1 box (16 oz) Betty Crocker™ Supreme original brownie mix
Water, vegetable oil and egg called for on brownie mix box
1 cup semisweet chocolate chips
1 1/3 cups miniature marshmallows
1/3 cup chopped peanuts

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 8- or 9-inch square pan with shortening or cooking spray. Make brownie batter as directed on box. Stir in 2/3 cup of the chocolate chips. Spread in pan.
  • Bake brownies as directed on box. Immediately after removing from oven, sprinkle with miniature marshmallows, remaining 1/3 cup chocolate chips and the peanuts. (For softer marshmallows, cover pan with cookie sheet about 2 minutes.) Cool completely on cooling rack, about 2 hours. Cut into 4 rows by 4 rows with knife dipped in hot water. Store tightly covered

1/2 cup (1 stick) unsalted butter, cut into pieces, plus more for pan
1 bag (12 ounces) semisweet chocolate chips
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1/2 teaspoon salt
2 large eggs
3/4 cup all-purpose flour, (spooned and leveled)
1 cup miniature marshmallows
1/2 cup chopped nuts, such as cashews, pecans, or walnuts

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch-square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.
  • In a heatproof bowl set over (not in) a saucepan of simmering water, combine butter and 1 cup chocolate chips. Heat, stirring occasionally, just until melted, 3 to 5 minutes.
  • Remove mixture from heat; stir in sugars and salt, then eggs, and finally flour, stirring just until combined. Spread batter evenly in prepared pan. Bake until a toothpick inserted in center comes out with moist crumbs attached, 30 to 35 minutes.
  • Remove from oven, and sprinkle with remaining chocolate chips, then marshmallows and nuts. Bake until chocolate is shiny and marshmallows are puffed, about 5 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 squares.

6 tablespoons unsalted butter, cut into pieces
2 ounces unsweetened chocolate, chopped
4 ounces bittersweet chocolate, chopped
1 cup sugar
2 large eggs
3/4 cup all-purpose flour
1/2 teaspoon salt
1 cup walnuts, toasted and chopped coarse
3 cups miniature marshmallows
1/2 cup milk chocolate chips
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F and line a 9-inch square baking pan with nonstick tin foil, crimping to create a 4" 'collar'. Spray with nonstick cooking spray.
  • In a heavy 1 1/2-quart saucepan (or microwave on Medium), melt butter, unsweetened chocolate, and bittersweet chocolate, stirring, until smooth and remove pan from heat. Cool mixture 10 minutes.
  • Stir in sugar. Add eggs, 1 at a time, beating well with a wooden spoon until mixture is glossy and smooth.
  • Mix flour, walnuts and salt separately, then gently stir into chocolate mix.
  • Spread batter evenly in pan and bake in middle of oven 20 minutes.
  • Remove pan from oven and add chocolate and marshmallows evenly over brownies.
  • Bake brownies until marshmallows are puffy and pale golden, 7 to 10 minutes.
  • Remove from oven, quickly swirl just the top chocolate/marshmallow with a skewer.
  • Cool brownies completely in pan on a rack, then refrigerate until firm.
  • Trim edges, then cut into 16 squares with a buttered knife.

1/2 cup vegetable oil
1 cup sugar
1 teaspoon vanilla
1/2 teaspoon butter extract
2 large eggs
1/3 cup cocoa powder
1/2 cup semi-sweet chocolate chips
1/2 cup self-rising flour
1/4 cup chocolate fudge frosting
1/4 cup dark chocolate chips
1/4 walnuts pieces
1/4 cup mini marshmallows

Steps:

  • Preheat the oven to 350F and grease a brownie/bar pan
  • In a bowl mix the oil and sugar together.
  • Next, add the extracts and eggs into the sugar mixture. Blend everything well.
  • Add the cocoa powder and blend it well with the sugar mixture.
  • Mix in the chocolate chips.
  • Finally, add the flour, and mix it in till the flour is just combined.
  • Pour the batter into the prepared pan and smooth it out till it is smooth.
  • Place the pan in the oven and bake for about 40 minutes.
  • Check for doneness with a toothpick, it comes out clean then the brownies are done, it comes out with batter continue to bake for another 5 minutes till the toothpick comes out clean.
  • Let the brownies cool.
  • When the brownies are cool but still a little warm to the touch, spread on a thin layer of the frosting on the top of them.
  • Next, sprinkle with the walnuts and marshmallows. Gently press them into the brownies.
  • In the microwave, melt the dark chocolate chips. Microwave them in 30-second intervals and stir with each one till they are melted and smooth.
  • Drizzle on the melted chocolate, and let the brownies finish cooling and the drizzle hardens.
  • Slice them up and ENJOY!

12 Tablespoons unsalted butter (melted (170g))
¾ cup natural cocoa powder ((75g))
1 cup granulated sugar ((200g))
½ cup brown sugar ((100g))
2 large eggs + 1 large egg yolk (lightly beaten, room temperature preferred.)
1 teaspoon vanilla extract 5ml
1 ¼ cup all-purpose flour ((145g))
1 teaspoon cornstarch
¾ teaspoon salt
2 cups chocolate chips ((I used a mix of milk and semisweet chocolate chips, you can use your favorite chocolate chips) (340g))
¾ cup heavy cream
2 Tablespoons corn syrup¹
⅛ teaspoon salt
2 cups mini marshmallows ((110g))
¾ cup coarsely chopped almonds ( (or preferred nuts) (125g))
fine sea salt (optional)

Steps:

  • Preheat oven to 350F (175C) and line a 13x9 baking dish with parchment paper². Set aside.
  • In a large bowl, combine melted butter, cocoa powder, and sugars and stir until well-combined.
  • Add eggs/egg yolk and vanilla extract and stir well.
  • In a separate bowl, whisk together flour, cornstarch, and salt.
  • Stir flour mixture into wet ingredients until completely combined.
  • Evenly spread batter into prepared baking dish and transfer to 350F (175C) preheated oven. Bake 18 minutes or until a toothpick inserted in the center comes out with a few moist crumbs or clean. Allow brownies to cool completely in their pan before proceeding.

60 whole almonds
1 cup Faux-Tempered or Tempered Chocolate
60 mini marshmallows
1/2 cup mini pretzel sticks, broken into pieces

Steps:

  • Preheat oven to 350 degrees. Spread almonds in a single layer on a rimmed baking sheet; toast until fragrant and slightly darkened, 10 to 12 minutes. Let cool completely.
  • Place 30 mini foil baking cups on a rimmed baking sheet. Place 1 toasted almond in bottom of each cup. Carefully pour enough chocolate into cups to fill two-thirds of the way, stirring chocolate frequently while filling to ensure it stays tempered. Press 2 marshmallows into each cup to partially submerge in chocolate, then press 1 more toasted almond and several pieces of pretzel into each cup.
  • Let stand until chocolate is hard and dry, about 2 hours. Serve, or store in an airtight container at room temperature up to 2 weeks.

My son's favorite ice cream flavor lately is Rocky Road so I thought I'd make a brownie to echo those flavors of chocolate fudge, marshmallows and almonds. Making them one bite in a mini-muffin tin makes them super easy to snack on or pack in a lunchbox. They're also great to make for any group you may have to prepare for -- like your turn for soccer snack or a school party. You may want to leave the nuts out to accommodate allergies if sending them to school, though.

1/2 cup butter
4 ounces unsweetened chocolate, chopped
2 eggs
1 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • Over hot water in a small bowl, melt the butter and chocolate together. Let cool to almost room temperature while you prepare the rest of the recipe.
  • In a mixer or with a whisk, whip the eggs with the sugar until fluffy. Stir in the vanilla and salt with a wooden spoon. Add the melted chocolate mixture and stir. Add the flour and stir in only until incorporated. Add nuts and mix briefly.
  • Grease a non-stick mini muffin (or regular) tin and divide the batter evenly by spoonfuls filling each 3/4 full. Top each with a mini marshmallow, pressing it in slightly. Bake for 20 minutes for chewy brownies and 25 minutes for cake-ier brownie bites. Let cool then ease them out of the pan.
