ROLO™ FILLED CHOCOLATE COOKIES

Steps:
- Heat oven to 350°F. Line large cookies sheets with cooking parchment paper.
- In large bowl, crumble cookie dough; stir or knead in cocoa and whipping cream until well mixed.
- Shape dough into 28 (1 1/4-inch) balls. Form dough around each candy, covering completely, reshaping into balls. Place 2 inches apart on cookie sheets.
- Bake 12 to 15 minutes or until edges of cookies are set. Cool on cookie sheets 2 minutes; remove to cooling racks. Cool completely, about 30 minutes.
- In small microwavable bowl, microwave chocolate chips and oil uncovered on High 1 to 1 1/2 minutes, stirring every 30 seconds, until melted and smooth. Drizzle over cookies; sprinkle with salt. Cool about 1 hour or until chocolate is set. Store covered at room temperature.

CARAMEL-FILLED CHOCOLATE COOKIES

- In medium bowl, combine flour, cocoa and baking soda; mix well.
- In large bowl, combine 1 cup sugar, brown sugar and margarine; beat until light and fluffy. Add vanilla and eggs; beat well. Add flour mixture; blend well. Stir in 1/2 cup of the pecans. If necessary, cover with plastic wrap; refrigerate 30 minutes for easier handling.
- Heat oven to 375°F. For each cookie, with floured hands, shape about 1 tablespoon dough around 1 caramel candy, covering completely.
- In small bowl, combine remaining 1/2 cup pecans and 1 tablespoon sugar. Press one side of each ball into pecan mixture. Place, nut side up, 2 inches apart on ungreased cookie sheets.
- Bake at 375°F. for 7 to 10 minutes or until set and slightly cracked. Cool 2 minutes; remove from cookie sheets. Cool on wire rack for 15 minutes or until completely cooled.
- Melt candy coating in small saucepan over low heat, stirring constantly until smooth. Drizzle over cookies.

ROLO COOKIES
I got this recipe from my neighbour Bonnie who brought them to a cookie exchange. Needless to say they were a big hit with the kids (big and small). Having the Rolo in the center gives it a wonderful surprise when biting into it. Keep the Rolo's in the freezer until ready to use as it improves the texture of the cookie. One of the few cookies my DS likes. Prep time includes the 1 hour to chill dough.

Steps:
- In bowl, beat butter or margarine, 1 cup granulated sugar and brown sugar until light Beat in eggs and vanilla until batter is smooth.
- In another bowl, combine flour, coca and baking soda.
- Stir into sugar-egg mixture to form soft dough.
- Chill dough in fridge at least 1 hour Place 1 tbsp of dough in palm of hand and press.
- Put 1 Rolo candy into centre.
- Bring up sides of dough to cover it completely.
- Roll between palms to make a smooth ball.
- Place remaining sugar on a plate and roll each ball in sugar.
- Place on greased baking sheet and bake cookies in preheated 350° over for 10 minutes or until tops are cracked and firm.
- Cool on rack about 10 minutes.

- Preheat oven to 375 degrees. Line a cookie sheet with parchment paper.
- Whisk flour, cocoa powder, and baking soda together in a bowl. Set aside. Using an electric mixer, beat brown sugar, white sugar, and butter in a large bowl until smooth and creamy. Add vanilla and eggs; beating well. Slowly add flour mixture one tablespoon at a time, stirring well. Chill cookie dough in the refrigerator for 15 minutes.
- Using a small ice cream scoop, form the cookie dough into small balls. Then, place a Rolo candy into the center of each cookie dough ball and wrap the cookie dough around the Rolo back into a ball shape.
- If your dough gets too sticky return it to the refrigerator to harden up slightly.

- Bake at 375 for 7-10 minutes or until the baked cookie is slightly cracked. Allow the cookies to cool on the cookie sheet for about 2 minutes, then transfer cookies to a wire rack to cool completely.

- Preheat oven to 350 degrees.
- With a stand or hand mixer, cream together the butter and sugar until fluffy. Add the egg and vanilla and mix until combined. In a separate bowl, sift together the flour, cocoa, salt and baking powder. Gradually add the dry ingredients to the wet. Mix until the dough is completely combined. Pour the dough out on a sheet of plastic wrap, and refrigerate for at least an hour.
- Cut the refrigerated dough into 18-24 even cubes. With your hands roll the cubes into balls. Roll the balls in the mini chocolate chips and place on an un-greased cookie sheet. Lastly, press a Rolo candy into the top of each ball. Bake for 9-10 minutes, and cool on the cookie sheet for 3-5 minutes before removing the cookies from the sheet. Cool the cookies on a cooling rack, and store in and airtight container at room temperature.
