4 cups pitted canned or frozen tart red cherries
3/4 cup sugar
1 tablespoon butter
Pinch salt
1/4 cup cornstarch
1/3 cup cold water
1/4 teaspoon almond extract
1/4 teaspoon red food coloring, optional
Pastry for double-crust pie (9 inches)

Steps:

  • Drain cherries, reserving 2/3 cup juice in a saucepan; discard remaining juice. To the juice, add the cherries, sugar, butter and salt. In a small bowl, combine cornstarch and water until smooth; stir into cherry mixture. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; stir in the almond extract and food coloring if desired. Cool. , Line a 9-in. pie plate with bottom pastry; add filling. Make a lattice crust. Trim, seal and flute edges. Bake at 375° for 45-50 minutes or until crust is golden and filling is bubbly. Cool on a wire rack.

2/3 cup sugar
3 tablespoons cornstarch
Dash salt
4 cups fresh or frozen pitted tart cherries, thawed
1/8 teaspoon almond extract
TOPPING:
1/4 cup quick-cooking oats
3 tablespoons all-purpose flour
2 tablespoons brown sugar
1 tablespoon slivered almonds
2 tablespoons cold butter

Steps:

  • Press pastry onto the bottom and up the sides of an ungreased 9-in. fluted tart pan with removable bottom; trim edges., In a large saucepan, combine the sugar, cornstarch and salt. Stir in cherries; bring to a boil over medium heat, stirring constantly. Cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in extract. Pour into crust., For topping, combine the oats, flour, brown sugar and almonds. Cut in butter until mixture resembles coarse crumbs. Sprinkle over filling. Bake at 350° for 30-35 minutes or until topping is golden brown. Cool on a wire rack.

4 large eggs
2 tablespoons heavy cream
3/4 cup granulated sugar
2/3 cup clementine juice (or substitute with orange juice)
2/3 cup grapefruit juice
3 tablespoons cornstarch
Shortbread Almond Crust, prebaked, recipe follows
Citrus Whipped Cream, for topping, recipe follows
1 tablespoon citrus zest (clementine, orange or grapefruit), for sprinkling
5 ounces shortbread cookies
1 cup whole almonds
1/3 cup granulated sugar
1/4 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoons unsalted butter, melted
1 1/2 cups heavy cream
3 tablespoons confectioners' sugar
1 tablespoon citrus zest (clementine, orange or grapefruit)

Steps:

  • Add the eggs and cream to a medium bowl and whisk together until combined.
  • In a saucepan over medium heat, add the sugar, clementine juice, grapefruit juice and cornstarch. Cook, whisking, until the sugar dissolves, 3 to 5 minutes. Slowly add the egg-cream mixture and stir to combine. Cook, stirring continuously, until the mixture thickens enough to coat the back of a spoon, 8 to 10 minutes.
  • Pour the citrus custard into the prebaked Shortbread Almond Crust and refrigerate until set, about 4 hours or overnight.
  • Remove the tart from the refrigerator, top evenly with Citrus Whipped Cream, and sprinkle with the citrus zest.
  • Preheat the oven to 350 degrees F.
  • Place the cookies and almonds into a food processor and pulse to chop fine. Add the sugar, cinnamon and salt and pulse to combine. Drizzle in the melted butter and process until the mixture holds together.
  • Press the crust into a 9-inch fluted tart pan, evenly covering the bottom and up the sides of the pan. Refrigerate for 20 minutes, then bake until golden and crisp, 18 to 20 minutes.
  • Cool completely on a wire rack before filling.
  • In a large bowl, whip the heavy cream, confectioners' sugar and 1 tablespoon of the citrus zest until stiff peaks form.

In so many American childhoods, cherry pie is a gloppy, cloying, Day-Glo affair. As a chef, I'm expected to disdain such things now, and, officially, I do. But I've always loved cherries. This Italian cherry and almond tart is everything a bad cherry pie is not: flaky, buttery, and sophisticated, with a filling the color of darkest rubies. But if someday, when cherries are long out of season, you happen to see in a corner booth at DuPar's Coffee Shop someone who looks like me, wolfing down a slice of all-American diner pie, wearing dark sunglasses and a stain that looks suspiciously like Red Dye #40, well, keep it to yourself. Even chefs have fond memories of their misguided youth.

Heaping 1/2 cup raw almonds
1/4 cup granulated sugar
1 cup plus 5 tablespoons all-purpose flour
1/4 teaspoon kosher salt
8 tablespoons (1 stick) unsalted butter, melted and cooled slightly
1/4 teaspoon pure almond extract
1/4 teaspoon pure vanilla extract
Sweet cherry compote (recipe follows)
Almond ice cream (recipe follows)
1/2 vanilla bean
1/3 cup granulated sugar
1 tablespoon cornstarch
2 1/4 pounds Bing cherries, pitted
2 tablespoons grappa or brandy
2 1/2 cups raw whole almonds
2 cups whole milk
2 cups heavy cream
4 extra-large egg yolks
1/2 cup granulated sugar
1 teaspoon pure almond extract
(makes 1 quart)

Steps:

  • Preheat the oven to 375°F.
  • Toast the almonds on a baking sheet about 10 minutes, until they darken slightly and smell nutty. When the nuts have cooled, place them in a food processor with the sugar and pulse to a coarse meal. Add the flour and salt and pulse again to combine. Transfer to a mixing bowl, and pour in the melted butter, almond and vanilla extracts, and 1 tablespoon ice-cold water. Using a wooden spoon, mix until just combined, adding more ice-cold water if necessary to help bring the dough together.
  • Use your fingers to press the dough into a buttered 9-inch fluted tart pan, pressing the sides first and then the bottom, to form an even crust. Chill at least an hour, or preferably overnight.
  • Preheat the oven to 350°F.
  • Prick the bottom of the tart shell with a fork, and line it with a few coffee filters opened out, or a piece of parchment paper. Fill the lined tart shell with beans or pie weights, and bake 20 minutes, until it begins to brown lightly around the edges. Remove from the oven and cool on a rack. Once it cools, lift the paper and beans out of the tart.
  • Fill the shell with the sweet cherry compote to just below the level of the rim. Return the tart to the oven and bake 1 hour, until the cherries darken to a deep ruby red. Let the tart cool 15 minutes before cutting.
  • Slice the tart into wedges, and serve with scoops of almond ice cream.
  • Split the vanilla bean in half lengthwise and, using a paring knife, scrape the seeds and pulp into a medium saucepan. Add the vanilla pod, sugar, and 1/4 cup water. Over medium heat, cook the mixture, without stirring, until it's caramelized to an amber color. Once it begins to brown, you can swirl the pot a little to get the caramel to color evenly.
  • While the sugar is caramelizing, stir 1 tablespoon water into the cornstarch (this is called a "slurry" and will help thicken the fruit juices).
  • When the sugar is an amber brown, add the cherries, and swirl the pan again. Add the grappa, turn the flame down, and let the cherries simmer a few minutes, until they have softened. (The caramel will seize up and harden at first; don't worry, it will remelt.) Strain the cherries over a bowl, return the liquid to the pot, and bring it to a boil over medium-high heat. Whisk the cornstarch slurry into the liquid and bring it back to a boil once again, stirring often. Cook a few more minutes, until thickened. Transfer the cherries to the bowl, pour the liquid over them, and stir to combine. Let cool completely.
  • Preheat the oven to 375°F.
  • Toast the almonds on a baking sheet in the oven 10 to 12 minutes, until they darken slightly and smell nutty. When they've cooled, chop the nuts coarsely.
  • Place 1 1/2 cups of the chopped almonds in a medium saucepan, and pour in the milk and cream. Bring to a boil over medium heat. Turn off the heat, cover, and let the flavors infuse for about 30 minutes.
  • Bring the mixture back to a boil over medium heat, stirring occasionally. Turn off the heat.
  • Whisk the egg yolks and sugar together in a bowl. Whisk a few tablespoons of the warm cream mixture into the yolks to temper them. Slowly, add another 1/4 cup or so of the warm cream, whisking to incorporate. At this point, you can add the rest of the cream mixture in a slow, steady stream, whisking constantly. Pour the mixture back into the pot and return to the stove.
  • Add the almond extract, and cook the custard over medium heat 6 to 8 minutes, stirring frequently with a rubber spatula, scraping the bottom and sides of the pan. The custard will thicken, and when it's done will coat the back of the spatula. Strain the mixture, and chill at least 2 hours in the refrigerator. Process in an ice cream maker according to the manufacturer's instructions and, when it's done, stir in the remaining almonds.
  • You can make the crust and line the tart shell the day before, and chill overnight. The sweet cherry compote can also be made the day before.

This is my dad's favorite pie. It's pretty easy to prepare. If you don't feel like mixing a pie crust/making your own you can buy a store bought one and just press the almonds into the crust. It is extremely rich and yummy! I don't even like cherries and I love this pie! Cook time is chill time. For the crust I usually use Recipe #51537 and just grind the almonds up and mix them in with the dry ingredients... This has seemed to work really well for me

1/2 cup slivered almonds (finely chopped or ground)
1 (15 ounce) can sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla
1/2 teaspoon almond extract
1/2 cup heavy whipping cream, whipped
1 (21 ounce) can cherry pie filling

Steps:

  • Mix pie crust as directed, but add chopped almonds with water.
  • Prick only the sides of the pie crust and bake as directed.
  • Cool.
  • Combine condensed milk, lemon juice, vanilla, and almond extract.
  • Fold in whipped cream and spoon into cooled pie shell.
  • Spread cherry pie filling over cream filling.
  • Chill.

Gradually add water, 1 tablespoon at a time, pulsing until mixture forms a soft dough. , Press onto the bottom and up the sides of a greased 9-in. fluted tart pan with a removable bottom. Bake at 400° for 15-20 minutes or until golden brown. Cool on a wire rack. Reduce heat to 325°., In a small heavy saucepan over medium heat, whisk the eggs, egg yolks, sugar, lemon juice, peel and salt until blended. Add butter; cook, whisking constantly, until mixture is thickened and coats the back of a spoon. Pour into crust., Bake for 8-10 minutes or until set. Cool on a wire rack. Refrigerate leftovers.

  • Add butter to dry ingredients. Rub butter into dry ingredients with your fingertips to create large, shaggy pieces of dough (the idea is to smash the butter into the flour, creating some pieces that are flat and thin and some that are large and irregular).
  • Using a fork or your fingertips, toss egg yolk mixture into dough to combine. Knead dough in bowl with your hands until it starts to come together (it will still look a little dry; if it looks too dry and doesn't come together, add 1–2 Tbsp. more water, but only if needed).
