- In a large microwave-safe bowl, whisk milk and pudding mix. Microwave, uncovered, on high for 4-6 minutes or until bubbly and slightly thickened, stirring every 2 minutes. Cool for 20 minutes, stirring several times., Meanwhile, combine peanuts and chocolate chips; divide among plastic cups. Stir marshmallow creme into pudding; spoon into cups. Insert wooden pop sticks; freeze.

- Combine butter, evaporated milk, sugar, and salt in a medium saucepan. Bring to a hard boil for 5 to 7 minutes, stirring constantly. Remove from heat. Stir in the chocolate until melted and smooth. Fold in the almonds and marshmallows. Pour into an 8 by 8-inch square baking pan. Chill until firm, about 2 to 4 hours. Cut into 12 squares.

I first tried these at my mother in law's place. They were the perfect size for my daughter and she loved them! Great for parties and easy to make too. Use 12 plastic cups (3 oz size)

- In a large microwave safe bowl, combine pudding mix and milk.
- Microwave on high, uncovered, for 6 to 7 1/2 minutes or until bubbly and slightly thickened, stirring every 2 minutes.
- Cool for 20 minutes, stirring several times.
- Meanwhile, combine peanuts and chocolate chips and place about 2 tbsp in each plastic cup.
- Stir marshmallow creme into pudding.
- Spoon into cups.
- Insert popsicle sticks into cups and freeze.

ROCKY ROAD FUDGE BARS
This is a recipe from my soon to be Mother in Law. It's a family favorite that I made for the first time with rave reviews. I've been told it was originally a Pillsbury Bake-Off recipe.

Steps:
- Heat oven to 350.
- Grease 9x13 pan.
- In large saucepan, melt butter and chocolate over low heat.
- Add remaining bar ingredients and spread into pan.
- In small bowl combine all the filling ingredients except for the nuts and chocolate chips.
- Beat one minute at medium speed and stir in the nuts.
- Spread over bar mixture.
- Sprinkle with chocolate chips.
- Bake at 350 for 25-35 minutes or until toothpick comes out clean.
- Sprinkle with Marshmallows and bake 2 minutes longer.
- Meanwhile in large saucepan, melt the remaining butter, chocolate and cream cheese and milk over low heat.
- Remove from heat and stir in powdered sugar and vanilla until smooth.
- Pour over marshmallows and swirl together.
- Chill until firm, cut into squares.
