve in bowls with melted butter, sugar, and cinnamon on top.

TRADITIONAL NORWEGIAN RISENGRøT, RICE PORRIDGE
This white, creamy rice porridge is served throughout Norwegian homes during most of the year. Leftovers can be used for Riskrem, a traditional Norwegian Christmas dessert.

- Let rice and water simmer on medium low heat in a heavy pot, uncovered, until most of the water is absorbed. Stir occasionally. This will take approximately 10 minutes.
- Add a bit of milk (approximately ¼ or ⅓ of the total milk needed), continuing to add more over the next 45-50 minutes while simmering on low heat. Stir well every five minutes or so. (An alternative is to add all of the milk right away, then stirring almost constantly as you raise the heat a bit to let it come to a simmer. Then lower the heat again to keep at a simmer.)
- Add more milk whenever the porridge thickens as the milk absorbs until rice is nicely tender and porridge is thick and creamy.
- Add sugar, salt, and vanilla sugar; stir well and serve while hot. If vanilla sugar is not available, you may use vanilla extract; however, this brown liquid will change the color of the porridge and it will not be as white as it should be.
- If the porridge becomes too thick, add more milk to thin it.
- Serve in bowls and sprinkle with cinnamon and white sugar, and a dab of butter in the center. Serve red juice to drink with the meal.
- Leave leftovers in the refrigerator and thin with milk when reheating.
